Pan Roasted Cod with Wild Rice

Rice

1 Tablespoon of Olive oil
¼ of a Red onion
4 Cloves of garlic
1 Sprig of Tarragon
1 Cup of wild rice
2 ¾ Cups of coconut milk (light, fat-free)
Kosher salt & cracked black pepper (to taste)

10 Cherry tomatoes
¼ of a Red onion
½ of a Red beets
½ Lemon (rolled, juiced)
½ Tablespoon of Thai red curry paste
¼ Cup of coconut milk (light, fat-free)
Kosher salt & cracked black pepper (to taste)

Fish

8 oz. of cod
1 Tablespoon of Thai red curry paste
½ Tablespoon of olive oil
Kosher salt & cracked black pepper (to taste)

Salad

1 Cup of purple endive (or radicchio)
2 Stalks of green onion
6 Cherry tomatoes
½ Cup of pea sprouts
½ Cup of onion sprouts
1 Tablespoon of olive oil
Kosher salt & cracked black pepper (to taste)
