    Deviled eggs or stuffed eggs as they are sometimes called, are always an hit at any party. They are the one appetizer that always disappears first. Ever notice that? If you don’t grab one right away chances are you will miss out.

    I used to think they were a lot of trouble to make and took a lot of time to prepare. But guess what? They absolutely are not.

    This recipe is full of flavor that is irresistible. I think it’s the horseradish that does it. But you be the judge. To make this gluten free, make sure the horseradish and mayonnaise is gluten free.

    Ingredients:

    6 eggs
    1/2 tsp white wine vinegar
    1/4 cup mayonnaise, full fat version
    1/2 tsp. mustard, any kind
    3 Tbsp. red onion, minced
    1 tsp. horseradish
    salt and pepper to taste
    paprika for a sprinkle on top
    spinach or lettuce leaves

    Directions:

    Place 6, not super fresh eggs in a pan with cold water. Bring to a full boil and then cover the pan with a lid and turn off the heat.

    After 17 minutes (18 if using extra large eggs) plunge the eggs under cold water to cool and stop the cooking process.

    When completely cold, peel the eggs and rinse under cold water to remove any left over shells.

    Slice each egg in half length wise. Place all the yolks in a medium mixing bowl and mash the yolks with a fork.

    Add the mayonnaise, mustard and horseradish and stir until well combined. Stir in the vinegar and the red onion. Salt and pepper to taste. Stir again until everything is well combined and taste.

    Adjust flavors if needed. Feel free to add more or less of any of the ingredients to suit your taste.

    Place the egg filling in either a decorator or plastic bag (then snip off a corner). Cover a serving dish with lettuce or spinach leaves and place the egg white halves on top.

    Fill each egg halve with egg yolk mixture and sprinkle with paprika if desired.

    Remember not to leave these out more than 2 hours at a time unrefrigerated (although I doubt they would last that long.)

    These are a must have the next time you are entertaining. The other thing I like is that they are an easy appetizer to prepare as you can make them a day ahead to free you up to do other things for your party.

    Learn how to make delicious chicken parmesan at home!! This recipe is super easy yet tastes just as good if not better than any you’d order from a fancy Italian restaurant! Great served on it’s own, over pasta or made into sandwiches. Quite a versatile dish!

    What you’ll need:
    2 boneless and skinless chicken breasts
    1 1/2 cups Italian style bread crumbs (see how I make mine here: http://youtu.be/GMTG73oBXXQ )
    3/4 cup shredded parmesan cheese, divided
    1/2 cup flour
    1 tsp salt
    1/2 tsp black pepper
    2 large eggs
    extra virgin olive oil
    marinara sauce (see how I make mine here: http://youtu.be/5VCVpovJHm4 )
    approx. 1 cup shredded mozzarella cheese
    pasta of your choice

    Trim chicken breasts and cut in half. Place between waxed paper or plastic wrap and pound out to about 1/2 inch thick. Set aside.
    In one bowl, combine flour, salt and pepper. In another, whisk eggs and in another mix bread crumbs and 1/4 cup parmesan cheese.
    To bread the chicken, dredge in flour, then eggs and then into bread crumbs. Press the crumbs into the chicken. Place onto a plate and let set for 15 minutes. This helps the coating stick to the chicken.
    In a skillet, add enough olive oil to make it 1/4″ deep. Heat over medium high heat and fry the chicken for about 2 minutes on each side. Remove to a paper towel lined plate to drain excess oil. Place into a baking dish and top with marinara sauce. Sprinkle mozzarella over top then remaining parmesan. Bake in a preheated 350*F oven for 20-30 minutes or until chicken is done and cheese is melted and browned on top. Serve on it’s own, over pasta or make into sandwiches. Makes 4 large chicken parmesans. Enjoy!!

    Here is a very simple recipe for Rosemary Lemon Chicken. I am using boneless skinless chicken breasts, because they are super quick and easy and readily available. However, you could do the same recipe with chicken breasts still on the bone.

    The combination of lemon and rosemary is a classic one, and gives the chicken a nice tangy, herb flavor that pairs really well with just about any side dish or vegetable. Because the chicken breasts are thin I’m able to get them full cooked on the stove top, all in one pan, but for thicker cuts, you can pop them in the oven after searing and bake them off.

    Betty’s Swiss Cheese Chicken Casserole

    Betty demonstrates how to make a lovely and flavorful Swiss Cheese Chicken Casserole. It is made of chicken breast tenderloins, Swiss cheese, and chicken soup, with buttery herb seasoned stuffing on top. The casserole bakes for about an hour, making the chicken tender and juicy and the stuffing nice and crispy.

    Swiss Cheese Chicken Casserole

    12 boneless, skinless chicken breast tenderloins (about 1 1/2 pounds)
    6 oz. shredded Swiss cheese
    10 3/4-oz. can condensed cream of chicken soup
    1/4 cup milk
    2 cups herb-seasoned stuffing mix
    1/4 cup butter, melted
    cooking oil spray

    Spray a 12-inch by 8-inch by 1 1/2-inch baking dish with cooking oil spray. Place 12 chicken breast tenderloins in a layer on the bottom. Sprinkle the tenderloins evenly with 6 oz. Swiss cheese. In a small bowl, combine 1/4 cup milk and a 10 3/4-oz. can cream of chicken soup. Spread over top of chicken and cheese. Evenly sprinkle 2 cups of herb-seasoned stuffing mix over chicken soup layer. Drizzle 1/4 cup melted butter over top. Cover casserole with aluminum foil, and refrigerate for about 4 hours. Bake at 350 degrees for 55 minutes, or until casserole is nice and bubbly. Uncover casserole, and bake 5 to 10 minutes longer, until top is crisp and beginning to brown. The flavors mingle in this casserole to give an unbelievable taste–and the casserole is so simple to make! You may make this casserole ahead and refrigerate it up to 24 hours before baking, or you can even freeze it for a long period of time, then thaw it out and bake it! It is very versatile!     Fruit Platter

    There is really no recipe for a fruit platter – it’s whatever you enjoy. At Christmas time there are a lot of more exotic fruits in the grocery store to choose from. I like to use pomegranates, persimmon and figs. A white platter works great since it becomes a blank canvas for you to try different colours and textures.
    I use fresh pineapple since not only can I use the fruit for the platter but the top of the pineapple makes an elegant centrepiece. Grapes, clementines and blackberries fill it out nicely.

    Figs and Prosciutto
If you want an elegant appetizer fruit is a great choice – especially fresh figs. Score the fig (in four) and then gently unfold it – it should look like a star fish. Take a thinly sliced piece of Prosciutto (preferably from Italy) and drape it over the middle. Another alternative is to put a dollop of goat’s cheese in the middle. Better yet, do both!
To make a balsamic reduction take a cup of decent quality balsamic vinegar and gently boil it down until it reduces to half or a quarter of the original amount. It should have a syrup like consistency. You can add a bit of honey to really bring out the sweetness if you prefer.
    Take a spoon and drizzle the reduction over the figs and Prosciutto making sure to put some on the plate (white plates work best).  Enjoy!

    Watch as Better Homes and Gardens shows you how to make oven-barbecue chicken! This chicken recipe is great for when you can’t get to a grill.

    To start your oven-barbecue chicken, preheat the oven to 375 degrees and line a 15x10x1-inch baking pan with parchment paper or foil. Bake 4 pounds of meaty chicken pieces bone side up for 35 minutes, using a mixture of skinless breast halves, thighs, and drumsticks.

    For the barbecue sauce recipe, combine 1 cup of chopped onion, 1 tablespoon of minced garlic, 2 tablespoons of kosher salt, and 1/4 cup of melted butter or margarine. Cook this mixture for 10 to 15 minutes until tender, adding 1 tablespoon of paprika, 1 tablespoon of chili powder, 1 1/2 teaspoons of crushed red pepper, and 1/2 teaspoon of freshly ground black pepper.

    Cook this spicy barbecue sauce for 1 minute. Add 1 1/2 cups of water, 1 cup of cider vinegar, 1 cup packed dark brown sugar, and 2 tablespoons of Worcester sauce. Stir this homemade barbecue sauce and bring to a boil, whisking it with 1 cup of tomato paste and 1/4 cup molasses until smooth after boiling. Simmer and reduce this for 15 to 20 minutes, brushing it over the chicken–bone side down now.

    Bake the chicken for another 10 to 15 minutes until it is tender, falling off of the bone, and the barbecue sauce is caramelizing. Once you know how to barbecue chicken, this easy chicken recipe is perfect for a delicious dinner your family will love!

    Here is the recipe:

    4 1/2 Pounds (72oz) Chicken
    1/2 Teaspoon Black Pepper
    1 Teaspoon Mrs. Dash Italian Medley (or Italian Seasoning)
    1/2 Red Onion (Chopped)
    4 Cloves Garlic (2 Teaspoon Minced Garlic) (Chopped)
    1 Packet (20g) Dry Italian Salad Dressing Mix
    1 Can (10.5oz) (298g) 98% Fat Free Cream of Mushroom
    1/2 Cup (4oz) Water
    8oz (240g) Fat Free Cream Cheese
    1 1/2 Cups Baby Bella Mushrooms (around 100g)

    Calories in the WHOLE recipe:

    Calories: 3702
    Fat: 21g
    Saturated Fat: 0g
    Sodium: 5046mg
    Carbs: 72g
    Fiber: 3g
    Sugar: 34g
    Protein: 599g

    Calories per serving (if you make 12 servings):

    Calories: 308
    Fat: 1.75g
    Saturated Fat: 0g
    Sodium: 420mg
    Carbs: 6g
    Fiber: .25g
    Sugar: 2.8g
    Protein: 50g

    Chop chicken breasts into halves. Combine all of the ingredients into slow cooker. Stir ingredients together until mixed. Cook on low for 6-8 hours stirring after 3-4 hours. Devour!

    Tip: Add more veggies into your slow cooker for more fiber (although I prefer eating them on the side with this recipe)

    TO MAKE 2 SMOOTHIES YOU WILL NEED:

    1 banana
    2 handfuls of spinach
    1 stick of celery
    small amount of ginger
    about a quarter of a cucumber
    a handful of chopped up pineapple
    some coconut water (how much you put in is up to you – just keep adding it until you like the consistency of your smoothie! I like mine quite thick and Jim likes his less thick so I add more coconut water to his usually).
    some ice to make it nice and cold!

    Barbecue pork ribs, so good, but do we all have the time and a smoker to make them. I sure don’t. I do have a slow cooker and a few minutes to get them ready. Just pop them in the slow cooker and head to work. When you come home you just spend an extra 10 minutes and you have some delicious BBQ ribs for you and the family.

    3 lbs Pork ribs
    2 liters Coca-Cola

    The dry rub
    (this is my usual, if you have one you like feel free to use that instead)
    2 cups Brown sugar
    1 Tbls Garlic Powder
    1 Tbls Paprika
    1 Tbls Cayenne pepper
    1 Tbls Onion Powder
    1 Tbls Black pepper
    1 Tbls Salt

    This is my recipe for making homemade noodles without a pasta machine. It is very easy and does not take very long. You can use these for stir fry, ramen, soup, or with sauce.
