    Delicious and Healthy Banana Bread

    Healthy Gluten/Sugar/Dairy Free Banana Bread

    1 ½ cups of almond flour ( can be found at Whole Foods or most other health food stores or you can make your own almond flour. Google for more directions:) )
    ½ cup of coconut flour ( can be found at Whole Foods or most other health food stores or you can make your own coconut flour, google for more directions )
    1 ½ teaspoon baking soda
    ½ of sea salt
    4 tablespoons of olive oil
    6 eggs
    4 ripe bananas ( the riper the bananas, the sweeter your banana bread will be)
    1 cup of chopped walnuts

    Directions

    1. Preheat your oven to 350 F /175 C

    2. Mix all dry ingredients together with a spoon

    3. Mix all wet ingredients with a fork until nice and smooth.

    4. Pour the wet ingredients into the dry ingredients

    5. Mix the dry and wet ingredients well until smooth.

    6. Add chopped walnuts and mix well.

    7. Pour the mixture into a bread baking pan lined with a parchment paper brushed with olive oil.

    8. Bake for 50 minutes or until the top is browned.

    P.S. My Bread Pan is 9.25 x 5.25x 2.75 in

    Chicken Parmesan – Lynn’s Recipes

    This is my version of Chicken Parmesan. It is a simple, delicious dish, that is very easy to make. You can use your homemade tomato sauce or jarred sauce.

    Chicken Parmesan

    4-6 chicken cutlets
    All purpose flour, about 1 cup or according to how many chicken cutlets you use
    Salt
    Pepper
    2-3 eggs
    2 Tablespoons water
    Italian bread crumbs, about 1-2 cups
    48 ounces tomato sauce, either homemade or jarred
    6 ounces sliced mozzarella cheese
    Freshly grated Parmesan cheese
    Olive Oil
    Spaghetti, cooked according to package directions

    Dredge chicken cutlets in flour, then egg, then Italian bread crumbs. Heat olive oil in a sauté pan and then brown cutlets on both sides. Spray a 9×13″ casserole dish. Place a layer of the tomato sauce in the bottom of the casserole dish. Place the chicken cutlets over the tomato sauce and cover with more sauce. Place the mozzarella cheese evenly over the cutlets and sprinkle with Parmesan cheese. Bake for about 30 minutes in a preheated 350° oven.

    Cook spaghetti according to package directions. Heat the leftover tomato sauce and serve over the spaghetti with a cutlet. Sprinkle with more Parmesan cheese, if desired.

    Roasted Beet Salad – makes 2 servings or 1 appetizer

    Ingredients

    15 small (baby) beets
    2 tbsp. olive oil
    2 tbsp. shallots, minced
    1 tbsp. red wine vinegar
    1 tbsp. balsamic vinegar
    1 tbsp. parsley, minced
    1 tsp. fresh orange juice
    1/2 tsp. kosher salt, to taste
    1/4 tsp. ground black pepper, to taste
    1/4 cup crumbled feta

    Instructions

    Preheat oven to 400 degrees.

    Line a baking sheet with aluminum foil. Lay the baby beets, skin on, down on the baking sheet, with space surrounding each, if possible. Cover baking sheet with another sheet of aluminum foil. (You can bypass this step if you wish to individually wrap each beet, but this is kinda like wrapping them all together at once. Much easier.)

    Bake beets in the oven for 35-40 minutes, or until tender when poked with a fork.

    In a small mixing bowl, whisk together all other ingredients (for the vinaigrette). Season with salt and pepper, to taste.

    Once beets are tender, remove from oven and allow to cool. When cool enough to handle, gently peel off beet skin using a sharp paring knife. Discard peel.

    Slice each beet in about 1/4-inch slices. Arrange sliced beets on a plate. Drizzle desired amount of vinaigrette over the beets (you may not need to use it all).

    Sprinkle crumble feta over the plate.

    The BEST Healthy Ground CHICKEN BURGER Recipe

    INGREDIENTS:

    1 1/2 pounds ground chicken

    1/2 cup panko crumbs
    1/2 cup milk

    In a bowl mix the panko crumbs and milk and set
    to the side for 15 minutes until the crumbs absorb
    most of the milk

    1 tbsp ketchup
    1 tsp chili powder
    1 tsp dried chives
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp black pepper
    pinch of salt to taste

    In a large bowl add the chicken, moist panko crumbs
    and all the seasonings. Mix and incorporate well.

    Form burger patties. I got 6 nice size chicken burgers
    from this recipe.

    Place under broiler and broil each side for 3-5 minutes.
    It depends on the thickness and size of your patties.
    Make sure they are cooked thoroughly.

    Serve on the bread or bun of your choice.
    Serve with the fixins or condiments of your choice.
