Hi Chef John! I had an idea for your dressing to bump up the flavor. You could heat up the vegetable oil and fry the aromatics in it (ginger, sambal, garlic, etc) to bring out the flavor.
This is a technique in Asian cooking to bring out the flavors and also give the oil a more fragrant, cooked flavor. This is something my Chinese great-grandmother does when making sauces for noodle dishes!

In my country we usually eat Yuba with hotpot, this is the first time I've seen someone serving it as noodle. Definitely gonna give this a try.

Chef John. Vegans are very staunch with what they eat. They don't eat anything that comes from an animal. Not even honey.
Yum! I'm totally going to make this. And if I can a) get yuba and b) they act like a noodle i might use them in replacement of pasta! And I absolutely understand your raw/vegan/vegetarian etc thoughts. I refuse to do them on purpose too
