  • SWEET ‘N’ SOUR MEATLOAF – Beef Veal Food Recipes

    Recipe ingredients and directions:

    8 oz can tomato sauce

    1/4 cup brown sugar

    1/4 cup vinegar

    1 tsp prepared mustard

    1 egg, slightly beaten

    1/4 cup minced onion

    1/4 cup crushed crackers

    2 lbs hamburger

    1 1/2 tsp salt

    1/4 tsp pepper

    1/2 cup tomato sauce mixture

    To make tomato sauce mixture, combine tomato sauce, brown sugar,

    vinegar, and mustard.

    Combne egg, onion, crackers hamburger, salt, pepper and 1/2 cup of

    the tomato sauce mixture.

    Shape meat into oval loaf. Place in shallow baking dish. Pour

    rest of tomato sauce over mixture on top. Bake at 400 degrees for

    45 minutes. Serves 8.

  • Pizza Burger Loaf – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 lb. ground chuck

    6 oz can tomato paste

    1/2 cup finely chopped onion

    4 oz can mushroom stems and pieces, drained

    13-3/4 oz pkg hot roll mix

    1 cup shredded Cheddar cheese

    2 Tbsp. flour

    1 tsp. paprika

    3/4 tsp oregano

    1/2 tsp pepper

    2 1/2 tsp salt

    1 egg, slightly beaten

    1 Tbsp. sesame seed (optional)

    In a large skillet, combine meamato paste, onion, mushrooms, flour,

    paprika, oregano, pepper, and salt. Cook over medium heat 15

    minutes, stirring occasionally. Cool 10 minutes.

    Prepare hot roll mix as for pizza dough, but add 1/2 tsp. salt.

    Roll dough into a 12 inch square; place on a greased cookie sheet.

    Spoon meat mixture down center third of dough to within 2 inches

    of each end. Shape meat into loaf; sprinkle loaf with cheese. Cut

    6 diagonal strips fo dough (each 2 inches wide) on each side of

    meat. Fold dough ends over meat, then crisscross strips over top.

    Brush top of dough with beaten egg, sprinkle with sesame seed. Bake

    at 400 degrees for 30 minutes or until top is golden brown.

    1 1/2 lb ground beef

    1 cup tomato sauce, catsup, or milk

    3/4 cup Quaker Oats (quick or old fashioned, uncooked)

    Combine all ingredients; mix well. Shape to form 8X4 inch loaf;

    bake in large shallow baking pan in preheated moderate oven (350

    degrees) about 1 hour. Makes 6-8 servings.

    Recipe ingredients and directions:

    8 Servings

    1 1/2 pounds lean ground beef, or ground turkey

    10 oz. package frozen spinach, thawed and drained

    1 cup oatmeal

    1/2 cup onions, finely chopped

    1/2 cup carrots, finely shredded

    2 egg whites, slightly beaten

    1/3 cup lowfat milk

    1 1/2 teaspoons Italian seasoning

    1/4 teaspoon pepper

    Heat oven to 350 F. Combine all ingredients in large bowl; mix

    lightly but thoroughly. In 13×9-inch baking pan or on rack of

    broiler pan, shape meatloaf mixture into 9×5-inch loaf in center

    of pan. Bake 45 to 50 minutes or until medium doneness (160`F) and

    juices run clear. Let stand about 5 minutes before slicing.

    8 SERVINGS

    Loaf Pan Method: Press meat mixture evenly across bottom of 8×4-inch

    pan. Bake at 350 F 55 to 60 minutes or until medium doneness (160`F)

    and juices run clear. Drain; let stand 5 minutes before slicing.

    Recipe ingredients and directions:

    1 1/2 pounds lean gorund beef

    1 cup burgundy wine

    1/4 teaspoon dried sage

    1/4 teaspoon dried thyme

    1/2 teaspoon salt

    1/2 teaspoon dry mustard

    1/4 teaspoon pepper

    1 tablespoon Worchestershire sauce

    3 slices bread, torn into small pieces

    1 egg

    2 cloves garlic, minced

    1 small onion chopped

    1 4 ounce can sliced mushrooms, drained

    2 tablespoons brown sugar, packed

    1/3 cup catsup

    1/2 teaspoon ground ginger

    1/2 teaspoon garlic salt

    2 teablespoons soy sauce

    1 teaspoon dry mustard

    Heat oven to 350 F. Mix beef, wine, sage, thyme, salt, 1/2 teaspoon

    dry mustard, pepper, Worchestershire sauce, bread, egg, galic,

    onion, and mushrooms together. Spread mixture in a 8-1/2×4-1/2×2-1/2

    inch or 9x5x2 inch loaf pan.

    Mix brown sugar, catsup, ginger, garlic salt, soy sauce, and 1

    teaspoon dry mustard together in a small bowl. Mix well. Spread

    sauce over meatloaf. Bake for 1 to 1-1/4 hours or until done.

    Makes 6 servings.

  • Meatloaf, Savoury-Glazed – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 1/2 lb. minced steak

    1 cup soft breadcrumbs

    1 teaspoon salt

    pepper

    1 medium onion, chopped

    1 egg, beaten

    1 teaspoon Worcestershire sauce

    2 tablespoons tomato sauce

    6 oz. can evaporated milk

    1 dessertspoon dry mustard

    1/2 teaspoon dry mustard

    1/4 cup tomato sauce

    1 tablespoon brown sugar

    Combine ingredients for glaze, set aside. Mix together all remaining

    ingredients (mixture will be rather moist); press into greased 8 in. x 4

    in. loaf tin, then turn upside down on to aluminum foil-lined oven tray,

    leaving tin still over loaf. Bake in moderate oven 15 minutes. Remove

    from oven, remove loaf tin. Brush meat-loaf well with glaze. (Do not

    replace loaf tin.) Return to oven, cook further 50 to 60 minutes.

    Equally nice served hot with vegetables or cold with salads; good for

    sandwiches too.

    Serves 4.

    Recipe ingredients and directions:

    1 pound ground beef

    3/4 pound ground veal

    3/4 pound ground pork

    1/2 cup bread crumbs

    2 eggs

    1/4 cup ketchup

    3/4 cup liquid Bloody Mary mix

    2 bay leaves roughly crumbled

    1 tablespoon thyme, crumbled

    1/4 cup fresh parsley, chopped

    1 onion, finely diced

    salt and pepper

    uncooked bacon strips (optional)

    Preheat oven to 325 degrees. Combine all ingredients except bacon

    slices. Blend well. Form mixture into loaf shape in shallow baking

    dish. If desired, lay bacon on top to cover. Bake 1 1/4 hours.

    May be served cold. If so, remove bacon strips that may have been

    used.

    Recipe ingredients and directions:

    1 egg, beaten

    1 cup soft bread cubes

    1/4 cup milk

    1 1/2 teaspoons onion salt

    1 teaspoon dried parsley flakes

    dash pepper

    1 1/2 pounds lean ground beef

    6 sticks (2 1/2 " x 1/2 " each) cheddar or mozzarella cheese

    2-15 ounce cans tomato sauce

    1/2 cup chopped onion

    1 tablespoon dried parsley flakes

    1/2 teaspoon dried oregano

    1/4 teaspoon garlic salt

    In a mixing bowl, combine egg, bread cubes, milk, onion salt,

    parsley and pepper. Mix in beef. Divide into six portions. Shape

    each portion around a cheese stick and form into a loaf. Set aside.

    In a large skillet, combine tomato sauce, onion, parsley, oregano

    and garlic salt. Add loaves and spoon sauce over each. Cover and

    bring to a boil. Reduce heat to simmer; cook until done, about 20

    minutes. Makes 6 servings.

    1 1/2 lbs ground beef

    1 1/2 cups cheddar cheese

    1 cup bread crumbs

    1 egg

    1/2 cup minced onion

    1/4 cup Heinz 57 sauce

    1/4 cup milk

    1/2 tsp salt

    1/4 tsp pepper

    Combine all ingredients. Form a loaf. Bake at 350 deg. for

    one hour.

  • BEEF ITALIANO – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1 1/2 lbs. ground beef

    1 egg, beaten

    1 cup bread crumbs

    1 cup water

    1/2 cup finely chopped onions

    dash garlic powder

    salt and pepper to taste

    dash cayenne pepper

    2 small cans herbed tomato sauce (approximately 6.5 ounces each)

    2 cups shredded mozzarella cheese

    Pinch of oregano

    Mix beef, egg, bread crumbs, water, onions, garlic powder, salt,

    pepper and cayenne together well in a mixing bowl. Then, roll or

    pat onto waxed paper into an even rectangle approx. 10 by 14 inches

    in size.

    Spread ground beef rectangle with one can tomato sauce, sprinkle

    with 1 1/2 cups Mozzarella cheese and pinch oregano over all.

    Reserve the remaining cheese and one can of sauce. Roll up in

    jelly roll fashion with help of waxed paper. Place roll seam-side

    down in a lightly greased baking dish and cover with remaining can

    of tomato sauce. Bake for 90 minutes at 400 degrees F. covered

    with foil for the majority of baking time. Remove foil for a

    crustier top for the last ten minutes. Sprinkle with remaining

    mozzarella cheese after removing from oven. Allow to rest for ten

    minutes before slicing.

    Recipe ingredients and directions:

    1 pound ground beef

    1/2 pound ground pork (or use all ground beef)

    1/3 cup ketchup

    1/4 cup chopped onion

    1 egg, slightly beaten

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1/4 cup ketchup

    1/4 cup drained crushed pineapple

    Combine first 7 ingredients. Form into a loaf (8" x 4" x 1-1/2")

    in shallow baking pan. Bake in 350 oven, 40 minutes. Remove from

    oven; combine remaining 1/4 cup ketchup with pineapple and spoon

    over top of loaf. Return loaf to oven; bake an additional 30

    minutes. Let meat loaf stand 5 minutes before slicing.

    Recipe ingredients and directions:

    1 1/2 pound ground beef

    1 cup (about 4 ounces) shredded Cheddar cheese

    1 egg

    1/4 cup dry bread crumbs

    1 small onion, chopped (about 1/4 cup)

    1/4 cup lemon juice

    1/4 cup chopped green bell pepper

    1/2 cup water

    1/2 teaspoon instant beef bouillon

    1 teaspoon salt

    6 slices thin sliced bacon, cut in half

    Mix everything except bacon; shape into 6 loaves. Crisscross 2

    half bacon slices on each loaf, tucking the ends under. Put loaves

    on rack in shallow pan and bake uncovered 50 minutes at 350 deg.

    Recipe ingredients and directions:

    1 1/2 lbs. ground lamb

    1 1/2 lbs. ground beef

    2 eggs

    1/4 cup milk

    2 cups quick oats

    2 tablespoons oil

    1 large onion, finely diced

    2 cloves garlic, minced

    1 cup fresh parsley, minced

    2 teaspoons salt

    1 teaspoon cumin

    1/8 teaspoon pepper

    1 large bunch fresh spinach, chopped or 2 boxes frozen chopped spinach, thawed

    1 egg beaten

    1 1/2 cups feta cheese, crumbled

    1/4 cup black Greek olives, pitted and coarsely chopped

    1/2 cup ketchup

    1 teaspoon cinnamon

    3 tablespoons Parmesan cheese

    Preheat oven to 350 degrees. Mix meats. Combine with eggs, milk,

    and oats. Set aside. Saute onions in oil over moderate-low or

    low heat until for 20-30 minutes until translucent and golden.

    Estimate the cooking time for the onions and approximately 3-4

    minutes before the end of the cooking, add the garlic. Combine meat

    mixture with onions, garlic, parsley, salt, cumin, and pepper. In

    a 9" X 13" baking dish, shape 2/3 of meat mixture into a hollow

    shell. Combine egg, spinach and feta cheese from filling ingredient

    list. Pack this filling into the hollow cavity of the meat loaf.

    Sprinkle with chopped olives. Cover filling with remaining meat

    mixture. Combine topping ingredients and spread over meatloaf.

    Bake for 70-80 minutes.

    Recipe ingredients and directions:

    1 cup fine dry bread crumbs

    1/4 tsp nutmeg

    1/2 tsp fine herbs

    1 tsp salt

    pinch pepper

    3 eggs

    1 cup milk

    2 lbs. ground buffalo meat

    1 cup shredded carrot

    1/2 cup chopped celery

    1 small finely chopped onion

    1/2 cup hickory flavored catsup

    In a bowl place bread crumbs, nutmeg, herbs, pepper and salt. Mix

    by hand and add eggs and milk. Beat and allow to sit for 5 minutes.

    Gradually add the buffalo, carrot, celery and onion and blend

    together. Pour into a 9 x 13 baking pan and spread evenly. Spread

    catsup over meat meat mixture. Bake in preheated 325 degree oven

    for 1 hour to 1 hour 20 minutes or until completely cooked through.

    Stand 5 minutes before cutting.

    Recipe ingredients and directions:

    2 lbs. ground beef

    1/2 lb Italian sausage

    1 cup crushed saltine crackers

    1 or 2 cloves garlic, minced

    1 onion, chopped

    1 egg

    15 oz. can tomato sauce

    2 tsp. salt

    3/4 tsp. oregano, divided

    1/2 tsp. pepper

    3 oz. mozzarella cheese, grated

    4 or 5 stuffed green olives, sliced

    Combine ground beef, sausage (remove from casing and crumble),

    cracker crumbs, garlic, onion and egg. Mix spices into tomato

    sauce, reserving 1/4 teaspoon oregano. Save 1/3 of seasoned tomato

    sauce; add remainder to meat mixture and mix thoroughly. Form loaf

    in 9 X 5 X 3 inch pan. Spread reserved sauce over top. Bake at

    350 degrees for 1 hour , 30 minutes. Sprinkle top with grated

    cheese, reserved oregano and place olive slices on top. Bake 5-6

    minutes. Let stand 10 minutes before serving.

    Recipe ingredients and directions:

    2 pounds ground beef, extra lean

    2 medium eggs

    1 cup dried bread, crumbled

    1/2 cup green olives, sliced

    2 tablespoons ketchup, low sodium

    1 tablespoon A-1 Steak Sauce

    1 tablespoon Worcestershire sauce

    1 tablespoon dried parsley

    1/2 teaspoon garlic powder

    1/2 teaspoon oregano

    Mix together ground beef, A-1, Worcestershire sauce, parsley,

    garlic, and oregano and allow to marinade overnight in an airtight

    bowl. Add in the remaining ingredients and bake in a 350 degree

    F. oven until done. About 1 hour.

    Recipe ingredients and directions:

    3/4 c onion minced

    3/4 c green onion minced

    1/2 c celery minced

    1/4 c green pepper minced

    1/4 c red pepper minced

    1 t salt

    1/4 t cayenne

    1 t black pepper

    1/2 t white pepper

    1/2 t ground cumin

    1/2 t ground nutmeg

    1/2 c half and half

    1/2 c catsup

    1 1/2 pounds lean ground beef

    1/2 pound lean ground pork

    3 eggs beaten

    3/4 c bread crumbs

    Saute the vegetables in butter until soft. Add salt, cayenne,

    peppers, cumin and nutmeg to the sauteed vegetable mixture. Stir

    in half and half, catsup, beef, pork, eggs and bread crumbs into

    the vegetable mixture. Mix well. Form into a loaf on a greased

    baking dish. Bake at 350 degrees for 45 to 50 minutes.

    Gravy

    1 sprig thyme

    4 shallots minced

    1 bay leaf

    pinch black pepper

    1 T butter

    1 c dry white wine

    1 c veal or beef stock

    1 c chicken stock

    1 T butter

    Saute thyme, shallots, bay and pepper in butter. Add wine, reduce

    to glaze. Add stocks; simmer until reduced by 1/3 to 1/2. Discard

    thyme sprig and bay leaf. Add butter. Season to taste.

    Recipe ingredients and directions:

    1 1/4 pounds ground beef

    1 egg

    1 cup fresh bread crumbs

    1/4 cup half and half

    1 small onion, chopped

    1 small celery stalk, chopped

    1/4 cup parsley, chopped

    1 clove garlic, minced

    salt and pepper, to taste

    6 medium red potatoes, sliced

    2 tablespoons apricot jam

    1 tablespoon fresh dill, chopped

    1 1/2 cups peas, thawed

    1/4 cup ketchup

    prepared mustard, to taste

    Combine ground beef (or you can use meatloaf mix), bread crumbs,

    cream, onion, celery, parsley, garlic, salt, pepper and mustard

    to taste. Add ketchup. Mix well. Divide into 4 oval portions. Place

    in a lightly greased 12-inch skillet. Arrange potato slices in pan.

    Sprinkle with salt and pepper. Bake 5 minutes. Mix together apricot

    jam and 1 tablespoon water. Glaze meatloaves with jam mixture.

    Cover loosely with foil and bake 20 minutes more. Baste with

    remaining glaze. Bake 15 minutes more. Add peas and dill. Bake 5

    minutes more or until peas and potatoes are tender. Makes 4

    servings.

  • Cape Cod Cranberry Meatloaf – Beef Veal Food Recipes

    Recipe ingredients and directions:

    1/4 c whole cranberry sauce

    3/4 c dark brown sugar, packed

    2 tablespoons chili sauce (optional)

    2 1/2 lb ground chuck

    1/2 c milk

    1 onion, finely chopped

    1/4 c ketchup

    1/2 c plain bread crumbs

    2 eggs, lightly beaten

    1/2 tsp dried thyme

    1/2 tsp dried marjoram

    1/4 tsp white pepper

    1/2 tsp dried rosemary

    1 tsp salt

    2 bay leaves

    Preheat the oven to 350 degrees. Lightly oil a 9 x 5 x 3-inch loaf

    pan. In a small bowl, combine the cranberry sauce and brown sugar.

    Place the cranberry sauce mixture in the bottom of the prepared

    loaf pan. In a large bowl, combine the remaining ingredients except

    the bay leaves and mix well. Set the meatloaf mixture in the pan

    on top of the sauce. Top the loaf with the bay leaves and bake

    for 1 1/2 hours or until done. Allow the loaf to cool for 20

    minutes. Remove the bay leaves. Very carefully turn the loaf onto

    a serving plate so that the sauce side is up. Drizzle the pan

    juices over the loaf.

    Recipe ingredients and directions:

    6 oz can tomato paste (170g)

    1 1/2 cups water (375ml)

    1 1/2 lbs lean ground beef (675g)

    1 cup fine cracker crumbs (250ml)

    1/2 cup finely chopped onion

    1/2 cup green pepper (125ml)

    2 eggs, separated

    1/2 teaspoon salt (3 ml)

    1/4 teaspoon pepper (1 ml)

    3 cup hot prepared mashed potatoes (750ml)

    1/4 cup shredded cheddar cheese (60ml)

    1 tablespoon butter (15ml)

    2 tablespoons brown sugar, packed (30ml)

    2 tablespoons Worcestershire sauce (30ml)

    2 tablespoons mushroom stems and pieces (30ml)

    Blend together tomato paste and water in small saucepan. Set aside.

    Combine in a bowl 1/2 cup of the tomato paste mixture, ground beef,

    cracker crumbs, onion, green pepper, egg whites, salt and pepper.

    Mix well. Shape mixture into a loaf in a shallow baking dish. Bake

    at 350 deg for 45 minutes. Meanwhile in a saucepan, combine hot

    prepared mashed potatoes, cheese, butter and egg yolks. Stir and

    heat 2-5 minutes to melt cheese. Drain fat from meat loaf. Frost

    with potato mixture. Bake 15- 20 minutes longer. Add brown sugar,

    Worcestershire and mushrooms to saucepan of remaining tomato paste

    mixture. Heat 3-5 minutes. Serve over slices of meat loaf. Makes

    6- 8 servings.

  • Cajun Meat Loaf – Beef Veal Food Recipes

    Recipe ingredients and directions:

    2 whole bay leaves

    1 teaspoon salt

    1 teaspoon ground cayenne pepper

    1 teaspoon black pepper

    1/2 teaspoon white pepper

    1/2 teaspoon ground cumin

    1/2 teaspoon ground nutmeg

    4 tablespoons unsalted butter

    3/4 cup finely chopped onions

    1/2 cup green bell peppers, chopped

    1/4 cup green onions, finely chopped

    2 teaspoons minced garlic

    1 tablespoon Tabasco sauce

    1 tablespoon Worcestershire sauce

    1/2 cup evaporated milk

    1/2 cup catsup

    1 1/2 pounds ground beef

    1/2 pound ground pork

    2 eggs, lightly beaten

    1 cup very fine bread crumbs

    Combine the seasoning mix ingredients in a small bowl and set aside.

    Melt the butter in a 1-quart saucepan over medium heat. Add the

    onions, celery, bell peppers, green onions, garlic, tabasco,

    Worcestershire and seasoning mix. Saute until mixture starts sticking

    excessively, about 6 minutes, stirring occasionally and scraping

    the pan bottom well. Stir in the milk and catsup. Continue cooking

    for about 2 minutes, stirring occasionally. Remove from heat and

    allow mixture to cool to room temperature.

    Place the ground beef and pork in an ungreased 13×9-inch baking

    pan. Add the eggs, the cooked vegetable mixture and the bread

    crumbs, remove the bay leaves. Mix by hand until thoroughly combined.

    In the center of the pan, shape the mixture into a loaf that is

    about 1-1/2 inches high, 6 inches wide and 12 inches long. Bake

    uncovered at 350F for 25 minutes, then raise heat to 400F and

    continue cooking until done, about 35 minutes longer.

    Serve immediately as is or with Very Hot Cajun Sauce for Beef.

    This is best using both ground pork and ground beef, as the pork

    gives more flavor diversity. However, you can make it with ground

    beef only.

    1 lb ground beef or turkey

    8 oz tomato sauce

    1 egg

    1 cup oatmeal

    1 T dried onion

    Mix all ingredients together and form into loaf shape. Bake at

    Often I add something else, 3/4 cup grated cheddar or corn, 1/2

    cup sunflower meats, or some spices like cayenne or paprika to

    taste.

    3 T Teriyaki sauce or 1 T low sodium soy sauce

    2 T Dijon mustard

    1 c dry red wine

    2 c unsalted crackers, crushed

    1/2 c walnuts, finely minced

    2 eggs, slightly beaten

    1/2 lb Cheddar cheese, cut into 1/8-inch slices

    parsley sprigs

    Into a large bowl place all the ingredients except the cheese and

    parsley sprigs in the order given. Knead the mixture well to mix

    thoroughly,. Divide the mixture in half and form each half into a

    compact loaf approximately 1 1/2 inches in depth. Place the cheese

    on the top of one of the loaves and top with the other loaf. Pinch

    the loaves together well, to seal. Place in a shallow roasting

    pan and bake in a preheated 400 degree oven 1 hour. Remove from

    the oven. Slice the loaf and arrange slices on a a warm platter.

    Garnish with parsley sprigs.

    Judi’s Notes: I think a 400 degree oven is too high for meat loaf

    and so always bake my meat loaves at 350-375 degrees and just cook

    it a few minutes longer. I also like to remove some of the fat

    and juices that accumulate in the pan about half way through cooking

    by using a turkey baster to suction in out of the pan.

    Recipe ingredients and directions:

    3 1/2 pounds hamburger

    2 eggs

    1/2 cup oatmeal

    1/2 cup onions

    1/4 cup ketchup

    salt and pepper

    few shakes of garlic

    few shakes of Worcestershire sauce

    Mix all ingredients with a fork, not hands! If too mushy, add more

    oatmeal. If too dry, add ketchup.

    Topping

    1/4 cup brown sugar

    1/2 cup ketchup

    1/4 cup mustard

    1/3 cup honey

    Mix until smooth and pour over uncovered meatloaf. Bake one hour

    at 350.

    Recipe ingredients and directions:

    10 1/2 cups rolled oats

    1/4 cup salt

    3 tablespoons salt

    1 1/2 tablespoons pepper

    3 1/2 cups onion, chopped

    14 eggs

    10 1/2 cups milk or tomato juice

    21 pounds ground beef

    1 1/4 cups ketchup

    3/4 cup brown sugar, packed

    3/4 cup prepared mustard

    In a large container, combine oats, salt, pepper, onion, eggs, and

    milk or tomato juice; mix well. Add the ground beef in chunks;

    first mix with a large spoon, then with clean hands, until well

    blended. Shape into loaves of desired size and place in shallow

    baking pans. Bake at 350 degrees for 30 minutes. Combine all of

    the glaze ingredients and spread over tops of loaves; bake for

    about 1 hour more. (Two-pound loaves will need to bake for 1 1/2

    hours.) Yield: 100 servings.

    Recipe ingredients and directions:

    1 pound ground beef or ground turkey

    1/2 cup dry oatmeal

    1/2 cup ketchup

    1 egg

    1/2 teaspoon or less salt (optional)

    1/2 teaspoon pepper

    1/4 cup chopped onion

    Combine all ingredients well. Put into a loaf pan. Poke two or

    three holes in the top of the loaf. Pour 1 third cup of ketchup

    on top. Cook in a 350 degree oven for one hour.

    Recipe ingredients and directions:

    2 lb ground beef, turkey or chicken

    1 cup cracker meal

    1/2 cup water

    2 eggs beaten

    1 onion chopped

    salt and pepper as desired

    11 oz can tomato sauce

    1/4 cup lemon juice

    1/2 cup sugar

    Combine every thing except half of the tomato sauce, lemon juice

    and sugar. Shape meat mixture into loaf form and place in a baking

    dish. Combine the remaining tomato sauce, lemon juice and sugar and

    pour over meat loaf. Bake 350 degrees covered about 40 minutes,

    basting frequently. Then uncover and bake about 15 minutes more or

    until meatloaf is done.

    Recipe ingredients and directions:

    Yield: 8 Servings

    3 6-inch corn tortillas, cut into pieces

    1/2 lb ground beef

    1/2 lb ground ham, smoked, cooked

    1 clove garlic, finely chopped

    1 tsp oregano leaves, dried

    1/4 tsp pepper

    1 cup beef broth

    1/2 cup milk

    1/2 lb ground pork

    1/4 cup onion, chopped

    1 tsp cumin, ground

    1/2 tsp salt

    1 cup red chile sauce

    Place tortilla pieces and milk in large bowl, let stand 15 minutes.

    Mix in remaining ingredients except basic red sauce and broth.

    Shape into 1-inch balls. Heat basic red sauce and broth to boiling

    in 10-inch skillet, reduce heat. Add meatballs. Cover and simmer

    until done, 15 to 20 minutes.
