    The only thing better than the aroma of coffee wafting through the house first thing in the morning is the smell of freshly baked cinnamon rolls. As a kid, nothing could get me down the stairs for breakfast faster! Though it’s been ages since I’ve actually had the kind of cinnamon rolls my mom would bake, I can still remember the warm buttery goodness with hints of vanilla, cinnamon, and sugar icing.

    Of course, these days, indulgences like that are few and far between for me. Though it may not lessen the allure of a Cinnabon at the mall, my own cinnamon swirl protein bread satisfies that urge. Not only does it fill the house with the aroma of cinnamon and vanilla, but it also provides additional protein and has far fewer calories. Eat this scrumptious bread first thing in the morning or pack it to accompany meals throughout the day!

    Nutrition Facts:
    Makes 16 squares
    1 square = 55 calories, 1 g fat, 8 g carbs, 5 g protein

    Ingredients:
    • 1/3 cup Ideal (Xylitol)
    • 2 tsp cinnamon
    • 1 1/2 cups oat flour + 2 scoops vanilla whey protein
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 1/2 cup Ideal (Xylitol) or ¼ cup Stevia in the Raw
    • 2 egg whites
    • 1 cup unsweetened almond milk (Almond Breeze)
    • 1/3 cup or 1 4oz jar of baby food applesauce and ¼ cup low sugar vanilla yogurt (optional)

    Directions:
    1. Preheat oven to 350. Spray an 8 X 8 inch Pyrex dish with non-stick spray.
    2. In small bowl combine: (set aside)
    • 1/3 cup Ideal (Xylitol)
    • 2 tsp cinnamon
    3. In a large bowl combine: (whisk together)
    • 1 1/2 cups oat flour + 2 scoops vanilla whey protein
    • 1 tbsp baking powder
    • 1/2 tsp salt
    • 1/2 cup Ideal (Xylitol) or ¼ cup Stevia in the Raw
    4. In a medium bowl combine: (whisk together & add to lrg bowl)
    • 2 egg whites
    • 1 cup unsweetened almond milk (Almond Breeze)
    • 1/3 cup or 1 4oz jar of baby food applesauce and ¼ cup low sugar vanilla yogurt (optional)
    5. Pour a shallow layer of batter into the loaf pan (about 1/4 of the batter).
    6. Sprinkle heavily with half of the cinnamon/sugar mixture. Repeat with remaining batter & cinnamon/sugar on top.
    7. Draw a knife through the batter to marble. Bake for 24 to 28 min. Let cool for 10 min. Bread will be dense.

    A calzone forms an important part of the Italian cuisine. This dish, originating in Naples, is an Italian filled oven bread, shaped as a folded pizza. Resembling a half-moon, it is made of bread dough. Chef Ruchi Bharani brings you her version of Calzones filled with mouth-watering vegetables seasoned with pizza sauce.

    Ingredients:
    For making dough:
    200 gms. maida (all purpose flour)
    Water as required
    1 tbsp. yeast
    1 tbsp. sugar
    2 tbsp. butter (room temperature)
    Salt to taste
    1/4 cup milk

    For filling:
    1 cup pizza sauce
    3/4 cup cheese
    1 cup veggies – finely chopped onions, green capsicum, yellow capsicum, zucchini and baby corn (as per choice)

    Method:
    – Heat water until it’s lukewarm.
    – In a bowl, put some yeast, sugar and the lukewarm water and put it aside for the yeast to activate.
    – In another bowl, put some all purpose flour, salt, butter (room temperature) and some milk and mix all the ingredients together.
    – Once the yeast starts floating on the surface, mix it well and add a little amount of water to the flour.
    – Knead into a soft dough by mixing all the ingredients together.
    – Dust the work surface with some plain flour and knock the dough on it until the dough stops sticking to your hand.
    – Place the dough back into the bowl and wrap the bowl with a cling wrap.
    – Let the dough ferment for at least 1 hour in a warm place.

    To make the filling:
    – Heat some olive oil in a pan.
    – Add finely chopped onions, green capsicum, yellow capsicum, zucchini and baby corn and saute them well.
    – Add pizza sauce and mix it with the veggies well.
    – Let the calzone filling cool down completely.
    – Once the filling cools down completely, add some mozzarella cheese and mix it well with the filling.

    To make calzones:
    – Take a small part of the dough and start making mini calzones
    – Sprinkle some dry flour on the work surface and roll the calzones.
    – Apply a little bit of water around the rolled calzone.
    – Put some filling at the centre of the roll and fold it into a semi circle.
    – Fold the edges well.
    – You may use a fork to make designs at the edges and also insert the fork slightly on the calzone to let out all the steam.
    – Brush the tray with a little bit of oil
    – Place the calzone on the tray and brush them with oil or egg wash.
    – Let the calzones rest for 10 minutes and then in a pre heated oven, bake them for about 10-15 minutes.
    – The delicious, mouth-watering calzones are ready to serve.

    This quinoa recipe is a quick and tasty take on Chinese fried rice. Quinoa makes a great substitute for rice in many recipes, especially quinoa fried “rice”. Quinoa is a complete protein, which makes this dish a complete meal, even if you leave out the egg–which is an easy way to make this a vegetarian recipe. Of course you can go the other route and throw in a little diced pork chop or ham if you like, but I’m quite happy with just a couple scrambled eggs thrown in.     Quinoa Fried Rice Recipe
    Ingredients:
    1 cup QUINOA (before cooking)
    1 cup PEAS
    1 CARROT (diced)
    4-6 GREEN ONIONS (chopped, tops separate)
    3-5 cloves GARLIC (finely chopped)
    2 Tbsp GINGER (finely chopped)
    HOT PEPPERS (as desired, finely chopped)
    2 EGGS (scrambled)
    2-3 Tbsp OIL for sautéing
    SOY SAUCE as desired
    SESAME OIL 1-2 tsp
    SALT and PEPPER to taste

    Quinoa Fried Rice Recipe
    Directions:
    This is a great dish for leftover quinoa. The next time you’re making a pot of quinoa for another recipe, just make a little extra for this fried rice recipe knockoff! But if you don’t have any leftover cooked quinoa handy, just prepare this quinoa a little ahead of time to give it time to cool down–this will keep the quinoa from easily overcooking and becoming mushy.

    Quinoa is easy to prepare–just like rice, in fact! Rinse the quinoa if needed (many brands come pre-rinsed). In a pot, add 1 cup quinoa to 2 cups water. Bring the pot to a boil, reduce pot to a simmer, and then cover and let cook 13 minutes (this will result in slightly al-dente quinoa, which is what you want for frying). Remove the quinoa from the heat and let sit for 10 minutes.
    Then fluff with a fork and allow to cool completely (salt if desired).

    For fried rice, I like to scramble my eggs first and then set aside. I Use two eggs for this recipe, but feel free to use 1, or 3, or none if you want a vegetarian fried quinoa. Whisk the eggs (add a splash of milk if desired–makes scrambled eggs smoother). Heat oil in a skillet and quickly scramble eggs on med-high heat and then set aside for later.

    In a large skillet, heat 2-3 Tbsp oil on medium.

    Add raw, diced carrots (should be about pea size). Add chopped hot peppers, too–if desired. I like adding a little fresh red chili peppers for taste, but jalapenos would work just as well, or red pepper flakes, or even just a little sriracha later, if desired–or no heat at all–it’s up to your tastes; follow your heart, but spicy food is good for you, right?

    Sauté the carrot and peppers for a minute and then add the ginger, garlic, and chopped green onion bottoms (reserve the chopped tops for a flavorful garnish).

    Continue sautéing another minute and then add in the quinoa. Stir fry until heated through, this won’t take very long.

    Add sesame oil and peas. I like to use frozen peas (thawed), because they hold their texture better than canned peas. Stir until mixed. Add soy sauce to taste. Add fish sauce if desired. The sauces will provide plenty of salt, but if you want a little black pepper, go ahead and throw that in now.

    Mix up and then add the scrambled egg. Mix and fry for another minute and then remove from the heat.

    That’s it.

    This dish is ready pretty quick. Top the fried quinoa with chopped green onion, crushed peanuts, or both. Serve fried quinoa it’s own or with a veggie side (broccoli or bok choy or Thai eggplant are nice).

    Makai Paneer Zafrani — Corn and cheese with saffron sauce

    All purpose flour ½ ts

    Cumin seeds ½ ts

    Cardamom seeds ½ ts

    Garlic ½ ts

    Ginger ½ ts

    Green chilly 3 n

    Nut Meg powder ¼ ts

    Paneer 250 g

    Corn ½ cup

    Milk 1 cup

    Spring onions 2 spr

    Coriander chopped 1 b

    Saffron ½ pinch

    Onions chopped 2 n

    Oil 2tbsp

    Heat oil in a pan add cumin seeds, cardamom seeds, garlic, ginger, onions, sauté this and add all purpose flour, mix it and add milk, salt, green chilly, nut meg powder let this come to a boil then add corn (boiled), add paneer, chopped spring onions, chopped coriander, grated paneer, add saffron.

    Serve this with chapattis.

It’s easy to whip together, feeds a ton of people, and has all your major food groups represented: eggs, potatoes, sausage, veggies and bread. So, there’s no need for any additional sides nor the clean up that goes with it. Enjoy!

    Breakfast Casserole
    Makes 1 9″x12″ (23cm x 30cm) casserole

    ¼ cup (60 g) unsalted butter, softened
    8 eggs
    1 cup (240 mL) cream
    1 cup (60 g) sourdough baguette, cut into ½ inch (13 mm) cubes
    1 cup (150 g) baby new potatoes, cooked and quartered
    1 cup (230 g) breakfast sausage, cooked and crumbled
    ⅔ cup (60 g) mild cheddar cheese, grated
    1 red bell pepper, seeded and diced
    ½ yellow onion, diced
    3 green onions, thinly sliced
    2 tsp (20 mL) salt
    black pepper to taste

    Preheat oven to 375°F (190°C).

    Generously grease a 9×12 inch (23cm x 30cm) baking dish with the softened butter and place in the oven for 15 minutes.

    In a mixing bowl, whisk together the eggs and cream until completely combined. Whisk in the remaining ingredients and season with pepper.

    Remove the baking dish from the oven and carefully pour the egg mixture into the dish.

    Place the baking dish back into the oven and bake for 45 to 55 minutes or until golden brown and fully set in the center.
    Allow the casserole to cool for 5 minutes before serving.

    Beef Steak is a Easy Quick Filipino Recipe that you can enjoy for Breakfast, Lunch or Dinner.

    Ingredients
    1 lb Bottom Round Steak- Thinly Sliced and Tenderized
    1 Onion- Sliced thin and Red preferred
    5-7 Tbl Spns Lemon Juice
    1/4 Cup Water
    1/4 Cup Soy Sauce
    Black Pepper

    1. Sliced Meat thin and tenderize
    2. Put all ingredients except onions into a bowl and marinate for 2-3 hours
    3. Heat Pan up to Medium High Heat and oil your pan
    4. Cook boths sides of the meat, should only take 1-2 minutes each side
    5. Put onions into the pan and turn off heat, cover and let sit till onions are soft
    Optional- place onions into pan, leave heat on for about a minute while stirring and then turn off heat.
