    Portobello Mushrooms ( substitute large white mushrooms )
    1 pound of jumbo lump crab meat
    1 pound of peeled and de-veined shrimp
    1 pound of scallops (optional)
    1 large bell pepper
    1 large yellow onion
    2 sticks of butter
    1 cup of Panko bread crumbs
    3 sprigs of fresh rosemary
    3 springs of fresh thyme
    1 large lemon
    2 cloves of garlic
    1 bunch of fresh cilantro
    1 pinch of salt
    1 pinch of pepper
    1 pinch of cayenne pepper (optional) — not really.
    1 bunch of chives

    Step 1: How to Make Portobello Mushroom Stuffed with Creole Crab and Shrimp Stuffing Appetizer

    In a food processor, roughly chop the bell pepper, onions, cilantro and shrimp

    Step 2:
    On low heat melt one stick of butter and garlic. We are only warning up the foods. We are not sauteing anything yet. After about 1 minute add half of the chopped rosemary. Stir for another minute.

    Step 3: Add chopped seafood and vegetable mixture. Keep everything moving in the pan on low heat for 5 minutes. We still are not cooking anything. Just making sure all of the flavors are getting along.

    Step 4: Add the crab meat and lemon juice. Add salt, pepper and cayenne to taste.

    Step 5: After a taste test. Add the panko bread crumbs.

    Part II. Preparing the Mushrooms

    Step 6: Remove the stems and spoon out the mushroom cap.

    Step 7: Saute the mushrooms in butter. Season with salt, pepper and fresh herbs.

    Step 8: Fill the caps with the seafood mixture.

    Step 9: Bake mushrooms in pre-heated oven at 375 for 5 to 8 minutes. All of the food should be done. We are caramelizing the mushrooms.

    Step 10: Garnish with chives, cilantro, lemon zest and wedges. Add some tomatoes and enjoy.

    Cashew Onion Pakoda – Easy To Make Quick Tea-Time Snack Recipe By Ruchi Bharani

    Tea-time snacks always spice up your gossip sessions. There are innumerable recipes that fall in this category but today chef Ruchi Bharani brings you an easy to make ‘Cashew Onion Pakoda’ which is surely a delight to have on the snacks menu!

    Ingredients:

    1 cup gram flour
    3 tbsp rice flour
    1 tbsp ginger garlic paste
    2 green chillies – finely chopped
    1 onion – thinly sliced
    1/2 tsp fennel seeds
    1/2 tsp carom seeds (ajwain seeds)
    coriander leaves
    1/2 cup cashew nuts
    Salt to taste
    2-3 tbsp oil
    1/4 cup methi
    1/4 tsp coriander cumin seed powder
    1/4 tsp turmeric powder
    curry leaves oil for frying

    Method:

    To make pakoda mix:
    – In a bowl, add the gram flour, rice flour, methi leaves, thinly sliced onions, cashew nuts, coriander and cumin seed powder, turmeric powder, raw mango powder (aamchur powder), salt to taste, green chillies, ginger paste and garlic paste.
    – For tadka, in a small bowl, heat oil. Once the oil is hot, add the coriander seeds, fennel seeds, ajwain seeds (carom seeds) and some curry leaves and add this tadka into the bowl of mix.
    – Stir all the ingredients of the bowl well and add very little water.
    – Mix all the ingredients, first using a spoon and then use your hands to mix.

    To make the pakoda:
    – Heat oil in a pan.
    – Apply little oil on your hands before frying the pakodas.
    – Take small portions of the pakoda mix and fry them in the hot oil.
    – Serve hot with some delicious chutney or dip.

    Welcome to my cooking channel (food channel)!
    In this video, I’m going to show you how to make Filipino Chicken Adobo!
    I still remember the first time I had Filipino chicken adobo.. I was like “I was missing out!!” Oh, it is So Delicious!!!
    So I’ve got to make my own version of Filipino chicken adobo! You have no idea how it tastes like until you actually try it. =) This is one of the best chicken recipe I’ve ever came up. I tried to not mess up too much of traditional flavor, because I understand what comfort food is to people. I hope you enjoy it!!

    Filipino Chicken Adobo Recipe

    Ingredients
    3/4 cup soy sauce
    1/2 cup rice wine
    1/2 cup rice vinegar
    1 Tablespoon fish sauce
    3 Tablespoons brown sugar
    1/3 cup chopped garlic
    4 bay leaves
    Zest of 1 lemon
    1 whole chicken (4 lb)
    3 Tablespoons canola oil
    Fresh lemon juice from ½ lemon
    Chopped green onion
    Cilantro
    Lemon wedges

    Directions
    1. To make marinate sauce, combine first 8 ingredients through lemon zest in a large bowl and stir. Add chicken into marinate sauce, cover and refrigerate overnight.
    2. Preheat oven to 425 degrees. Heat oil in a large skillet over high heat swirl to coat.
    3. Place chicken on a large skillet, cook 5 minute each side or until the skins are crispy.
    4. Pour remaining marinate sauce bring to boil then bake at 425 degrees for 20 minutes or until chicken is done.
    5. Sprinkle with lemon juice, chopped green onion and cilantro. Serve with lemon wedges.

    Gourmet Beef Pancit Bites
    Ingredients
    4 oz. Pancit noodles
    Canola oil
    1 1/2 cup very little cubes beef
    3 Tablespoons soy sauce
    1 Tablespoon rice wine
    1 cup chopped onion
    1/2 cup julienne carrot
    1 cup julienne cabbage
    1/2 cup sliced celery
    1 jalapeño, seeded, sliced
    1/4 cup beef broth
    1 Tablespoon soy sauce
    1/2 cup chopped green onion

    Directions
    1. Prepare pancit noodles according to package directions, set aside.
    2. Heat a large nonstick skillet over medium high heat, add 3 to 4 Tablespoons oil; swirl to coat.
    3. Grab enough noodles to make about 1 1/2 inch disc; place in pan carefully. Cook it until bottom is crispy 3 to 5 minutes. Remove, place on paper towel or rack. Continue, makes 12 to 15. Set aside.
    4. Heat a large skillet over medium high heat, add 1 Tablespoon oil; swirl to coat. Add beef, soy sauce, rice wine; sauté 5 minutes or until browned. Stirring frequently. Remove and set aside.
    5. In a same large skillet add 1 Tablespoon oil; swirl to coat. Add onion and next 6 ingredients (through soy sauce); sauté 5 minutes until the water has evaporated. Remove and set aside.
    6. Arrange vegetables and beef on top of prepared pancit noodles.
    7. Garnish with chopped green onion and serve.

    Black Bean Hummus
    Ingredients
    2 Tbls Tahini
    1 Can 20.5 Oz of Refried Black Beans
    5 -6 Cloves of Garlic
    4-5 Chili Pequin (little red chili pepper).
    Note: For both the Chili Pequins and the garlic you can add more or less to your liking

    Instructions
    Place garlic, chili peppers, and tahini in a blender and give a good blend. Add the Can of refried black bean a little at a time until blended smooth. You may need to work a metal spoon along the side to get this to blend. Be patient and take your time.

    Serve on whole grain pita chips

    DMD Shrimp Dip Appetizer
    Ingredients
    1 16 oz (1lb) bag of cooked cocktail / salad shrimp
    2 tbsp mayonnaise
    1 Tbsp siracha sauce
    ½ Red Onion – diced

    Instructions
    Rinse and drain shrimp. In a medium sized mixing bowl mix all ingredients, add more mayo or siracha until you have the desired consistency and heat.

    Serve with/over
    Crackers

    BETH’S FOOLPROOF QUICHE RECIPE
    Serves 8

    Fits a Quiche Pan 8 in x 1 ¾” (20,3 cm x 4,5 cm) removable bottom is best. See shopping guide above for the pan I like best.

    For Crust:
    1 ¼ cups (150 g) flour
    1/2 tsp (2.5 ml) salt
    ½ cup (150 g) cold unsalted butter, cubed
    1 egg
    2 tbsp (30 ml) ice water

    For Filling:
    1 tbsp (15 g) butter
    ½ cup (75 g) yellow onion, diced
    good Pinch of salt
    crackled pepper to taste
    10 eggs
    1 cup (240 ml) heavy cream
    1 tsp (5 ml) salt
    Cracked pepper to taste
    1/8 tsp (1.75 ml) cayenne pepper for spice or 1/8 tsp (1.75 ml) nutmeg for a more mellow flavor
    ½ cup (60 g) Gruyere cheese, shredded
    1 6 0z (170 g) bag baby spinach

    METHOD:

    TIP#1: Upgrade from a tart pan to a deep dish Quiche pan. It will send this meal over the top! So elegant and delicious. Make sure it’s a removable bottom pan.

    TIP#2: If you don’t have a tart pan or a food processor buy a ready made deep dish pie crust, this will work too. Crimp the edges decoratively to look “homemade”

    To make the crust:

    Combine flour and salt in a food processor and pulse. Cut butter into small cubes and add to food processor and pulse.

    Combine eggs with ice water, add to food processor, pulsing until a dough forms. Remove dough and roll into a ball on a floured surface.

    TIP#3: Don’t Blind Bake
    Roll the dough out right away and fit into the bottom of the pan, letting the sides flop over. Fit the bottom and sides, and then using back of palm fit into corners. Cut excess off the top so that dough is flush.

    TIP#4: Place pan in the freezer for at least 20 mins, longer is fine too. Dough should not bend to the touch.

    Meanwhile prepare the filling. Melt the butter in a sautee pan. Add onion and sautee until soft. Season with a good pinch of salt and pepper. And spinach and cook until wilted and reduced in size to about 1 cup.

    Crack 10 eggs in a large bowl, whisk together, add the heavy cream and whisk. Then add salt, pepper and cayenne. Whisk to combine.

    Remove spinach mixture from the pan and give it a rough chop, add to the egg mixture. Add the cheese and mix to combine.

    Remove tart pan from freezer and place on a rimmed cookie sheet. Pour filling on top. Place in a 350 degree F oven for 45-50 mins or until golden brown and set (Quiche should not wiggle)

    Allow to cool slightly and serve with a tossed green salad.

    NOTE: This can be baked the day before. Allow to cool completely cover with foil and pop in fridge over night. To Reheat keep quiche covered with foil and reheat in a 300 degree F oven for 20 mins. Remove foil and bake 5 mins more. Enjoy!

    Basic WHOLE ROASTED CHICKEN

    Preheat oven to 425 degrees F.

    1 5-6 lb. Whole Chicken
    2 tablespoons butter, at room temperature
    1 teaspoon kosher salt
    1/2 teaspoon fresh cracked pepper
    1 teaspoon thyme, dried or fresh
    2 celery sticks. cleaned and cute into 2″ long pieces
    2 carrots sticks, peeled and cute into 2″ long pieces
    1 large onion, peeled and sliced
    1 garlic head, sliced into
    1 lemon, sliced in half
    olive oil
    salt & pepper

    1. Rinse chicken in cool fresh running water. Pat with paper towels until dry.

    2. Spread butter over chicken skin, coating evenly. Sprinkle with thyme, salt and
    pepper.

    3. Stuff chicken cavity with 1/2 onions, garlic and lemon.

    3. Add carrots, celery and remaining onions into the bottom of a large Dutch Oven or heavy baking pan. Toss vegetables with a olive oil , salt and pepper. Add stuffed and seasoned whole chicken on top of vegetables.

    4. Roast chicken for the first 15 minute in a 425 degree F. preheated oven. Reduce heat to 374 degrees F. and continue to roast for an addition 50-60 minutes more. Insert thermometer into thigh, not touching bone, registering 165-170 F.

    5. Remove chicken from oven. Cover and let rest for 15-20 minutes.

    6. Serve.

    TIPS: Store leftover chicken in an airtight container in refrigerator for up to 2 day.

    Beth Le Manach says: For me, the most stressful part of entertaining is that moment when guests arrive. They end up gathering in the kitchen while I’m trying to get the dinner ready. And if you have an open kitchen, it’s even worse. So, I’ve devised this handy little appetizer platter that keeps guests busy and in their seats! 🙂 (Trust me, it works!)

    Antipasto Platter

    1 package fresh mozzarella balls in water
    1 tsp (5 mL) freshly chopped rosemary
    1 tsp (5 mL) freshly chopped thyme
    Sea salt and pepper to taste
    1 jar kalamata olives
    zest of 1 lemon
    1 tbsp (15 mL) extra virgin olive oil
    1/4 lb (115 g) thinly sliced sopressata
    1/4 lb (115 g) thinly sliced prosciutto
    1 jar red roasted peppers
    1 jar artichokes in water
    1 bag marcona almonds
    1 package of breadsticks

    Toss mozzarella balls with chopped herbs, olive oil, salt and pepper. Place in small serving bowl.

    Drain olives and toss with fresh lemon zest. Place in small serving bowl

    Place meats decoratively on large serving platter. Add olives and mozzarella bowls. Drain red peppers, place in bowl and add to platter. Drain artichokes, place in bowl, add to platter. Open almonds and place decoratively on platter or in bowl as well. Tuck in bread-sticks here and there.

    This dessert might take quite a bit of time to prepare, but all the steps are really simple, and once you try the tarts you will realize that it was all worth it.

    Feel free to substitute maple syrup and agave with any other liquid sweeteners of your choice. This is just what I had at home and decided to use. 🙂

    I personally find this dessert really rich. I never actually eat an entire tart by myself at once (even though it’s really tempting). I usually have a quarter or half of a tart at most. So this is actually a perfect dessert to share with your Valentine. Unless your Valentine is a cat or a dog. Hehehe.
