2 slices bacon

1lb stewing beef

2 tablespoons flour

1 medium onion, finely chopped

2 celery ribs, chopped

1 leek tops (the green part)

On medium high heat in frying pan crisp the bacon with oil for 2 minutes, then add onion and continue to cook until onion gets caramelized. Transfer to slow cooker pot.

Then flour the meat and caramelize it on one side in the same frying pan.

Add the meat to slow cooker pot and add beans with juices, chopped celery ribs, thyme leaves, Worcestershire sauce, cayenne pepper, salt, pepper and cover with water, add leek tops on top.

Pop the lid on and plug on high setting for 8 hours.

You cant use red kidney beans in a slow cooker unless you have pre-cooked
them – they become toxic in a slow cooker and you can make yourself
seriously ill or even kill yourself.

I like plenty of broth so it’s isn’t like goulash. If there is not
enough broth then after the being in the fridge there is no more broth
