Learn how to make delicious chicken parmesan at home!! This recipe is super easy yet tastes just as good if not better than any you’d order from a fancy Italian restaurant! Great served on it’s own, over pasta or made into sandwiches. Quite a versatile dish!
What you’ll need:
2 boneless and skinless chicken breasts
1 1/2 cups Italian style bread crumbs (see how I make mine here: http://youtu.be/GMTG73oBXXQ )
3/4 cup shredded parmesan cheese, divided
1/2 cup flour
1 tsp salt
1/2 tsp black pepper
2 large eggs
extra virgin olive oil
marinara sauce (see how I make mine here: http://youtu.be/5VCVpovJHm4 )
approx. 1 cup shredded mozzarella cheese
pasta of your choice
Trim chicken breasts and cut in half. Place between waxed paper or plastic wrap and pound out to about 1/2 inch thick. Set aside.
In one bowl, combine flour, salt and pepper. In another, whisk eggs and in another mix bread crumbs and 1/4 cup parmesan cheese.
To bread the chicken, dredge in flour, then eggs and then into bread crumbs. Press the crumbs into the chicken. Place onto a plate and let set for 15 minutes. This helps the coating stick to the chicken.
In a skillet, add enough olive oil to make it 1/4″ deep. Heat over medium high heat and fry the chicken for about 2 minutes on each side. Remove to a paper towel lined plate to drain excess oil. Place into a baking dish and top with marinara sauce. Sprinkle mozzarella over top then remaining parmesan. Bake in a preheated 350*F oven for 20-30 minutes or until chicken is done and cheese is melted and browned on top. Serve on it’s own, over pasta or make into sandwiches. Makes 4 large chicken parmesans. Enjoy!!

At least I must applaud that you’re not marketing this recipe as “original
Italian” since nobody in Italy has ever heard about this dish. However, it
looks delicious and I might try it – but the spaghetti I’d have separately
with an appropriate sauce!

Wished you had cut one piece to show the inside of the finished product.
Having done that would have helped me dispel the thought that the texture
of he meat was overcooked, or dry. I love the way it looked but, seemingly
having been browned in the pan, then afterwards 20 or 30 minutes seemed a
long time for a 1/2 inch piece of white meat. I wanted to use the recipe
but having watched the full length, I became unsure. Thanks..
