    The authentic way to make enchiladas in my parents hometown in Mexico is to
    NOT USE AN OVEN. It is a very very messy process if you do not have that
    much practice but basically you use tiny tortillas dip them in your sauce
    then you can put either potatoes, beef, chicken, refried beans, etc In your
    tortilla and then you basically fry them with the oil of your choice. If
    you want them crunchy or not is totally up I you. Then when you get them to
    your preference you serve them with a homemade red salsa, cabbage, and
    queso fresco. It is amazing!! Whenever I see enchiladas that go into the
    oven I just call them the Americanized version which I still find tasty. :)

    I’ve made chicken enchiladas with Philadelphia cream cheese and jalapenos.
    I just mixed both ingredients in a pan with the chicken and onions, and my
    family loved it. I learned not to use a lot of sauce because it makes the
    tortilla soggy. Using a store brand roasted chicken will save a lot of
    time.

    Thanks for the recipe I will try this one out. I don’t know what it is but
    every time I make enchiladas they come out soggy no matter how many times I
    make them it never fails so maybe this will be different. :-)

    People from mex, stop complaining, that´s what you get when you go to a
    mexican restaurant, can´t blame her if that´s not the correct way of
    preparing them, do you really expect her to go to every part of the world
    to see how dishes are really made? people adapt dishes depending where they
    are, i mean, let´s be proud of our mexican food, and that everyone loves it
    in every part of the world, authentic or not… besides… it´s like us, we
    put jalapeño, chipotle, tabasco sauce, jugo maggie and lots of different
    things on pizza, we don´t use real mozzarella because it´s so hard to
    get… AND STILL CALL IT PIZZA! , you know what i mean?….

    I’ve seen Mexican youtube cooking channel…a lady frying “her”
    enchiladas. So laura bakes hers. And who is right? So found this
    question on google, the site, food and drink,

    Question: What is the difference between an enchilada, chimichanga and a
    burrito??

    Best Answer: enchilada is baked, chimichanga deep fried, burrito its just
    wrapped, chimichangas usually come drenched with red sauce! enchiladas can
    either be red or green depends what sauce you want, and burrito is more of
    a “plain” type thing filled with whatever, usually enchiladas have shredded
    beef, shredded pork or shredded chicken with cheese and sauce, chimichangas
    has beans, beef, chicken or pork. IM SOO HUNGRY NOW I LOVEEEEEEEE MEXICAN

    So Laura was correct in calling these enchiladas. I think even Mexicans
    might confuse them where I saw the youtuber.

    Looks yummy! I rolled enchiladas for years now I just make what I call
    enchilada casserole and layer it like a lasagna, tastes the same and easier
    to serve!

    these looked amazing and im extremely picky
