Don't bother with that overly complex hard boiled egg "trick." I'll give you an easier, far more repeatable one.
Take it straight from the fridge, put it in boiling water. When I say boiling, I mean boiling. Full rolling boil. Also, use more water than you're used to. It'll keep the temp from dropping when you add the eggs.
Wait exactly 10 minutes. After the timer goes off, put the eggs straight into some ice water. Let them cool for 3-5 minutes, peel, and eat.
I found this in the comments on a reddit post concerning Scotch eggs, but the rest of the episode is pretty spiffy as well.
Evidently there's a difference between how we like eggs in the U.S. versus the U.K. (scrambled eggs here are much firmer, too much moisture is considered bad), but the details on the egg and cooking is great.
I also now must seek out the rest of Heston's episodes! :)
