    Homemade Pizza Pops / Hot Pockets / Calzones Recipe

    Ingredients for Pizza Dough
    2 tsp active dry yeast (optional)
    1 cup warm water
    1 Tbsp sugar
    2 Tbsp vegetable oil
    1 tsp salt (garlic salt is preferred).
    1 egg to brush on before popping in oven.
    2 to 3 cups flour

    Ingredients for Filling:
    Pizza / Spaghetti Sauce
    Mozzarella Cheese or cottage cheese
    Bacon / Ham / Ground Beef
    or whatever you like! As much as you like.

    PIZZA DOUGH DIRECTIONS:
    Mix together your sugar, oil, salt and 1 cup of flour.
    Turn dough onto lightly floured surface; knead until smooth and elastic.

    Filling:
    Mix all your ingredients together. If you are using vegetables like peppers or onions, you should fry them or cook them first. All meats should also be cooked before mixing with other foods.

    Finishing Hot Pocket/Pizza Pop/Calzone:
    Roll the dough thinly on a floured surface. Make it as thin as possible. Cut as desired. You can make circles, half circles or squares. In this video, I made half circles by cutting a large round dough in half, spreading filling in the middle of one piece, placing the other piece of dough on top, and cutting pieces out with a glass. Pinch edges to seal securely. Place the pizza sandwiches on greased / floured cookie sheet. Pre-heat oven to about 300 degrees, depending on how hot your oven gets. The oven in the video is quite small, so 300 degrees seems hotter. If you have a larger oven, try 375 degrees. Brush the pizza pops / calzones with egg. You can cover with foil if desired (I don’t like them getting too golden). Leaving uncovered is also fine. Pop in the oven. Bake until golden brown, approx 25-35 minutes. Check them often.

    *Reasons to make your own:
    – Cheaper than buying them packaged at a store!
    – You can make whatever quantity you like!
    – Great snack or lunch meal!
    – If you chose your ingredients carefully, you can chose things with less or no preservatives/chemicals (use organic ingredients, whole wheat flour, etc.).
    – Kids will have fun making these! Great weekend family activity!

    Let’s start with making the crepes: here are two types of flour — this recipe uses only certified organic ingredients, meaning they are grown without chemical fertilizers: you should always prefer organic food, when available — sift both the flours into a bowl, then add the cold water. I’m using whole grain spelt flour because it’s a good source of vitamins, as well as fibres and fatty acids. Spelt flour is a soft flour, so it needs to be mixed with a strong flour; add the water and a pinch of salt, stir well to dissolve any lumps, cover with cling film and place in the fridge to rest for at least half an hour.
    I’ll fill my spelt crepes with an artichoke caponata: clean and cut the artichokes in half, then cut into thin slices. Wear disposable gloves when handling artichokes to protect your hands from staining! Once cleaned, toss the artichokes in a bowl of acidulated water, that is water with lemon juice, that prevents them from turning brown. Artichokes have many nutritional benefits: they are high in fibres and mineral salts and low in calories, besides they contain cynarin, a bitter compound with purifying, draining and diuretic properties. Here I chopped the onion and the mint and now I’ll soak the raisins in lukewarm water: sultana raisins are important because they add a sweet note to the dish and curb your hunger at the same time, besides they contain soluble fibres that help lower the blood cholesterol level.
    Move on to the celery: separate the stalks from the base, cut off the end, and peel the strings from the stalks with a paring knife, in this way. Once cleaned, cut the celery into sticks. In a pan, put a little extra virgin olive oil, a clove of garlic and the chopped onion… the artichokes and the celery; meanwhile, dissolve a teaspoon of rice malt in a small amount of cider vinegar. Add the raisins, that have been drained and squeezed, the capers, a few green pitted olives, that have been cut into rings, stir well, cover with a lid and cook until the vegetables have softened. Now move on to the crepes. Place a crepe pan over the heat, lightly grease with olive oil and ladle the batter into the pan, then spread it around evenly. Sprinkle with sesame seeds and flip it over. Repeat for the next crepes, sesame seeds. The vegetables are cooked, so we can add the last ingredients: pine nuts and chopped mint. Turn off the heat, taste the vegetables for salt and adjust to your taste, if needed. Meanwhile, I’ll finish cooking all the crepes.
    Now we can assemble our crepes: place the side sprinkled with sesame seeds down, so it will be on the outside after folding, fill the crepe and fold it over. And while I’m assembling the crepes, let’s see together the ingredients needed for this recipe.

    Ingredients
    For 4 crepes
    ¾ cup (90 g) of whole grain spelt flour
    just under ½ cup (55 g) of all-purpose flour
    1 cup (250 ml) of water
    1 pinch of salt
    a handful of white sesame seeds
    a little extra virgin olive oil for greasing the pan

    For the artichoke caponata
    4 artichokes
    4 stalks of white celery
    1 white onion
    1 clove of garlic
    ⅓ cup (50 g) of raisins
    1 tsp of rice malt
    ⅕ cup (50 ml) of cider vinegar
    1 ¾ tbsp (15 g) of capers, rinsed and drained
    a few sprigs of fresh mint
    ¼ cup (30 g) of pine nuts
    3,5 oz (100 g) of green pitted olives
    1 pinch of salt
    a little extra virgin olive oil

    For the acidulated water
    2 cups (500 ml) of water
    half lemon

    Basic Sugar Cookie Recipe for Cut out Cookies

    3 cups (450grams) all-purpose flour
    1 teaspoon baking powder
    1/4 tsp kosher salt
    2 sticks (1cup, 226grams)butter, unsalted, softened to room temperature
    1 cup (200grams)granulated sugar
    1 large egg, room temperature
    1tbl vanilla extract, vanilla bean past or almond extract
    Flavor options: I also like to use lemon zest with combination of vanilla extract or lemon extract, or orange zest.
    Sift together flour, baking powder, add salt, set aside.
    In a small dish whisk together egg and vanilla extract, set aside.
    In a mixing bowl cream together room temperature butter and sugar, about 5 minutes, scrape the bowl twice. Butter creamed with sugar should be light and fluffy.
    Gradually add vanilla egg mixture, beating anywhere from 30 seconds to minute until well mixed in.
    Now gradually in 3 additions add flour. Lower the speed of your mixer to low. Scrape the bowl well after the last addition and beat just until flour is combined.
    Scrape the cookie dough into a large bowl, and using your hands knead the cookie dough for about 30 to 60 seconds, until dough comes together.
    Wrap the dough in a plastic wrap and refrigerate overnight(8hours) or minimum 4hours.
    Preheat oven to 375F(190C)
    Divide cookie dough in half. Roll one half of the cookie dough into about 1/4 inch thick, between 2 pieces of parchment paper using rolling guides on each side of the dough.(2 painter’s sticks glued together on each side, or 2 pieces of 1/4inch molding)
    Cut out as many cookies as you can. Place the cookies on a light colored baking sheet lined with parchment paper. Chill the cut outs in the fridge for about 15 minutes, or in the freezer 8 minutes.
    Bake for 9minutes, depending on the oven, turn the sheet once half way through the baking.
    Let the cookies cool on the baking sheet for 5-7 minutes, transfer to cooling rack.
    Store in the airtight container for up to 2 weeks or freeze undecorated cookies between pieces of wax paper in a large freeze safe container, for up to 2 months.
    Decorate cookies as desired with royal icing or other medium that you use.

    Recipe for Chicken Tostados

    Ingredients

    2 boneless skinless chicken breasts
    2 boneless skinless chicken thighs
    1 8 oz bottle beer
    1 tbsp brown sugar
    1 Tbsp fresh lime juice
    3 large cloves fresh garlic, chopped
    1 tbsp diced jalapeno pepper
    1 cup fresh chopped cilantro
    1 Tbsp chili powder
    1 tsp onion powder
    1 tsp paprika
    1 tsp cumin
    1 tsp salt
    1/2 tsp freshly ground black pepper
    1 tin niblets corn, drained
    1 tin re-fried beans
    Your favorite toppings… shredded cheese, sour cream, salsa, lettuce, tomatoes, green onion, avocado etc

    Directions

    Begin by placing the chicken in a crockpot that’s been treated with cooking spray or olive oil.
    In a medium bowl, combine the beer, brown sugar, spices, and herbs and pour over the chicken.
    Cook on the low setting for 6 – 8 hours.
    When the chicken can be easily shredded with a fork, shred in the broth and add the niblets corn.
    Remove to a bowl using a slotted spoon or colander, discard the extra broth or use as a soup base.
    Brush 8 flour or corn tortilla shells on both sides with vegetable oil, place on baking sheets, and bake in a 400 degree oven for 3-5 minutes on one side until crispy, and 2-3 minutes on the other side.
    To build the tostadas spread with a layer of re-fried beans and then top with generous amounts of the shredded chicken followed by shredded cheese, salsa, sour cream, lettuce, tomatoes, more cilantro, avocado – really the skies the limit – whatever you like – and then there’s nothing to do but enjoy.

    Move over, kale and spinach! Make way for Swiss chard, a deep green leafy vegetable that cooks up like a dream for a great-tasting side dish. The secret is in letting moisture from rinsing and a covered skillet gently soften the leaves within just a few minutes.
    You will need olive oil, sliced red onion, salt and pepper for this dish.

    Swiss chard: How to prepare
    Swiss chard has large leaves with stems that come in several beautiful colors—red, yellow and white. The stem is on the tough side and should be trimmed off. The center rib is used, though; fold the leaf in half and cut close to the rib, then dice the rib finely and put it in a small bowl. Cut the leaves in big pieces and rinse them in a salad spinner.

    Swiss chard: Side dish recipe
    Heat a skillet and add a drizzle of olive oil. Add the chopped stem and red onions, sautéing with a heatproof rubber spatula or wooden spoon. Add the leaves, then cover and cook for a few minutes until just wilted.

    Season with a sprinkle of salt and a few dashes of pepper. It’s ready in mere minutes!

Being “skinny” will not answer all of your problems. No matter your size, shape, age, gender or race, we need to focus on positivity in ourselves, because we all battle our inner demons. I am on the journey of learning to love myself and this body I have been given and I urge you all to do the same 🙂

    ***Chai Spiced Quinoa ***

    ___Ingredients___
    2 cups almond milk, more for serving (I used Unsweetened Vanilla)
    1 cup dry organic quinoa
    1/2 Chopped apple
    1/2 tsp ground cinnamon
    1/4 tsp ground ginger
    1 pinch cloves
    1 pinch cardamom
    Stevia, or other sweetener, to taste

    ___Directions___
    In a medium saucepan, bring almond milk, cinnamon, ginger, cloves, cardamom to a boil. Stir in quinoa and reduce heat to a low. Cover with lid and allow to simmer 15 – 20 minutes until almond milk has been absorbed and quinoa is tender.

    Top with chopped apple, cinnamon & Stevia.
    Serve warm topped with more almond milk.

    ***Acai Bowl***

    ___Ingredients___
    2 Packs of Pureed Pure Acai (I got mine at Whole Foods)
    1 Cup of Almond Milk (Use any milk you like!)
    Assorted Fruits & toppings

    ___Directions___
    Blend the acai packets & almond milk together until they form a smoothie like consistency. Pour into a bowl & top with whatever you like! Granola, coconut, fruit, chia seeds, caco nibs & nuts are great!

    ***Scramble Stuffed Sweet Potato***

    ___Ingredients___
    1 Large Sweet Potato
    Cooking oil of your choice (I used coconut)
    Chopped veggies (the amount depends on how much you can fit into your potato)
    -I used mushrooms, onions, chives, tomatoes, green bell peppers, & spring greens, but feel free to use whatever you have on hand!
    Egg whites (Feel free to use regular eggs, or if you’re Vegan/Vegetarian sub for tofu!)

    ___Directions___
    (I make a huge batch of baked sweet potatoes every Sunday night for the week)

    Preheat oven to 375 & place washed sweet potatoes on a tinfoil lined baking sheet. Bake for 30 minutes (for large potatoes) flip over, and bake for an additional 30 minutes, or until they are super tender. Serve warm! *If you’re using pre-made sweet potatoes, place it on a plate and microwave for about 2-3 minutes depending on size!

    Sauté your veggies on a medium heat with whatever oil you like. Deglaze your pan with some veggie stock, this will get all the yummy goodness that’s stuck on the pan. Finally, add in your greens & cover on low until they’ve wilted! Add in your egg whites and scramble until they’re fluffy and cooked all the way through! Slice sweet potato in half & fill with your hot scramble! Top with halved sugarplum tomatoes, chives some pepper to taste!

    A few things about my diet: When I was 17 I got a protracted case of mono which caused me to be violently ill after every thing I ate or drank. After almost a year of not being able to keep any food down, I had lost about 30 pounds and despite getting better from mono, my gut was permanently damaged. As shown by an endoscopy my stomach lining & esophagus were torn to shreds and I was diagnosed with non ulcer dyspepsia. From there my doctor, my nutritionist and I came to realize that dairy, grains, and foods with high fat content were causing my digestive issues and pain. I have been dairy free since being diagnosed with an allergy over 3 years ago, and I’ve been grain free since last January. I listen to my body and stay away from foods that upset my stomach and digestion, hoping that in time I will be able to fully heal my gut and reintroduce both dairy and grains back into my diet. If you are thinking of undergoing a lifestyle change regarding your diet, advice your doctor so you can come up with a plan together.

    Ingredients:

    Filling:
    8 ounces cream cheese
    8 ounces fresh crab meat
    1/2 teaspoon Worcestershire sauce
    1/2 teaspoon soy sauce
    1/4 teaspoon white pepper
    1 large clove garlic, finely minced
    2 teaspoons ginger, finely minced

    1 package wonton wrappers
    1 small bowl filled with water for wetting wontons
    Oil for deep-frying

    Directions:
    1. Mix together all ingredients for filling except crab meat.
    2. Gently fold in crab meat.
    3. Place a heaping teaspoon of filling into a wonton wrapper and fold into a diamond shape.

    HOMEMADE BREADCRUMBS

    Ingredients
    Six slices of bread of your choice

    Procedure
    1. Preheat oven to 300ºF
    2. Slice bread into quarters and bake for about 10 minutes
    3. Take out bread and flip each piece
    4. Return to the oven for another 10 minutes
    5. Remove from the oven and place in a food processor
    6. Blend for a shorter time for chunky bread crumbs, and longer for finer crumbs!
    7. Enjoy!

    Greetings! When I asked if you wanted to see the strawberry pie filling/topping recipe, the answer was a resounding yes! So today I am sharing with you a very simple and delicious recipe for strawberry pie filling that you can use to put in a pie shell for a fresh strawberry pie, top your ice cream, angel food cake, pound cake or yes, even your funnel cake!

    You are going to love this and it goes together super fast. Make it the day before if you want to put it in a pie for best results. This brings together the fresh taste of the strawberry and the sweet deliciousness of the glaze. You can also use this glaze to make that famous pie from Marie Callendars or Bob’s Big Boy. Just use whole strawberries, allow the glaze to cool completely and glaze away!

    This pie filling is not suitable for canning due to the addition of the corn starch. If you wish to can strawberry pie filling, you will need to research a recipe for it using clear jel and the proper procedure for doing that.
