About 2 tablespoons of all-purpose flour for rolling
Sauce
3 cups crushed tomatoes
2 tablespoons olive oil preferred
1 teaspoons Italian herbs
1 teaspoon salt
2 teaspoons sugar
1/8 teaspoon black pepper
¼ teaspoon chili flake
2 teaspoons corn starch
Topping
2 cups shredded mozzarella cheese
1 cup sliced bell pepper in small pieces (capsicum, Shimla mirch)

Aloo Mutter is the most commonly served Indian recipe in dinner. Chef Ruchi Bharani makes Aloo Muter, an Indian delicacy, which is widely made in Indian homes and definitely a delicious side dish which goes really well with chapatis, roti & parathas! Learn how to make this simple and easy to cook quick homemade gravy recipe!
Ingredients:
– 1 & 1/2 cup Tomato Puree
– 1 cup boiled Green Peas
– 2 boiled and diced small Potatoes
– 1 tbsp Cream / Malai
– 1 small piece Ginger
– 2 cloves Garlic
– 1 Green Chilli
– 3/4 tsp Garam Masala
– 1/4 tsp Asafoetida
– 3/4 tsp Red Chilli Powder
– 1 tsp Cumin Seeds
– Salt
– 1 chopped small Onion
– 1 tsp Sugar
– 1 tbsp Oil
– Coriander Leaves
Method:
– Grind chopped onions, ginger, garlic, chilli in a mixer to make a smooth paste
– Heat oil in a pan, add the cumin seeds and once its starts crackling add asafoetida and onion paste.
– Saute the onion paste till its brown and add the tomato puree
– Mix it well and add red chilli powder, garam masala, salt, sugar and cook it for about 7 – 8 mins till its almost dry
– Add water to the paste and mix it well by adding some cream/malai
– Add green peas, coriander leaves, boiled potatoes and mix it and cook it for a while.
– The dish is ready to be served hot with any Indian Flat Breads

Melanzane alla Parmigiana (Eggplant Parmigiana or Eggplant Parmesan) — the dish I cut my teeth on. Loved it then, love it now, and make it often. Imagine perfection: the golden eggplant sauteed in a tasty egg wash, baked in the oven with tangy concentrated tomato sauce, sweet basil, creamy melted mozzarella, with a nutty parmigiana reggiano crust. It’s my favorite dish, rich and satisfying; it can keep a man alive for days.
Of course that’s assuming you’re lucky enough to possess eggplant parmigiana left overs after your meal is done. Because it actually tastes better the next day after some overnight magic melding of flavors. If you’re the preserving type, consider portioning your left-overs and freezing. Impress the unexpected and unsuspecting dinner guest with tomorrow’s eggplant parmigiana or satiate yourself on a night when there’s just nothing else to eat.
Or, mix it up a bit. Eggplant parmigiana makes a great panino (sandwich) especially with a soft, chewy bread like ciabatta for tomorrow’s lunch.

Oven roasted asparagus is easy to do and requires few ingredients. Keep it simple I say and let the asparagus flavor shine through.
All you need is a little olive oil, salt, pepper, lemon and a sprinkle of parmesan cheese and you are set.
You will cook these little gems until they start to get tender but definitely not mushy. And cook them in a hot oven so the sugars caramelize and bring out the sweetness in these vegetables.
After you coat the asparagus in olive oil and seasoned with salt and pepper, place them in a preheated 425 to 450 degree F. oven.
Be sure and rinse the asparagus and dry with a paper towel before seasoning. Then place them in a single layer on a baking sheet lined with either aluminum foil or parchment paper.
You will roast these until they are just tender. The time will vary depending on how thick the asparagus stalks are. (Somewhere between 8 and 15 minutes). The thicker they are the longer they will take.
Once you take them out of the oven, drizzle fresh lemon juice over all and top with parmesan cheese if you like. Serve immediately.
You can also bbq these if you choose. Rotate (roll them over) them on the grill as they cook.
This is such a fast, easy, and delicious way to get more vegetables into your diet.

In this video, April prepares a light version of the popular Chinese take out dish, General Tso’s Chicken. It is cooked with very little fat or sugar, but it still tastes fantastic! Next time you are craving take out, give this dish a try!
Serves 4-6
Ingredients:
1 1/2 lb Chicken Breast, cubed
2 Tbls Low Sodium Soy Sauce
2 Tbls Rice Vinegar (Found in Asian section of Grocery store)
1 Tbls Brown Sugar
1/4 tsp Red Pepper Flakes
2 Garlic Cloves, minced
2 tsp Minced Ginger
1/4 Cup Chicken Broth or Water
1 Cup All Purpose flour
1 Tbls Canola Oil
2 Green Onions, chopped
Directions:
In a medium bowl mix together Soy Sauce, Vinegar, Sugar, Red Pepper Flakes, Garlic, Ginger, Chicken Broth, and 1/2 of the Green Onions. Set Aside
Put flour into a large ziploc bag then add in the cubed chicken, shake around until each piece is coated.
In a large skillet add oil over med high heat, remove chicken from the bag, shaking off the excess flour, then add to the skillet. Let chicken cook until it is golden on each side, then remove from the skillet.
Add the sauce in the skillet, cook for about 30 sec, then add chicken back in. Toss chicken in sauce until sauce thickens and is completely heated and cooked through.
Garnish chicken with remaining green onions, serve with brown rice and steamed broccoli or snap peas.

This Delicious Gluten Free Mongolian Beef dish is amazing! It’s basically a replica of PF Chang’s and Joey Tomato’s Ginger Beef but for the quarter of the cost of dining out.

Entire Recipe (8oz)

Ingredients:
1 Large Onion or 2 Med. Sized Onions
3/4 Cup Fiber One Bran Cereal (original)
1 serv. or 3 tbsp of Egg Substitutes
Non-Stick Butter Spray
Salt, pepper, garlic powder and/or season of choice
Food Processor
Parchment Paper
Cooking Sheet or Large Pan

Instructions:
1. Preheat Oven to 400 degrees.
2. Cut Onions into slices, one-inch in width
3. Season Onion Rings
4. Grind up cereal into a food processor or blender
(Tip) If you do not have a food processor/blender you can crush them up manually but it is VERY difficult to do this with this texture of cereal.
5. Line pan with parchment paper and spray non-stick butter spray
6. Add egg substitutes to onion rings
7. Mix onion rings in batter to coat
8. Add coated onion rings to pan and bake for 15 minutes on 400 degrees
9. Flip onion rings over and cook for additional 10-15 minutes
(Tip) If you like them extra crunchy, keep them in longer BUT check on them every 5 minutes or so (they burn easily LOL)
