these did not turn out one bit for me. When they came out of the oven, they
tasted ok. Even pretty good. When they cooled, no. and inside was a bit too
chewy? Anyone know how to reheat these?

Okay, so I just made these muffins…with several substitutes…namely, I
used regular Whole wheat flour, Cow’s milk, Zylitol [which is much
healthier than sugar], and Dates instead of blueberries. Because the dates
didn’t provide the moisture that the frozen berries would…I added about a
half cup of water to moisten the mixture. Also, I baked them at 400F. for
15 mins. in my new countertop convection oven…After they cooled, hubby &
I both tried one [with a wee bit of butter on]…& we Loved them!! I would
definitely make them again…but I think next time I’ll double the recipe.
I always like to cook/bake in quantity…& freeze some for later! 🙂 And
yes…I will add this recipe to my “Pin-ter-est recipes.” Thank you again!

You said the ground flax seed was your egg substitutes? Could I use a
different egg substitute like egg whites or apple sauce?
