    Southern Fried Chick’n

    1 1/2 cups organic, unbleached, all-purpose flour
    1 tablespoon blackening spice
    1 tablespoon garlic powder
    1 tablespoon Old Bay Seasoning
    1 tablespoon onion powder
    2 tablespoons kosher salt
    2 cups cashew cream, recipe below
    3 tablespoons Tabasco sauce
    2 10-ounce packages frozen Gardein Chick’n Scallopini, defrosted
    1 package spring roll wrappers (rice paper)
    Safflower or Grapeseed oil, as needed

    1. In a medium bowl, mix together the flour, blackening spice, garlic powder, Old Bay Seasoning, onion powder, and salt until well incorporated.
    2. In a separate bowl, mix the cashew cream and the Tabasco sauce and set aside.
    3. Roll each Gardein Chick’n fillet into a ball and then shape it into a 1-inch thick, oval patty. Place the 8 patties on a plate and set aside.
    4. Put the “skin” on the Chick’n by selecting a dish or pan that is large enough for the rice paper to lie flat inside. Inspect each rice paper carefully and discard and sheets that have holes or cuts. Add about 1 cup of very warm water to the dish or pan and soak 1 sheet of rice paper for about 20 seconds, or until the paper has softened but has not become completely soft. Place the rice paper on a cutting board and rub it gently with your wet hands to flatten it and work in more water. Place a Gardein patty on the rice paper, slightly below the center. Pick up the edge closest to you and fold the rice paper up and over the patty, then fold the right and left sides toward the center. Working from the edge closest to you, gently roll up the patty burrito style. Repeat this process with the remaining patties.
    5. Lightly dust a baking sheet with a bit of the seasoned flour. Roll a patty in the flour, then in the cashew cream, and then dredge it again in the seasoned flour. Place it on the floured baking sheet. Repeat this process with the remaining patties.
    6. A cast-iron skillet performs best for frying Chick’n, but if you don’t have one, use a heavy-bottomed pan with sides that are at least 3 inches high. Pour enough oil into the pan to come halfway up the side of the Chick’n patty. Heat the oil over medium heat until it looks thin like water and shimmers.
    7. Using metal tongs, pan fry 4 patties at a time, for about 2 1/2 minutes per side. Do not turn the patties more than once. Transfer the fried patties to a baking sheet fitted with a wire rack or lined with paper towels. Repeat the frying process with the remaining patties.
    8. Serve hot and crisp with coleslaw and collard greens.

    Cashew Cream
    2 cups raw organic cashews
    2 1/2 cups water

    1. Soak the cashews in water overnight or bring the cashews and 4 cups of water to a simmer. Remove the pan from the heat and allow the cashews to soak 1 hour. Drain and rinse the cashews.
    2. Place the cashews into the jar of a blender and add 2 1/2 cups of water. Blend until completely smooth, stopping a few times to scrape down the sides of the jar with a silicone spatula. Strain the mixture to remove any particles that did not get pureed thoroughly; the cashew cream should be the consistency of heavy cream. It can be refrigerated for 1 week or frozen for 2 months.

    Coleslaw
    1 medium head green cabbage, shredded
    2 large fat carrots, peeled and grated
    1/2 bunch scallions, green parts only, thinly sliced
    1/2 cup vegan mayonnaise
    2 tablespoons Dijon mustard
    1 tablespoon agave nectar
    2 tablespoons pickle juice
    1 tablespoon garlic powder
    1 tablespoon onion powder
    Kosher salt and freshly ground black pepper

    1.In a large bowl toss together the cabbage, carrots, and scallions. Mix the remaining ingredients in a separate small bowl, then incorporate them into the cabbage mixture, cover and refrigerate.

    Taiwanese Savory Beef and Onion Pie (Shen Bin) 牛肉餡餅

    I’ve been trying to figure out how best to describe shen bin. All I can come up with is giant, flat fried dumplings. Sounds good to me. 🙂

    Dough Ingredients:

    3 ½ cups of all-purpose flour
    150 ml of boiling water
    175 ml of cold water

    Filling Ingredients:

    1 lb of ground beef
    1 cup of diced scallions
    1 cup of diced onions
    1 tbsp of grated ginger
    1 tbsp of ground pepper
    2 tsp of white pepper
    1 tbsp of soy sauce
    2 tbsp of sesame oil
    1 tbsp of Shaohsing wine
    2 tsp of salt

    Dipping Sauce Ingredients:

    Soy sauce
    Red vinegar
    Sesame oil

    Directions:

    1. In a mixing bowl, burn the flour with the boiling water. Mix with a utensil while it’s hot.

    2. Add the cold water, mix with your hands until the dough roughly comes together.

    3. Pour the dough out on a clean surface and knead until a smooth and clean ball of dough is formed. Cover with plastic wrap and set aside for 15 minutes while you prepare the filling.

    4. Combine all of the filling ingredients in a mixing bowl. Mix thoroughly to ensure all ingredients are incorporated throughout.

    5. The dough should be springy by now. Roll it into a log and portion the dough out into 8 pieces.

    6. Flatten a portion of dough with your hands and roll it out from the middle. The end circle should be as big as your open hand.

    7. Place two heaping spoonfuls of meat filling into the center of the circle of dough. Gather and pinch the sides together, remove any air so there won’t be any empty pockets. Give the top a twist and pinch of any excess dough.

    8. Turn the dough over so it’s seam side down. Gently pat it down. Repeat with the other portions of dough.

    9. Add about 1 cm of oil to your frying pan. Heat over medium heat.

    10. Place the shen bin, smooth side down into the warm oil. Pour about 2 tbsp of water into the frying pan, cover with a lid and fry/steam.

    11. When the smooth side is golden brown, flip the shen bin over to its seam side. Add in another 2 tbsp of water, cover and fry/steam.

    12. When the seam side is golden brown and you can hear the pies hiss, remove the lid and continue to fry until crispy.

    13. Serve with dipping sauce. I like to use a mixture of soy sauce, red vinegar and sesame oil.

    Notes:

    I’ve been trying to monitor my salt intake, so 1 tbsp of soy sauce may not be enough for most people. You can use as much as 2 tbsps.

    Try to add as much filling as possible and still be able to pinch together the shen bin.

    When you flip the shen bin in the frying pan, be careful to not puncture the pie and release the yummy meat juices.

    2 Cups (16oz) Water
    1 Medium Red Onion (Chopped)
    3 Cloves Garlic (Chopped) or 1 1/2 Teaspoons Minced Garlic
    1 Tablespoon Olive Oil
    14.5oz Can (411g) No Salt Added Diced Tomatoes
    15oz Can (425g) Tomato Sauce
    1/4 Teaspoon Crushed Red Pepper
    1/4 Teaspoon Lemon & Pepper
    1/2 Teaspoon Oregano
    1/2 Teaspoon Basil
    1/2 Teaspoon Parsley
    1 1/2 Pounds (24oz) Chicken Breast (Chopped)
    1 Cup (112g) Fat Free or Reduced Fat Mozzarella
    1/3 Cup (30g) Whole Wheat Bread Crumbs (Optional)
    1/2 Cup (50g) Parmesan & Romano Grated Cheese

    Add your quinoa and water to a medium size stove top pan. Bring the quinoa to a boil and then put your heat on low. Let it simmer until all of the water is absorbed. Remove from heat. Chop your onion and garlic. Take out a medium size saucepan, put your burner on medium heat, and add in 1 tablespoon of olive oil. Let the olive oil heat up. Add in our chopped onion and garlic. Once the onion and garlic start to brown, turn your burn to a low-medium heat, add in the diced tomatoes, tomato sauce, crushed red pepper, lemon & pepper, oregano, basil, parsley, quinoa, and chicken. Let simmer for 5:00. Take out a baking dish (that holds at least 3 quarts), coat it with non-stick cooking spray, and add in half of your mix. Top first layer with 1/2 serving of bread crumbs (15g), 1/4 cup (28g) of mozzarella, a little bit of parsley, and 1/4 cup (25g) of Parmesan & Romano grated cheese. Add in the rest of your mix. Top again with 1/2 serving of bread crumbs (15g), 1/4 cup (28g) of mozzarella, a little bit of parsley, and 1/4 cup (25g) of Parmesan & Romano grated cheese. Cover with tin foil and cook on 375 for 15:00. Remove tin foil and cook for another 15:00. Enjoy!

    Tip: If you want to lower the sodium in this recipe, when buying your ingredients make sure to buy the “lower or no sodium” versions of each!

    Ingredients
    Yield: 2-Half Size Aluminum Pan- 2 inches deep Approx. 7- 8 Servings/Pan
    • 3 Rolls of Ready-Made Pie Crusts
    • 9 Cups (#10 Can) Canned Sliced Peaches, drained with the juices reserved
    • 3 Cups Granulated Sugar
    • 1 Tablespoon Fresh Lemon Juice
    • ¾ Teaspoon Ground Cinnamon
    • 1/8 Teaspoon Nutmeg
    • 1 Stick Butter, melted
    • 1½ Teaspoons Vanilla Extract
    • 2 Cups Peach Juice
    • 3 Tablespoons Cornstarch
    • 1 Egg
    • 1 Tablespoon Water
    • 1 Tablespoon Raw Sugar
    • Sprinkle of Cinnamon

    Directions

    Preheat oven to 375 degrees

    Open one of the rolls of pie crusts, cut it into 1 inch squares. Spray a baking sheet with nonstick cooking spray then place the pieces of pie crust on the baking sheet. Place the baking sheet in the oven and cook for 5 to 8 minutes or just until lightly golden brown. Once cooked, set aside to cool.

    Place a large colander (strainer) over a large bowl then pour the canned peaches into the colander. Reserve the peach juice. In large stock pot over medium-high to high heat, add the drained peaches, sugar, lemon juice, cinnamon, nutmeg, melted butter, vanilla extract and 1½ cups of peach juice. Stir well until the sugar has dissolved.

    Add the cornstarch to the remaining ½ cup of peach juice and whisk vigorously until the cornstarch is dissolved. Add the mixture to the pot of peaches while stirring. Allow the peaches to come up to a boil and stir just to ensure that there are no lumps of cornstarch. The sauce will become slightly thickened.

    Turn off the heat. Divide the peaches and juice equally into each half-size aluminum pan. Place half of the cooked crust pieces in each pan. Using a spoon, slightly stir the pieces of crust into the peach filling.

    Unroll and place a pie crust dough on top of each pan of peach filling. Cut the excess pie crust and use those pieces to cover any parts of the cobbler that are exposed.

    In a small bowl, combine the egg and the water and slightly beat. Brush the top of the cobbler with the egg wash; sprinkle the raw sugar and some additional cinnamon to taste.

    Bake at 375 degrees for 40 to 50 minutes or until the crust is golden brown and crisp. Once cooked, allow the cobbler to set for about 10 minutes before serving.

    Asian cuisine styles can be broken down into several tiny regional styles that have rooted the peoples and cultures of those regions. The major types can be roughly defined as East Asian with its origins in Imperial China and now encompassing modern Japan and the Korean peninsula; Southeast Asian which encompasses Cambodia, Laos, Thailand, Viet Nam, Brunei, Indonesia, Malaysia, Singapore, and the Philippines; South Asian states that are made up of India, Burma, Sri Lanka, Bangladesh and Pakistan as well as several other countries in this region of the continent; Central Asian and Middle Eastern.
    “Asian cuisine” most often refers to East Asian (Chinese, Japanese, and Korean), Southeast Asian cuisine and South Asian cuisine. In much of Asia, the term does not include the country’s native cuisines. For example, in Hong Kong and mainland China, Asian cuisine is a general umbrella term for Japanese cuisine, Korean cuisine, Filipino cuisine, Thai cuisine, Vietnamese cuisine, Malaysian and Singaporean cuisine and Indonesian cuisine; but Chinese cuisine and Indian cuisine are excluded.The term Asian cuisine might also be used to address the eating establishments that offer wide array of Asian dishes without rigid cuisine boundaries; such as selling satay, gyoza or lumpia for appetizer, som tam, rojak or gado-gado for salad, offering chicken teriyaki, nasi goreng or beef rendang as main course, tom yam and laksa as soup, and cendol or ogura ice for dessert. In modern fusion cuisine, the term Asian cuisine might refer to the culinary exploration of cross-cultural Asian cuisine traditions. For example combining the culinary elements of Vietnam and Japanese, Thai and Malay, or Indonesian and Chinese.
    Japanese cuisine is the food—ingredients, preparation and way of eating—of Japan. The traditional food of Japan is based on rice with miso soup and other dishes, each in its own utensil, with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled. Fish may be served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter as tempura.
    Apart from rice, staples include noodles, such as soba and udon. Japan has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga. Foreign food, in particular Chinese food in the form of noodles in soup called ramen and fried dumplings, gyoza, and western food such as curry and hamburger steaks are commonly found in Japan. Historically, the Japanese shunned meat, but with the modernization of Japan in the 1860s, meat-based dishes such as tonkatsu became common.
    Chinese cuisine includes styles originating from the diverse regions of China, plus styles of Chinese people in other parts of the world. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese peoples due both to imperial expansion and from the trade with nearby regions in pre-modern times as well as from Europe and the New World in the modern period.
    Styles and tastes also varied by class, region, and ethnic background. This led to an unparallelled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture.
    Thai cuisine is the national cuisine of Thailand. Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter.

    1 tablespoon vegetable oil

    2 slices bacon

    1lb stewing beef

    2 tablespoons flour

    1 medium onion, finely chopped

    2 celery ribs, chopped

    1 leek tops (the green part)

    14oz can cannellini beans

    14oz can pinto beans

    2 teaspoons dry thyme leaves

    1/2 cup Worcestershire sauce

    1/4 teaspoon cayenne pepper

    1-1.5 L water

    Salt and pepper to taste

    On medium high heat in frying pan crisp the bacon with oil for 2 minutes, then add onion and continue to cook until onion gets caramelized. Transfer to slow cooker pot.

    Then flour the meat and caramelize it on one side in the same frying pan.

    Add the meat to slow cooker pot and add beans with juices, chopped celery ribs, thyme leaves, Worcestershire sauce, cayenne pepper, salt, pepper and cover with water, add leek tops on top.

    Pop the lid on and plug on high setting for 8 hours.

    Throw away leek tops when the soup is done.

    Serve with hearty rye bread and enjoy!
