  • Chilli Chicken Recipe

    Chilli Chicken Recipe

    The wonderful flavors of China have made it into the hearts a many world-wide. The crispness of the vegetables, along with the spice and the tender and juicy Chicken, has made this a winner in our books. Enjoy this amazing dish and your biggest worry will be how to stop eating…

    Prep Time: 20 min
    Cook Time: 20 min
    Serves: 4

    Ingredients:

    Boneless Skinless Chicken Thighs – 1lb (approx 1/2 kg)
    Salt – to taste
    Pepper- to taste
    Cornstarch – 1.5 tbsp
    Dry Red Chilli – 4-5 or to taste, cut
    Oil – 4 tbsp
    Ginger – 2 tbsp, minced
    Garlic – 2 tbsp, minced
    Green Chillies – to taste, slit
    Onion – 1/2 medium, chopped
    Red Bell Pepper – 1/3rd, chopped
    Yellow Bell Pepper – 1/3rd, chopped
    Green Bell Pepper – 1/3rd, chopped
    Soy Sauce – 3 tbsp
    Sambal or Chilli Sauce – 2 tbsp or to taste
    White Vinegar – 1 tbsp
    Spring Onions – 2 sprigs, cut diagonally

    Method:

    1. Wash the chicken well and lightly sprinkle Salt, Pepper and Cornstarch. Mix well and set aside.
    2. In a wok-style pan, heat Oil on medium-high heat.
    3. Drop the Chicken in so as to not let it clump, separate the pieces so they get coated in Oil and get evenly coated.
    4. Cook uncovered stirring frequently. Allow the Chicken to cook all the way through.
    5. To check, cut a piece of chicken and if there is no pink, it’s done.
    6. With a slotted spoon, pull the chicken to the side, drain all the excess Oil and keep aside.
    7. In the same Oil, add in the chopped Dry Red Chillies and cook for 30 seconds.
    8. Add in the Ginger, Garlic and Green Chillies, mix and cook for a minute.
    9. Add in the Onion and the Bell-Pepper and cook for another minute or so.
    10. Add in the Soy Sauce, Chilli Sauce and the Vinegar. Mix.
    11. Add the Chicken.
    12. Cook until the sauce coats the Chicken and the Vegetables.
    13. Once done, turn off the flame and add in the Spring Onions.
    14. Toss once again and serve immediately with Noodles, Fried Rice or Steamed Rice.

    Flavoured Potato Wedges – Quick Easy To Make Homemade Appetizer Recipe By Ruchi Bharani

    Ruchi Bharani is up with an extremely delicious and easy to make flavored potato wedges recipe. Try these wedges with a burned garlic flavor and some spicy mayo.

    Ingredients:
    Flavoured Potato Wedges
    2 medium sized non-starchy potatoes
    1 tsp red chilli flakes
    2 tbsp garlic, chopped
    1 tsp mixed herbs
    3 tbsp olive oil
    salt and pepper to taste

    Method:
    -Take 3 Potatoes and wash them thoroughly
    – Cut the potato from the center. Take one half and again cut it. Again cut it from the center.
    – After cutting all the potatoes, take a pot of boiling water
    – Add some salt and boil the potatoes for 5 mins
    – For marination, take a bowl.
    – Add some finely chopped garlic, red chilli flakes, mixed herbs, little pepper, some salt, olive oil. Now mix all of these together.
    – Now spread a cloth and remove and place the potato wedges on the cloth.
    – Pat dry them a little bit
    – Now add them into this marinate
    -Coat the wedges properly with the marinate
    -Take a non-stick tray to bake the wedges
    -Spread the wedges evenly on the tray
    -Pre heat the oven at 180 degrees for 10 mins
    -Bake the wedges for 15 to 20 mins till they get a nice golden crust
    -Serve hot with some spicy mayo

    Chicken Teriyaki a simple dish made from sweet soy sauce and chicken thighs, It is usually garnished with green onions and sesame seeds. The dish has it roots in Japan but is now common in many many kitchens and restaurant around the world. The recipe can be used with many other meats such as pork, beef, or fish. My personal preference is the chicken version as chicken seems to have the perfect consistency for the dish. Pork seems to heavy, while fish is a little light. As with many foods, Chicken Teriyaki sauce is available in many supermarkets, but the homemade sauce is far nicer.     Ingredients:
    2 Lbs boneless chicken thighs
    1-2 Brown onions finely chopped or slivered.
    4+ Cloves garlic minced.
    2Tsp. Mustard seeds.
    3-4 Green chilis or 1 – 2 Tsp. Red chili powder.
    2 Cans of chopped tomatoes
    1 red pepper, deseeded and sliced
    ½ green pepper, deseeded and sliced
    1 Inch finely chopped ginger or 1-2 Tsp. ground ginger.
    1-2 Tbsp. Garam Masala or Madras curry powder
    1 Cup Chicken stock or 1 Tbsp. chicken or mutton powder from Indian grocery store.
    1 Tbsp. Ground Coriander.
    1 Tbsp. Ground Cumin.
    1-2 Tsp. Turmeric.
    Handful of chopped cilantro/coriander for garnish.
    Salt and black pepper to taste.
    2 Tbsp. Melted butter optional.
    Juice of 1 or 2 limes optional.

    Method:
    In your large skillet or wok and heat your ghee or cooking oil of your choice.
    Now add your mustard seeds to the oil and fry on medium until the mustard seeds pop.
    Then add your ground coriander, cumin, turmeric and let fry for 30 seconds on medium low to medium.
    Then add your slivered onions to the wok/skillet and fry 2-3 minutes until the onions are translucent and browned lightly.
    Then add in your garlic, chilies or chili powder/flakes and red and green sliced bell peppers and fry for 2 more minutes.
    Now add in your chicken thighs and chopped tomatoes and cook for five or so minutes. Add chicken stock a little bit at a time to keep the sauce from burning/sticking to bottom of wok/skillet. You want the sauce thick but not to burn.
    Add in your garam masala now and mix in well.
    Add your chicken masala powder now if using it and mix in well.
    Now reduce the heat until the mixture is just simmering. Cover the pan with a lid offset and simmer for 20-30 minutes, stirring occasionally and adding a tablespoon of chicken stock every so often if the mixture appears too dry.
    Just before serving add your butter or ghee and mix in well.
    Then add lemon juice and mix in well.
    adjust salt and black pepper.
    Serve on white rice or even cut up boiled potatoes.

  • Vegetarian Chik’n Pot Pie

    Vegetarian Chik’n Pot Pie

    Quorn At Kroger Store: http://www.quorn.us/products/28/chikn-tenders

    Ingredients:

    2 cups vegetable or chicken broth
    1 bouillon cube
    1/3 cup butter
    1 onion, finely chopped
    1 cup carrots
    1 cup celery,
    1 Tbs garlic paste
    1/2 tsp ground black pepper
    1/2 cup all-purpose flour or Besan flour (chick pea)
    1/4 cup heavy cream or coconut milk
    1 bag 12 oz CHIK’N Tenders or your chicken
    1/2 cup frozen peas

    Bisquick: Topping

    2-1/2 cup bisquick
    2/3 cup milk

    Preheat your oven to 450 degrees 10-15 minutes

    Directions:

    In a large saucepan heat chicken broth and bouillon cube over medium heat until hot.

    Melt butter over medium heat. Add onions, carrots, celery, and garlic, and saute until tender. Season with black pepper. Add the flour and stir together until it becomes pasty and lump-free, about 2 minutes. Stir in the hot broth, heavy cream, veggie chicken and peas. Bring to a boil then reduce to a simmer.

    Sprinkle flour on counter top. Roll out dough an extra inch. Using a biscuit round or mold, cut out dough to cover the tops of your oven-proof bowls, with about 1/2-inch hangover, depending on their size. Crimp the dough over the edge of the ramekin. Brush with butter make 4 small slits on the top. Bake for 10 at 450 degrees for minutes. Remove from the oven and serve.

    1. Chicken cutlets — you can only cute them if they’d been thawed beforehand if not then just throw them in the crock pot frozen and it will thaw out on it’s own while cooking, After four hours cut them up how you want and throw it back in for the remaining amount of time.

    A fun way to get your ham, eggs and toast in one little bundle.
    Found this idea in a magazine at the library (some kind of country cooking magazine) but didn’t make note of the name because this is really more a method than a recipe.

    Cut crust off bread
    Roll out bread as thin as possible with rolling pin.
    Press flattened bread into well greased muffin tins. Brush bread cups with a bit of melted butter.
    Bake bread cups at 375F for 5-7 minutes or until light golden brown.
    Curl a piece of thin deli ham into the cup and add thin slices of cheese along the sides of the bread cups.
    Break an egg into each cup (medium sized eggs probably work best)
    Bake egg cups at 375F for 14-18 minutes until egg whites are barely set and still appear moist.
    Remove from oven and immediately tightly cover with tin foil and let sit for 5 minutes before serving.
