This is not a chicken breast, This is the leg without bones. However, it
tastes better anyway (more juicy more flavor more tender)
ceekay i have never seen a video cooking teriyaki with butter,lol
no garlic in teriyaki and garlic is not a japanese favoured seasoning…
this is an american version of a japanese dish with french techniques. i am
not japanese but i can spo authentic from fake food. it’s simple in a
frying pan. marinate soy sauce (15 ml) mirin (15 ml), dark brown sugar (a
pinch) for a chicken breast. add 10ml of the liquid for every additional
breast. little dark brown sugar. when ready 5ml butter and sizzle it. keep
the marinate for the end when it is well browned add it and wait until it
goes GLOSSY. teriyaki it’s glossy. no garlic no ginger. serve with dry
fired vegetables and rice. round rice with a pinch of salt white sugar and
white vinegar boil them all together and there you have real japanese food.

you could always just use white wine. Sake is just wine made from rice

I thihk you don’t need to add sugar to this recipe. 90 ml of Mirin would
certainly replace sugar. By the way, the chicken piece in this picture is
actually not breast! It is OK, because Teriyaki as well as Yakitori usually
calls for chicken thigh, not breast. But please correct the recipe.
Don’t you put sugar in the teriyaki sauce?? Or does it just go sweet by
