    Easy Chicken Piccata – Gluten Free

    4 chicken breasts
    seasoning
    all-purpose gluten-free flour
    2 tablespoons olive oil
    1 tablespoon capers
    1/2 cup white wine
    1/4 cup fresh lemon juice
    1/4 cup water
    3 tablespoons cold unsalted butter
    2 tablespoons fresh parsley

    DIRECTIONS:
    1. Place chicken breasts between 2 layers of plastic wrap and pound to about 1/2-inch thick.
    2. Season both sides of chicken breasts with cayenne, salt, and black pepper; dredge lightly in flour and shake off any excess.
    3. Heat olive oil in a skillet over medium-high heat. Place chicken in the pan, reduce heat to medium, and cook until browned and cooked through, about 5 minutes per side; remove to a plate.
    4. Cook capers in reserved oil, smashing them lightly to release brine, until warmed though, about 30 seconds.
    5. Pour white wine into skillet. Scrape any browned bits from the bottom of the pan with a wooden spoon. Cook until reduced by half, about 2 minutes.
    6. Stir lemon juice, water, and butter into the reduced wine mixture; cook and stir continuously to form a thick sauce, about 2 minutes. Reduce heat to low and stir parsley through the sauce.
    7. Return chicken breasts to the pan cook until heated through, 1 to 2 minutes. Serve with sauce spooned over the top.

    RECIPE: Cold Teff Noodle with Rare Seared Salmon

    INGREDIENTS:
    1 package teff ramen noodles (or any variation of fresh ramen noodles)
    1 tablespoon chopped dill
    2 teaspoons mirin
    1 tablespoon soy sauce
    1 teaspoon wasabi paste
    3 teaspoons blonde miso
    5 tablespoons olive oil
    1/2 teaspoon berbere (or paprika)
    6 arugula leaves, ripped
    2 inches cucumber, thinly sliced
    2 inches of daikon, thinly sliced
    1/2 apple, peeled and finely diced
    4 mint leaves, ripped
    2 (4-ounce) West Coast salmon filets
    1 tablespoon butter

    INSTRUCTIONS:
    1. Bring a large pot of water to a boil, add ramen noodles and cook for 45 seconds. Drain, transfer to large bowl and set aside.

    2. In a medium bowl, whisk together 1/2 tablespoon dill, mirin, soy sauce, 1/2 teaspoon wasabi, 1 teaspoon white miso, 2 tablespoons olive oil and 1/4 teaspoon berbere (or paprika).

    3. Add the spice mixture, ripped arugula, cucumber, daikon, apple and mint to bowl with noodles. Toss to combine and set aside.

    4. In a bowl, whisk together 1/2 teaspoon wasabi, 2 teaspoons miso, 2 tablespoons olive oil and 1/4 teaspoon berbere (or paprika). Brush salmon filets with mixture.

    5. In a pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add chopped dill and salmon, and sear for two minutes on one side. Remove from pan and transfer to serving bowl.

    Homemade Pizza Crust (Dough) from Scratch – Easy Recipe

    Here is a recipe that I’ve been using for years now for my own homemade pizza crust from scratch! Don’t be intimidated by making it at home. It’s so easy and is the best crust there is! This is the same crust used in my pepperoni pizza video from a few years back. Enjoy!

    What you’ll need:
    3/4 cup warm water (about 100*F)
    2 Tbsp granulated sugar
    1 tsp active dry yeast
    1 tsp salt
    1 Tbsp olive oil
    2 cups all-purpose or plain flour
    additional oil for greasing

    In a large bowl, combine water and sugar and sprinkle yeast on top to re-hydrate. Don’t use too hot of water or you will kill your yeast. After yeast is a bit foamy, add in salt, 1 Tbsp oil and flour. Mix well until it comes together to form a dough. Knead until smooth and all flour is incorporated and dough is no longer sticky, about 3 minutes. Grease a bowl with another tablespoon of oil, coat dough ball with oil and cover with a damp towel. Let rise in a warm place for 1-2 hours or until doubled in size.

    To use, grease a pan with more oil, pat dough out using your finger tips to 14″-16″ in diameter. Spread with sauce, top with cheese and toppings and bake in a preheated 450*F oven for 12-14 minutes or until crust is golden brown and cheese is melty. Makes (1) 16″ pizza. Enjoy!!

    Add sauce to frying chicken and cook until it thickens

    Side salads, to accompany the main course as a side dish.

    INGREDIENTS:
    -Apple filling
    1. Peel and dice the Fuji apples.
    2. In a medium bowl, add the apples, brown sugar, ground clove, nutmeg, cinnamon, and cornstarch. Roughly mix it with a spoon.
    3. Add the apple mixture into a small sauce pot over medium heat, and cook for 10-15 minutes. Add a little water occasionally if the mixture becomes too dry.
    4. Taste an apple for your desired consistency (Soft, sweet, and tart) then take it off of the heat and let it rest for a few minutes.

    -Spiced Crumble

    1. In a small town add the flour, spices, sugar, butter, and mix until it’s mealy.
    2. Put the spiced mix into a small sheet tray and bake at 400f for 10 minutes.
    3. Take it out of the oven and let cool until it becomes crisp.

    -Vanilla Yogurt

    1. Add the Dannon non-fat plain yogurt to a small bowl and mix in the vanilla and sugar.
    2. Dollop on top of the dessert for garnish.

    Total Ingredients

    3 Fuji apples
    6 Tbsp brown sugar (3 for filling and 3 for crumble)
    1/2 Cup flour

    1 Tbsp cornstarch
    2 tsp nutmeg (1 for filling and 1 for crumble)
    3 tsp cinnamon (1 for filling and 2 for crumble)
    2 tsp ground clove (1 for filling and 1 for crumble)
    1 Tbsp granulated sugar
    3 Tbsp Dannon non-fat plain yogurt
    1 Vanilla bean ( or 2 tsp of vanilla extract)

    I demonstrate how to make Chocolate Pudding Cake in a slow cooker. It is a recipe from my cookbook “Slow Cooker Meals: Easy Home Cooking for Busy People.” I’ve had a lot of compliments on it. It tastes really good! There are 17 dessert recipes in my book.

    Chocolate Pudding Cake

    1 cup Bisquick® biscuit mix
    1 cup granulated sugar, divided
    3 tbsp. plus 1/3 cup unsweetened cocoa
    1/2 cup milk
    1 tsp. vanilla extract
    1 2/3 cup hot water

    Mix Bisquick, 1/2 cup of the sugar, the 3 tablespoons cocoa, milk and vanilla extract. Spoon batter evenly into a greased slow cooker. Mix remaining sugar, cocoa and hot water. Pour over batter in slow cooker. Cook on HIGH for 2 to 2 1/2 hours, or until batter no longer looks shiny on top. Don’t overcook. The batter rises to the top like cake, and underneath is a rich chocolate pudding. Serve with ice cream or whipped cream.

    Easy low-carb Chicken Stir-Fry with Broccoli Slaw noodles

    I adapted this recipe from one I found on ibreatheimhungry.com. We don’t have broccoli slaw here. I could make my own but I found rainbow salad mix, which is broccoli slaw with a bit of shredded carrot and beetroot (beets). Per 100g broccoli has 7g carbs while carrots and beets each have 10g, so it’s not a big difference, especially given the mix had more broccoli than carrot or beet.

    You could add a bit of xanthan gum to thicken the sauce if you like. Add whatever veggies you like — I happened to have broccoli and celery I needed to use up, but the slaw and scallions are all the veggies used in the original recipe. Here’s what I used:

    INGREDIENTS:

    4 boneless skinless chicken thighs, cut in strips
    1 bunch broccoli, sliced thin
    2 stalks celery, sliced thin
    1 bunch of green onions or scallions, sliced
    2 bags (250g / half pound each) broccoli or rainbow slaw
    1 cup water
    1/2 cup soy sauce, coconut aminos or tamari (low sodium)
    2 Tbsp sesame oil
    2 Tbsp fresh ginger, minced
    2 tsp onion powder
    1 tsp garlic powder
    1 tsp red pepper flakes
    1/2 Tbsp sugar substitute (optional)

    METHOD:

    In a large fry pan or wok that’s preheated, add the sesame oil and ginger, then add the chicken and stir fry to brown the chicken (about 3 minutes). Add the water, soy sauce, and seasonings.

    If adding broccoli or other veggies that may take more than a few minutes to cook, you can add those now too. Simmer and stir periodically for about 5 minutes. Add the slaw and green onions. Stir fry another 2-3 minutes (don’t overcook as the slaw is sliced very thin). Serve.

    Because my slaw mix had beetroot in it, it tinted everything red, but it still tasted delicious. Enjoy!

    Ingredients
    1 (16 oz.) pkg. spiral pasta
    2 green onions, chopped
    1 (6 oz.) pkg. feta cheese, crumbled
    ½ c. balsamic vinegar
    ¼ c. extra virgin olive oil
    2 c. chopped fresh tomato

    Directions:
    Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes for until cooked but still firm. Drain and rinse pasta under cold water. In a large bowl, toss pasta with chopped green onions, feta cheese, balsamic vinegar, olive oil and chopped tomato. Cover and refrigerate at least 1 hour before serving.

    Hi Kristy at the Rada Kitchen and today I’m going to share a recipe for Feta and Tomato Pasta Salad. This is a delicious recipe, one of them out of our Picnics, Potlucks & Barbeques cookbook. This cookbook is filled with salads, side dishes, main dishes, and desserts.

    You will need one 16 oz. package of spiral pasta, a 6 oz package of feta cheese that’s crumbled, a half cup of balsamic vinegar, a ¼ cup of extra virgin olive oil, 2 green onions, and two cups of chopped, fresh tomatoes.

    So the first thing you want to do is get a large pot of water boiling on the stove, lightly salted. And we’re going to add our 16 oz. of pasta. You want to cook it 8-10 minutes; you want it cooked, but you still want it firm.

    So while the pasta’s boiling, I’m going to chop up my 2 green onions and two cups of chopped tomatoes. It’s about two tomatoes. So using the Rada Tomato Slicer, it’s not only for tomatoes but also slices up green onions too. I usually use a lot of the green. It adds a lot of color, makes salad really pretty.

    I’m going to quarter this tomato. This makes really easy cutting—this Rada Tomato Slicer. It easily cuts through the skin. It’s good for not only tomatoes but it also slices through crusty bread. Without squashing it. If you have one that has a lot of seeds, you might want to remove some.

    So I’ve cooked the pasta, I’ve rinsed it in cold water and I’ve drained it again. Now I’m going to add this to a large bowl. I’m going to add my tomatoes and green onions from the Rada Cutting Board. It’s great to cut on and then you can funnel your ingredients into your bowl.

    We’re going to toss the tomatoes, onions, and pasta with the balsamic vinegar, our olive oil, and our feta cheese crumbles. Once you have that tossed together, you’ll want to toss it and put it in the refrigerator for an hour. That’s just one of the delicious recipes from our Picnics, Potlucks & Barbeques cookbook.
