    Laura my best man at our wedding married a woman from Naples. She came over
    after the war. Ayway I am sure I had this at her home. It was a pleasure to
    go there for dinner. Any way my buddy got close to 250 lbs and had to diet.
    Well I am 76 and my friends have all pasted on. You remind me of her so I
    try to use rescipes from your site . I am a widower . We were all from
    Chicago. The hard part is there are so many good memories. Thank you and I
    pray your husband did not grow like my friend. God Bless you

    When I make eggplant, I serve with crusty garlic bread and a green salad.
    It’s enough. Laura has a great recipe for cheesy garlic bread, but I omit
    the cheese because there is PLENTY of it in this dish already. And a nice
    red wine, nothing too light for this dish.
    For dessert I have latte and biscotti or something with lemon to complete
    the meal. When I bake and NOT fry, I don’t dip the eggplant in egg or
    flour. Just cut and layer and bake

    Wow. Seems as though everyone is giving Laura a lot of flack for the
    allegedly unauthentic recipe in this video. I have no intention of arguing
    about authenticity. I will point out however, I bet every last one of us
    grew up with at least one or more recipes we had as kids that we remember
    being the real deal and anything else wasn’t “authentic”. Could we perhaps
    give her the benefit of the doubt and understand things from her
    perspective?

    wanted to know if I can freeze it once I made it? It’s so good I made two

    Hey Laura! I wanted to let you know that I made this recipe last night and
    it turned out fabulous! My husband of 14 years said it was the best meal I
    had ever made which I loved to hear but pissed me off a little too 🙂 lol
    because I am a good cook and it was not my recipe all in all I actually
    very happy because two mouths were very pleased with the out come…thank
    you for all the great recipes and videos.

    Yeah never saw eggplant into flour then egg ? First thing is grow your own
    hybrid eggplant which have a thousand seeds,lightly salt on both sides of
    slices and let drain,dip in egg and lightly bread crumb,this is authentic
    by any standard let alone Italian M
