    Easy Chicken Cordon Bleu Recipe

    Ingredients you will need:
    2 large chicken breasts, trimmed
    8 oz. wheat crackers, crushed
    8 oz. Panko
    8 oz. Swiss cheese, sliced
    1 package Canadian bacon
    1/4 cup sugar
    3 – 4 tablespoons seasoning
    3 eggs with 2 tablespoons water

    Chicken Cordon Bleu Video Transcript

    Hi, I’m Chef Ted coming to you from the Rada Cutlery kitchen. Today I’m going to show you a real easy version of Chicken Cordon Bleu. I’ve got a couple pretty decent sized chicken breasts. These are really, really nice chicken breasts. There’s not much of a fat tip on them. I’m using the Rada Outdoors Fillet Knife, actually. It’s good for making sure you get the little tendons and attaching tissue cut.

    I start on the thicker side and cut along so that we leave plenty of room for stuffing. I’m going to use the Rada Cheese Knife. I’m going to cut them kind of thick. We’ve got some Canadian bacon and I’m going to reserve a couple pieces of that as well. Sometimes it works, sometimes it doesn’t. These are really nice sized chicken breasts, so yes, it worked.

    Now I’m going to make an egg wash with a couple tablespoons of water and the Rada Handi-stir. Here, what I have is a little bit of wheat cracker with a little bit of Panko bread crumbs mixed into it. I’m going to use some sugar, and for seasoning a little bit of season salt. You use garlic, onion powder, pepper, whatever you prefer. The seasoning that I use has all of it mixed together already. I season it fairly heavy. I’m going to take the chicken breast that’s stuffed and I’m going to carefully roll it so I don’t lose any of my stuff out of it. Then from there we give it a nice coat, take it over into the seasoned bread crumbs and wheat crackers. This is the easy way of making this. This would probably get me kicked out of culinary school!

    Then I’m going to put them in the oven at 350-400 degrees, however your oven works best, and cook them until the internal temp is 165 degrees. There it is. A real quick and easy chicken cordon bleu.

    A very easy and delicious Cracked Chocolate Cookies Recipe (Crack Cookies). You are going to love their taste but best thing about them is they look so appealing! Make sure you add the chocolate to the melted butter when it is still very hot, for chocolate to melt. Also, be sure you kept the dough in the fridge at least for an hour, to make it easier to form balls. If you wish, you can roll the dough into normal sugar before you roll in to powder sugar, than the cookies would be sweeter.
    Crack Cookies Preparation
    Start by melting your butter Melt the dark chocolate in butter when it is still hot Break two eggs into a large bowl and add in sugar Beat until foamy Pour in the dark chocolate-butter mix when cools down Continue beating until the entire texture is smooth Sift in dry ingredients (cocoa, baking powder, vanilla powder and flour) Mix gently to combine Cover and refrigerate for about 1 hour or until firm Now you can form the balls Roll the balls in powder sugar to coat And place them on baking sheet placing about 1″ apart. Bake for 15 minutes on 180 C (360 F) pre-heated oven When they bake, they will crack and look yummy like this!
    Here is the list of Chocolate Cookies ingredients
    100 g (3.5 oz) unsalted butter
    80 g (3 oz) dark chocolate
    2 eggs
    ½ cup of sugar
    2 tbs cocoa
    1 tbs baking powder
    1 tbs vanilla powder
    ½ cup powdered sugar
    1 cup flour + 1 tbs flour

    12 oz linguine
    12 cherry or grape tomatoes halved
    1 onion (about 2 cups) thinly sliced
    4 cloves garlic thinly sliced
    1/2 tsp (or more depending on taste) red pepper flakes
    2 sprigs basil (plus more for garnish)
    2 tablespoons olive oil
    1 tsp salt
    freshly ground pepper to taste
    4 1/2 cups water
    Freshly grate parmesan cheese for serving

    You will need a large deep skillet or pot that is large enough so that the linguine noodles will lie flat on the bottom.
    Place the linguine, tomatoes,onion, garlic, red pepper flakes, basil, olive oil, salt and pepper in the bottom of the pan.
    Pour the water over all.
    Heat to boiling and continue to boil, stirring and turning the pasta frequently with a pair of tongs. Cook until pasta is al dente (about 9 minutes) this should coincide with most of the water being absorbed/evaporated as well. Mine took a lot longer than 9 minutes, but I didn’t exactly cook it at a hard boil, mostly I simmered it.
    Season with freshly ground pepper, chopped fresh basil and freshly grated parmesan. Drizzle with additional EVOO if desired.

    Rice

    1 Tablespoon of Olive oil
    ¼ of a Red onion
    4 Cloves of garlic
    1 Sprig of Tarragon
    1 Cup of wild rice
    2 ¾ Cups of coconut milk (light, fat-free)
    Kosher salt & cracked black pepper (to taste)

    10 Cherry tomatoes
    ¼ of a Red onion
    ½ of a Red beets
    ½ Lemon (rolled, juiced)
    ½ Tablespoon of Thai red curry paste
    ¼ Cup of coconut milk (light, fat-free)
    Kosher salt & cracked black pepper (to taste)

    Fish

    8 oz. of cod
    1 Tablespoon of Thai red curry paste
    ½ Tablespoon of olive oil
    Kosher salt & cracked black pepper (to taste)

    Salad

    1 Cup of purple endive (or radicchio)
    2 Stalks of green onion
    6 Cherry tomatoes
    ½ Cup of pea sprouts
    ½ Cup of onion sprouts
    1 Tablespoon of olive oil
    Kosher salt & cracked black pepper (to taste)

    Lemon Garlic Chicken & Potatoes
    adapted from Fix-It And Forget-It Cookbook*

    1 teaspoon oregano
    1/2 teaspoon seasoned salt
    1/4 teaspoon fresh ground pepper
    4 boneless skinless chicken breasts (I used 3, but they were HUGE)
    2/3 cup chicken broth
    4 tablespoons fresh lemon juice (about 2 lemons)
    4 garlic cloves, minced
    4 small potatoes, quartered

    Place quartered potatoes in bottom of Crock-Pot*. Top potatoes with chicken breasts. Rub oregano, seasoned salt, pepper, and garlic into chicken. Pour broth and lemon juice over chicken and potatoes. Cook on low 6 hours or on high 3 hours.

    Let me tell you — I did not follow the recipe — It calls for cream cheese. So, as usual made up my own — Chicken Pesto Alfredo Lasagna with mushrooms and shallots recipe. I used Left over Pesto Chicken, Pesto, Ricotta spinach and mushrooms! Yum — I can smell it cooking right now!

    Pesto Chicken Alfredo Lasagna Rolls
    Recipe inspired by Angela Zornes

    Ingredients
    • One Chicken Breast — Chopped Finely — I used a leftover breast that was roasted with pesto
    • 1 cup shredded Mozzarella or Italian blend cheese, plus more for topping
    • 2 cups fresh spinach (or One Package)
    • 1 package (8oz) white mushrooms, sliced
    • 1 cup ricotta (whole milk)
    • 1 egg
    • 1 tsp. salt
    • 1 tsp. black pepper
    • 2 tbs. fresh chopped Italian parsley (I didn’t have parsley)
    • 1 shallot
    • 2 cloves minced garlic
    • 8-10 lasagna noodles, cooked as directed and cooled slightly
    • 2 cups Alfredo Sauce, homemade or jarred
    • 1 cup of Pesto, homemade or jarred

    Directions
    • Preheat oven to 350 degrees.
    • In a skillet — cook your mushrooms until golden brown and sliced shallot, garlic, spinach, and chicken.
    • In a mixing bowl, mix egg, ricotta, cheese, pesto, salt, pepper, parsley & garlic until combined. Then add your chicken mushroom mixture together, mix until well combined
    • Spread a ladle or two of Alfredo sauce in the bottom of a 9×13 baking dish.
    • Lay out one lasagna noodle on cutting board, spread about 1/4 cup of the mixture along the noodle and roll up from one end to the other. Lay the roll standing up — so it looks like a flower. Nest them together keeping the seams closed
    • Repeat with remaining noodles and filling, nesting each in the sauce.
    • Top with one cup of Alfredo sauce and then top that with mozzarella or Italian blend cheese.
    • Bake in oven for 30 minutes or until heated through and cheese is golden on top.

    Bean and Capsicum Salad

    Rajma and chick peas tossed with roasted capsicum and indian spices to perfection. Generously loaded with protein, fibre and other important nutrients like calcium, iron, zinc and vitamin c, this salad is an all-in-one treat for healthy skin as well as strong bones, hair and teeth.

    Preparation Time: 20 minutes
    Cooking Time: 7 minutes
    Serves 6

    Ingredients

    1 1/2 cups soaked and boiled rajma (kidney beans)
    1 1/2 cups soaked and boiled kabuli chana (white chick peas)
    1 red capsicum
    1/2 tsp oil for brushing
    1/2 cup finely chopped onions
    1/4 cup finely chopped coriander (dhania)
    1 1/2 tbsp lemon juice
    2 tsp finely chopped green chillies
    1/2 tsp chilli powder
    salt to taste

    Method
    1. Pierce a fork through the capsicum, brush oil evenly over it and roast on a slow flame till it turns black in colour from all the sides.
    2. Immerse the capsicum in cold water, remove the burnt skin, stem and seeds and thinly slice it.
    3. Combine all the ingredients including the capsicum in a deep bowl and toss well.
    4. Serve chilled.
