    1 1/2 pounds ground beef

    1/2 cup raw rice

    2 Tbsp. onion, minced

    1 tsp. salt

    dash pepper

    1 can tomato soup (undiluted)

    1 soup can water

    In a large bowl mix everything but the soup and water together with

    a fork. Shape into large meatballs. Mix the soup and water in a

    large frying pan and heat just to the boiling point, but don’t

    boil. Lower the heat and spoon the meatballs into the sauce. Cook

    over low heat for one hour.

    1 pound ground round steak

    1/2 cup well washed uncooked rice

    1 tsp salt

    1 can cream of tomato soup

    Combine steak, rice, and salt; form into balls. Place in casserole

    and cover with cream of tomato soup. Bake covered in a moderate

    oven (350 degrees) about 1 1/2 hours. The cover may be removed in

    the last 15 minutes of baking to allow to brown. (Chopped onion

    may be included in meatballs, if preferred.)

    Recipe ingredients and directions:

    4 cups spicy tomato juice

    3/4 cup cornmeal

    2 tablespoons ground cumin

    2 tablespoons chili powder

    1 tablespoon salt

    2 cloves garlic, minced

    1/4 cayenne pepper

    1 can tomatoes with chiles

    1/2 pound ground beef

    1/2 pound bulk sausage

    In a bowl, combine 1/3 cup tomato juice, cornmeal, 1 tablespoon

    cumin, 1 tablespoon chili powder, 1/2 tablespoon salt, garlic and

    cayenne. Add beef and sausage; mix well. Shape into 1 inch balls.

    In a Dutch oven, combine remaining tomato juice, tomatoes with

    chiles, cumin, chili powder and salt; bring to a boil. Add meatballs;

    cover and simmer for 45 minutes or until meat is no longer pink.

    Yields about 50 meatballs

    Recipe ingredients and directions:

    1 1/2 lb ground beef

    2 eggs, beaten

    2 tablespoons flour

    1 teaspoon salt

    Dash pepper

    2 tablespoons cornstarch

    1/4 cup sugar

    1/3 cup soy sauce

    14 oz beef broth

    1/4 cup sake

    2 teaspoons minced ginger root

    2 teaspoons minced garlic

    Preheat oven to 400 degrees F. Grease a large baking pan. Combine

    beef, eggs, flour, salt, and pepper. Mix lightly and shape into

    small balls about 3/4 to 1 inch in diameter. Place in prepared

    baking pan and bake for 14-17 minutes. Mix cornstarch with sugar

    and soy sauce. Stir in beef broth, sake, ginger, and garlic. Cook

    in skillet or chafing dish until mixture thickens slightly, stirring

    constantly., Add meat balls and serve. Makes 6 dozen meat balls.

    Recipe ingredients and directions:

    2 28-ounce cans Italian-style tomatoes

    1 14 1/2 ounce can beef broth

    1 1/2 cups finely chopped onion

    1/2 cup (packed) golden brown sugar

    4 large garlic cloves, minced

    1 tablespoon fresh lemon juice

    2 pounds lean ground beef

    1 cup toasted fresh breadcrumbs

    2 teaspoons salt

    1 teaspoon ground pepper

    1/2 teaspoon ground allspice

    2 large eggs, beaten to blend

    Pour tomatoes with their juices into heavy large Dutch oven. Using

    potato masher, crush tomatoes. Add broth, 1/2 cup onion, brown

    sugar, half of garlic and 1 tablespoon lemon juice. Bring to boil.

    Reduce heat to low and simmer sauce while preparing meatballs.

    Combine beef, breadcrumbs, salt, pepper, allspice, remaining 1 cup

    onion and remaining garlic in large bowl. Add eggs, blend well.

    Shape mixture into 1-to 1 1/2-inch balls. Gently drop meatballs

    into simmering sauce. Partially cover pot and simmer over very low

    heat until meatballs are cooked through and tender and sauce is

    thick, about 1 hour 20 minutes. Spoon off any fat from top of sauce.

    (Can be made 2 days ahead. Cover, chill. Rewarm over low heat before

    serving.) 8 main-course servings

  • Easy and Excellent Sweet and Sour Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 1/4 pounds of ground beef

    1/2 cup bread crumbs

    1/2 cup water

    1 tsp salt

    1/2 tsp pepper

    1/2 tsp garlic

    1 1/2 cups loosely packed brown sugar

    3 tbsp corn starch

    1/2 cup vinegar

    1/4 cup water

    2 tbsp soy sauce

    1 tbsp ketchup

    Mix beef, breadcrumbs, salt, pepper, garlic and water. Shape into

    balls. Brown in frying pan. Transfer to casserole.

    Combine brown sugar and flour in medium saucepan and mix well. Add

    remaining ingrediants and stir over medium -high heat until it

    comes to a boil. Pour over meatballs. Cover. Heat in a 350 degree

    oven for 20 mins.

    Great served over a bed of rice or alone as appetizers.

  • Gehaktballen: Dutch meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 cup lean ground beef

    1 cup lean ground pork

    1 egg

    2 slices white bread, crusts removed

    1 small onion, minced

    1 1/2 teaspoons salt

    1/2 teaspoon curry powder

    1/2 teaspoon ground mace

    1/2 teaspoon ground pepper

    3 tablespoons butter

    1/2 cup water or beef stock

    ketjap manis or Maggi seasoning to taste

    Mix the meat with the egg, bread, onion, salt and spices and form

    4-5 meatballs. Chill for about 30 minutes. Make into 4-6 meatballs.

    Heat the butter and brown the meatballs for about 15 minutes,

    turning them a couple of times. Reduce the heat to simmer and cook

    the meatballs for another 15 minutes, turning a few times. Remove

    the meatballs, add the water or beef stock and bring to a high

    heat. Add a little ketjap manis or Maggi seasoning to the mixture

    and you will have a lovely gravy to serve with the meatballs.

    NOTES : Some people coat the meatballs with breadcrumbs before

    frying. We soak the bread in a bit of milk, and then press out

    the milk from the bread before adding to the ground beef. We almost

    always use just the ground beef, and it is very good. This is good

    served with homefries and lots of mayonnaise.

    Recipe ingredients and directions:

    1 lb extra lean ground beef

    beef consomme to cover, about two 10 oz cans, diluted

    1/2 lb large whole fresh mushrooms

    6 to 8 small whole onions

    6 whole bay leaves

    Shape the ground beef into meatballs about the same size as the

    mushrooms. Heat consomme in a saucepan. Add bay leaves and

    meatballs; simmer 20 minutes. Trim mushroom stems; add mushrooms

    and onions to saucepan. Simmer additional 20 minutes.

    Liquie may be thickened with cornstarch (two teaspoons dissolved

    in two tbsp cold water) during last 10 minutes.

    I don’t know what’s traditional, but I serve this with mashed

    potatoes.

    Yield: 36 servings

    1 1/2 lb (700g) ground beef

    1/4 c dry bread crumbs

    1/4 c water

    1/4 c fresh chopped onion

    1 t salt

    1/2 t cinnamon

    1/4 t pepper

    1 1/2 c grape jelly

    1/2 c ketchup

    Put first 7 ingredients into bowl. Mix well. Shape into small balls.

    Heat grape jelly and ketchup in frying pan. Add meatballs. Simmer

    very slowly for about 20 to 25 minutes turning meatballs at half

    time. Serve in chafing dish. Makes 36.

    Variation: Use crabapple jelly instead of grape. It also gives a

    great glaze.

  • MEAT BALLS IN CHEESE SAUCE – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 lb mince

    1 egg, beaten

    1 cup rice bubbles

    1 Tbs tomato sauce

    salt and pepper to season

    2 or more Tbs flour

    1 Tbs butter

    1 tsp mustard

    1 1/2 cups milk

    4 ozs grated cheese

    1/2 tsp salt

    Mix together the mince, rice bubbles, beaten egg and tomato sauce.

    Season to taste with salt and pepper. Shape into ball and shake

    in a bag with a little flour. Brown lightly in hot fat or oil.

    To make the sauce:- Melt butter, add the flour and mustard and stir

    until smooth, cook 1 minute with out browning, Stir in milk and

    salt and continue cooking, stirring until the mixture boils, stir

    in the cheese, cook gently until cheese has melted. Arrange meat

    balls in an oven-proof dish, pour the sauce over and bake in moderate

    oven 20 minutes.

    Recipe ingredients and directions:

    2 lb lean ground beef

    1/4 cup peeled, grated potato

    1 egg

    1 small onion, grated

    salt

    freshly ground black pepper

    13 ounce bottle Heinz Chili Sauce

    5 ounce jar grape jelly

    dash Worcestershire sauce

    Combine first 4 ingredients in large bowl and mix well. Season

    with salt and pepper. Form into small meatballs. Brown meatballs,

    a few at a time, in hot skillet. If meat is very lean, wipe skillet

    with a thin film of olive oil. Blend remaining ingredients in

    large skillet over medium heat. Add meatballs. Cover and simmer

    about 30 minutes, stirring occasionally. Transfer meatballs to

    chafing dish or fondue pot. Skim excess fat from sauce. Pour

    sauce over meatballs. Serve warm. Makes about 100 small meatballs.

    1 1/2 lbs ground beef

    2 eggs slightly beaten

    1 cup bread crumbs

    1 cup applesauce

    SAUCE

    1 cup brown sugar

    1 onion, diced

    1/2 tsp chili powder

    3 cloves

    1/3 cup lemon juice

    1/2 cup vinegar

    1 cup hot ketchup

    1/2 cup HP sauce

  • Sweet and Sour Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    2-3 lbs. meatloaf mix

    1 c. plain bread crumbs

    1 egg

    1 t. garlic powder

    2 T. minced onion

    salt

    pepper

    2 bottles of chili sauce

    2 cans whole berry cranberry sauce

    Combine the chili sauce and the cranberry sauce in a large pot and

    simmer. While the sauce is simmering, mix the meatloaf mix, bread

    crumbs, egg, and garlic powder together in a large mixing bowl.

    Add salt and pepper to taste. Shape small meatballs with approximately

    1 t. of the meat mix and brown them in a large frying pan with some

    of the minced onion.

    Add more minced onion to the pan as needed. As the meatballs are

    browned, add them to the simmering sauce and mix. Simmer the

    meatballs and sauce for approximately 1 hour, gently stirring

    occasionally while simmering.

  • Morroccan Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    500 g hamburger mince

    200 g short-grained rice

    2 medium onions, finely chopped

    2 tbsp (40 ml) lemon juice

    1 tsp ground coriander

    1 tsp ground paprika

    1 tsp ground cinnamon

    1/4 tsp ground saffron

    pepper

    flat leaved parsley, finely chopped

    2 cups (500 ml) chicken stock

    150g butter

    Melt butter in a heavy based pan. Form rice, mince, coriander,

    paprika and cinnamon into about 20 small meatballs. Cook meatballs

    a few at a time in butter until well browned. When all the meatballs

    are cooked, return them to the pan, add onions, saffron, pepper

    and stock. Bring to the boil, cover and simmer about 40 minutes.

    Add parsley and lemon juice, cook a further 5 minutes or so.

    Serve with green vegetables or fresh salad.

    Recipe ingredients and directions:

    2 1/2 lbs ground beef

    4 1/2 oz can deviled ham

    2/3 cup evaporated milk

    2 eggs

    1 cup bread crumbs

    1 diced med. size onion

    1/2 tsp salt

    1/4 tsp ground cloves

    1/4 tsp pepper

    Mix everything together and make meatballs about the size of a

    quarter. Brown in 1/4 cup oil. Drain off fat. Simmer, while

    covered, for 20 minutes in 1/4 cup water.

    SAUCE

    2 Tbsp. butter

    2 Tbsp. flour

    1/2 tsp. salt

    1 cup water

    1 cup sour cream

    1 Tbsp. catsup

    1 Tbsp. dill seed

    Melt butter. Blend in flour and salt. Stir in water. Cook until

    thick. Add sour cream, catsup and dill. Heat to boil. Spoon on

    meat balls. Good with rice or noodles.

    Recipe ingredients and directions:

    1 pound ground beef

    1/2 cup dry bread crumbs

    1/4 cup milk

    1 egg

    1 tbsp instant minced onion

    1 tsp parsley flakes

    1 tsp salt

    1/8 tsp pepper

    1/2 tsp Worcestershire sauce

    Mix all ingredients. Shape mixture by rounded teaspoonfuls into

    3/4-inch balls. Bake in 375 degree oven for about 10 minutes.

    Pour drippings into a saucepan. Add one can condensed cream of

    mushroom soup. Blend in 1/4 cup milk or water. Add 1 tsp

    Worcestershire sauce. Stir often over medium heat. Add cooked

    meatballs. Serve over rice or noodles.

    Recipe ingredients and directions:

    500 gr. minced pork or beef or mixed

    1 teaspoon salt

    2-3 tablespoons of chopped parsley

    1 teaspoon dry mint or 1 tablespoon fresh

    2 tablespoons grated onion

    1 level teaspoon baking powder

    1 tablespoon cheese

    4-5 potatoes, grated and drained

    2 eggs

    Oil for deep frying

    Place all the ingredients in a bowl and mix together. Allow the

    mixture to stand for half an hour. Shape into small meatballs and

    deep fry them in oil. Serve with macaroni, pilaf or chips and green

    salad.

  • Honey Garlic Appetizer Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    2 pounds lean ground beef

    1 cup dry bread crumbs

    3/4 cup milk

    1/2 cup finely chopped onion

    2 eggs

    2 teaspoons salt

    1 tablespoon butter

    3 cloves garlic

    3/4 cup ketchup

    1/2 cup liquid honey

    1/4 cup soy sauce

    Preheat oven to 500. Put meat in a bowl and break with fork. Add

    and mix together: bread crumbs, milk, onion, eggs, and salt. Shape

    meatballs into 1 inch balls. They taste better when they are small.

    Place in single layer on a jelly roll pan and bake 12 to 15 minutes.

    Drain well. Melt butter in a saucepan and saute garlic until tender.

    Ad ketchup, honey, and soya sauce. Bring to boil, reduce heat,

    cover and simmer five minutes. Add meatballs to sauce. Return to

    boil and simmer uncovered for 5 to 10 minutes, stirring occasionally

    or until sauce glazes meatballs. These freeze well too.

    Recipe ingredients and directions:

    3 onions, minced

    1 garlic clove, minced

    2 tablespoons cooking oil

    2 pound ground beef, lean

    1 cup soft bread crumbs

    1 hard cooked egg, cut into wedges

    2 cups tomato juice

    2 whole tomatoes, chopped

    salt to taste

    Cook 2 onions and the garlic in oil. Mix with beef and bread crumbs,

    Form into balls, placing a piece of hard cooked egg in the center

    of each. Brown in a skillet. Meanwhile, simmer tomato juice,

    remaining onion and tomatoes until thicked into a sauce. ( you can

    use 2 1/2 cups canned tomato sauce, spanish style and cook down

    with onions) Season with salt if needed. add meat balls. Continue

    cooking for about 45 minutes, stirring occasionally. Makes 8

    servings.

    Recipe ingredients and directions:

    1/2 cup dry bread crumbs

    1 pound lean ground beef

    1 (12 ounce) package spicy bulk pork sausage

    1 egg

    1/2 teaspoon dry mustard

    1 tablespoon soy sauce

    20 oz can pineapple chunks in juice, drained, juice reserved

    2 tablespoons firmly packed brown sugar

    1 tablespoon cornstarch

    1/2 teaspoon ginger

    2 tablespoons cider vinegar

    1 tablespoon soy sauce

    2 medium green peppers, cut into 1-inch pieces

    Heat oven to 350. In large bowl stir together all meatball

    ingredients. Shape into 1" balls. Place meatballs on 15x10x1 inch

    jelly roll pan. Bake for 15 to 20 minutes or until meatballs are

    browned. Meanwhile, in 1 qt saucepan combine reserved pineapple

    juice, brown sugar, cornstarch, ginger, vinegar and 1 tablespoon

    soy sauce. Cook over medium heat, stirring occasionally, until

    mixture is thickened and bubbly (4-6 mins). Boil, stirring

    constantly, 1 minute. In 2-qt casserole place meatballs, pineapple

    chunks, green pepper and sauce, stir gently to coat. Cover, bake

    for 10 to 15 minutes or until green peppers are crisply tender.

  • Boiled Sweet and Sour Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    3 eggs

    3 lbs ground beef

    bread crumbs or matzah meal (equivalent to 1 piece of bread per lb of meat)

    1/2 tsp garlic powder

    1/2 tsp onion powder

    1/2 tsp pepper

    2 16-oz cans tomato sauce

    1/2 to 1 cup brown sugar

    1/4 to 1/2 cup white sugar

    3-7 tablespoons grape jelly

    4 tablespoons lemon juice

    Wet bread (if using bread and not crumbs or matzah meal), mix the

    bread or the crumbs/meal in with the meat, eggs and spices. Mix

    well.

    Shape meat into meatballs — not too small as they boil down a bit.

    Boil water (1/2 fill a large pot with water) Drop meatballs into

    boiling water. Boil for 20-30 minutes. Skim fat off the top.

    Add the following tomato sauce, sugars, jelly and lemon juice.

    Gently boil until meatballs are done — about 20 mins.

    They get better after they sit for a day or so in the frige in

    their sauce!

  • Meatballs in Chipotle Sauce – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1/2 onion, chopped

    1 T olive oil

    1 garlic clove, minced

    28 oz can crushed tomatoes

    1.5 c chicken broth

    1-2 chipotle chiles, minced

    1 slice bread, without crust

    1/2 c lowfat milk

    1 lb ground beef

    1 lb ground turkey

    4 green onions, minced

    1/4 c white onion, minced

    1/4 c parsley, minced

    1 egg

    1 t salt

    1 t oregano

    1/2 t pepper

    1/4 t nutmeg

    1/4 t cinnamon

    Saute onion in oil until soft. Add remaining ingredients and simmer

    for 20 minutes.

    Soak bread in milk for one minute. Squeeze dry and crumble.

    Discard extra milk. Mix all ingredients together. Form into golf

    ball sized balls. Place in a roasting pan and bake in a 400 degree

    F oven for 25 minutes. Remove from pan and drop into chipotle

    sauce. Simmer at least 15 minutes. Serve on french rolls with a

    big green salad.

    Recipe ingredients and directions:

    1 slice fresh white bread

    milk

    1 lb extra lean ground beef

    1/2 tsp fresh ground black pepper

    1/2 tsp nutmeg

    1/2 cup minced Italian flat or regular parsley

    1 egg

    Soak bread in milk; squeeze out milk. Add bread to remaining

    ingredients and shape into meatballs. Saute or broil until brown

    all around. Drain. Add to your favourite tomato sauce and finish

    cooking, about 20 – 25 minutes in simmering sauce.

    Recipe ingredients and directions:

    1 lb. hamburger

    2 eggs

    12 oz. can tomato sauce

    crackers to taste

    1/4 cup chopped onion

    Flour and water

    Mix hamburger, eggs, 1/2 can tomato sauce and onion in large bowl.

    Crumble enough crackers to dry up meat mixture, so that meatballs

    can be formed. Brown meatballs in large skillet. Remove and add

    remainder of tomato sauce and flour to drippings. Add water to make

    gravy. Place meatballs back in gravy and simmer until meatballs

    are fully cooked. Serve over mashed potatoes.

  • Meatballs – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1/3 cup very finely chopped onion

    1 Tbsp very finely minced garlic

    3 Tbsp finely chopped parsley

    1 cup fresh bread crumbs

    1 egg

    1/2 cup cold water

    2 Tbsp olive oil

    1 1/2 tsp – 1 Tbsp salt

    1/4 tsp freshly ground pepper

    1/4 tsp ground nutmeg

    2 1/2 lb lean ground chuck

    30 oz tomato sauce

    Combine chopped onion, garlic, parsley and bread crumbs in a food

    processor and mix 30 seconds.

    Break the egg into a 3 quart bowl and mix well using a wire whisk.

    Add water, olive oil, salt, pepper, and nutmeg to the egg and whisk

    until well whisked.

    Add the bread crumb mixture, combining with a spatula. Add the

    ground meat and mix thoroughly until ingredients are well distributed

    and the mixture is binding together tightly.

    Preheat the oven to 425 degrees. Using a medium sized ice cream

    scoop, scoop out a portion onto a lightly oiled jelly roll pan.

    Form each meatball by rolling in the palm of your hand until they

    feel tight and solid. (The finished meatballs should be about the

    size of a golf ball.)

    Pour 1/4 cup water into the pan and place in the oven. Time 15

    minutes. Remove from the oven and loosen with a spatula. Return

    to the oven an additional 10 minutes, or until cooked through.

    Drain.

    Heat the tomato sauce in a large skillet. Add the meatballs and

    simmer 2 minutes. Serve over pasta or rice.

    Serves 4

    600g mince beef

    1 onion, finely chopped

    1 tablespoon Vegemite

    2 tablespoons peanut butter

    2 tablespoons chopped parsley

    Tabasco or chili sauce to taste

    1 egg, lightly beaten

    Combine all in a bowl, mix well. Shape meat into patties and coat

    with a little flour to prevent sticking. Fry on b-b-q grill or

    pan 10-12 minutes.

    2 flank steaks about two pounds each, butterflied

    1 cup frozen mixed vegetables, thawed

    1/2 cup finely choped onion

    1/4 cup finely chopped bell pepper

    1/4 cup finely chopped pimiento

    2 teaspoons finely minced serrano peppers

    1 clove garlic, crushed

    1 teaspoon salt

    1 cup beef broth

    1 celery stalk, sliced

    1 carrot, sliced

    1 onion, sliced

    1 clove garlic, chopped

    Chili sauce

    Preheat oven to 350F. Pound the butterflied steaks as thin as

    possible. Trim off any excess fat and cut the edges straight so

    that the finished steaks are roughly square, about 12" by 12".

    Lay the steaks side by side, overlapping the edges an inch or two.

    Combine the vegetables, onion, bell pepper, pimiento, serranos,

    crushed garlic and salt, mix. Spread vegetable mixture over steaks,

    covering the entire surface. Roll the two steaks up, jellyroll

    fashion, as tightly as possible. Tie securely every two inches

    with string. Put the roll in a shallow casserole and add the beef

    broth, sliced celery, carrot, onions and chopped garlic. Cover

    and braise for two hours, basting occasionally. Let sit 15 minutes

    before carving. Serve with chili sauce.

    Chili Sauce

    4 tablespoons butter

    1 onion, finely chopped

    1 bell pepper, finely chopped

    1 clove garlic, minced

    2 tablespoons flour

    1 tablespoon chili powder

    1 teaspoon salt

    Freshly ground black pepper

    1 cup tomato juice

    1 cup beef broth

    Melt butter in a medium skillet. Add onion, bell pepper and garlic

    and saute for five minutes, stirring frequently, until the vegetables

    are translucent but not browned. Blend in the flour, chili powder,

    salt and pepper. Stir over low heat two minutes. Stir in the

    tomato juice and beef broth. Cook, stirring, over medium heat

    until thickened. Serve hot.
