    One of the most popular vegetarian main-course dishes is veg kheema masala. It is nothing but minced vegetables cooked with onions, tomatoes and ginger garlic paste. Check out Chef Ruchi Bharani’s take on this popular kheema recipe.

    Ingredients:

    3 medium onions, finely chopped
    1/2 capsicum finely chopped
    1 carrot steamed and finely chopped
    100g French beans steamed and finely chopped
    1/2 cup frozen peas
    1 green chilli finely chopped
    1 tomato finely chopped
    1 1/2 cup tomato puree
    3 tbsp cheese
    100g grated paneer
    1 tsp garam masala
    1/2 tsp red chilli powder
    1 tbsp ghee
    1 tbsp ginger and garlic paste
    coriander leaves
    salt to taste
    1/2 tsp coriander and cumin seed powder

    Method:

    – In a pan, heat ghee. Add the onions and saute them well until they are brown in colour.
    – Add the ginger and garlic paste.
    – Add the finely chopped capsicum, frozen green peas and chopped green chillies,
    – Add the tomato puree and let it cook for at least 2 minutes.
    – Add the finely chopped tomatoes and let them cook until they are absolutely mushy.
    – Add the red chilli powder, coriander and cumin seed powder, garam masala and salt to taste.
    – Add little water and saute the ingredients well.
    – Add the chopped, steamed vegetables – French beans and carrots.
    – Add the grated paneer (cottage cheese) and then grate some cheese over it. Mix all the ingredients well.
    – Sprinkle some coriander leaves over the kheema masala and add little water. Mix well.
    – The kheema masala is ready to be served. Garnish it with some grated cheese and coriander leaves. Also squeeze some lime over it.

    Here’s the recipe:
    Ingredients

    2cans (8 oz) Pillsbury? refrigerated crescent dinner rolls
    1/2 cup well drained roasted red bell peppers (from a jar)
    8 slices provolone cheese, halved
    1/3 lb deli sliced hot salami
    1/4 lb deli sliced ham
    1/4 lb deli sliced capocollo
    1/2 cup well drained hot pepper rings (from a jar)
    butter
    garlic powder
    Steps
    1 Heat oven to 375°F.
    2 Unroll both cans of dough; separate into 8 rectangles. On ungreased 12-inch pizza pan, arrange rectangles in ring so short sides of rectangles form a circle in center. (Dough will overlap; half of each rectangle will hang over edge of pan. Dough ring should resemble a sun.)
    3 Spread roasted red bell peppers towards center of ring on bottom halves of rectangles. Top with half of the cheese. Layer salami, ham and capocollo slices over cheese. Arrange pepper rings over top. Cover with remaining half of cheese.
    4 Bring each dough rectangle hanging over side of pan up over stacked filling, tucking dough under bottom layer of dough to secure it. Repeat around sandwich until entire filling is enclosed (some filling might show a little but that is okay.) Brush top with melted butter and garlic powder.
    5 Bake 18 to 22 minutes or until dough is golden brown and thoroughly baked. Remove from oven; cool 5 to 10 minutes before cutting into serving slices.

    Garlic & Herb Popcorn Recipe:
    6-8 cups popcorn
    ¼ cup salted butter
    1 tsp fresh thyme leaves
    1 tsp fresh rosemary, chopped
    ½ tsp garlic powder
    ½ tsp freshly ground pepper
    freshly grated parmesan

    In a small saucepan, melt butter. Stir in thyme, rosemary, garlic and pepper.
    Pour mixture over popcorn, replace lid and shake until popcorn is coated.
    Grate fresh parmesan onto popcorn and serve warm.
    Enjoy!

    Sweet & Spicy Popcorn
    6-8 cups popcorn
    ¼ cup salted butter
    1½ tbsp. honey
    1½ tbsp sriracha
    1 clove garlic, pureed

    In a small saucepan, melt butter. Add honey, sriracha and garlic. Heat until slightly thickened.
    Pour mixture over popcorn, replace lid and shake until popcorn is coated.
    Enjoy!

    Cinnamon Roll Popcorn
    6-8 cups popcorn
    1 cup pecans, chopped
    ¼ cup salted butter
    ½ cup brown sugar
    1 tsp cinnamon
    1 tsp vanilla
    1/2 cup white chocolate

    Add pecans to popcorn and mix.
    In a small saucepan, melt butter. Add brown sugar, cinnamon and vanilla. Heat until slightly thickened.
    Pour mixture over popcorn, replace lid and shake until popcorn is coated.
    Spread popcorn onto a parchment-lined baking sheet.
    Use a double boiler to melt white chocolate chips.
    Drizzle white chocolate over popcorn. Allow to cool completely

    Making Sweet Pickles

    This recipe for the best sweet pickles I’ve ever tasted, had been lost for many years. I have searched for it many times, without any luck. It was my grandmother’s recipe. My uncle finally found it for me. Thank you Uncle Ed!

    MIMI’S SWEET PICKLES

    DAY 1:
    Wash and cut 1 gallon cucumbers (into chunks or thick slices)
    Put into stone jar (crock), large glass or plastic container…no metal.

    Dissolve 1 cup salt in 1/2 gallon boiling water and pour over them while hot. If this does not cover your pickles, make another batch of salted water. Weigh pickles down with saucer or such to keep cukes under water.

    DAY 2:
    Let stand

    DAY 3:
    Let stand

    Day 4:
    Drain and pour fresh boiling water and let stand overnight.

    Day 5:
    Drain off water from day 4 and discard. Pour 1/2 gallon boiling water with 1 tablespoon powered powdered alum over pickles and let stand 24 hours and drain.
    (This makes them crisp)

    DAY 6:
    Pour fresh boiling water over them again and let stand overnight.

    DAY 7:
    For pickling mixture, combine 1 quart vinegar—boiling hot—3 cups sugar, 1/4 oz. celery seed, 1/2 oz. cinnamon sticks, 1 teaspoon ground ginger, and 1 teaspoon whole cloves. Pour over pickles. (If you pour last nights water off your pickles, into a quart jar, you will be able to tell how many quarts of vinegar you need to cover your cukes.)

    DAYS 8, 9, & 10:
    Pour the liquid off the pickles, into a large pot, and add 1/2 cup sugar each day, and bring to a boil. Remove liquid from heat, let cool for about 20 minutes, and pour back over pickles.

    With last heating, on day 10, put pickles into sterilized jars and pour hot vinegar/spice mixture over pickles, leaving 1/4 inch head space. Run a non-metallic tool around the inside of the jar to release any trapped air bubbles. Wipe the rim of the jar with a clean, damp paper towel or cloth. Place hot seal on the jar and screw on hot band. Process in a boiling water bath. Allow water to return to a full rolling boil and process for 10 minutes. Remove from water bath and place on a towel. Do not disturb for 24 hours or until completely cool.

    When jars are completely cool, remove the rings, wash jars, label, and store in a cool, dark place. The pickles do not need additional time to cure. They are ready to eat immediately.

    CORN LOLLIPOP
    Ingredients –

    ¼ tsp pepper powder
    ½ tsp garam masala
    1 tsp garlic paste
    ½ tsp ginger chilli paste
    2 tbsp cashewnut powder
    2 tbsp cornflour
    1 lemon juice
    ½ tsp dry oregano
    2 potatoes boiled and mashed
    1 cup corn boiled and half crushed
    2 slices of bread crumbs
    grated cheese
    Semolina(rawa)
    coriander leaves
    Salt

    Method –
    Mix all the ingredients in a bowl except semolina. Prepare flat round tikkis and roll in semolina. Pierce a candy stick in the centre . Deep fry the lollipops with the candy stick till brown. Remove the lollipops on a tissue and serve hot with coriander mint chutney .

    NOTE: The flat round tikkis should not be very thick or they tend to taste raw inside.

    1 (14 oz.) pkg. cocktail sausages 14 to 15 bacon strips
    1 ½ C. brown sugar, divided ½ tsp. five-spice powder
    ¾ C. cola
    Hot sauce to taste

    Tackle this easy to make appetizer for the Super Bowl. Make these little sausages as hot or mild as you like, you control the heat. Wrap the lil smokies in bacon, pop them in the oven for a few minutes add some coke and hot sauce put then in the crockpot before the game starts and they will be ready to eat during half time. Your super bowl guests will cheer when you bring out these smoking smokies bacon wrapped sausages!

    Transcript:

    Hi, Kristi in the Rada kitchen and today I want to share a recipe for Smokin’ Hot Smokies. This is a recipe out of our cookbook, Party Snacks to Share. This has sweet and sassy recipes, it has crunchy recipes, these we’re actually going to make in our slow cooker, so let’s get started.

    Ingredients you need to make our Smokin’ Hot Smokies include a 14 oz package of cocktail sausages, 14 to 15 bacon strips, a cup and a half of brown sugar, you’re going to divide that, a half a teaspoon of five-spice powder, three-quarter cup of cola, and hot sauce to taste.

    So, you want to preheat your oven to 325 degrees, and you’ll need a 9 x 13 baking pan. I’m using the Rada stoneware Rectangular Baker; you don’t have to preseason those. If you have any other one, you’ll want to spray it with a nonstick cooking spray. Alright, so we’re going to take a couple slices of bacon, and then we’re going to cut it into three pieces crosswise. And then you’re going to take a cocktail sausage and you’re going to wrap the bacon around and then put a toothpick through it. Sometimes you’re going to have to layer it to stick it all together. Then you place your Smokies in a 9 x 13 pan. And then what we’re going to do is sprinkle a ¾ cup of brown sugar over the top.

    Now we’re going to bake these in the oven for about 40 minutes until the sugar gets melted and bubbly. After 40 minutes, you’re going to transfer your smoking hot Smokies to a Crock-Pot or a slow cooker you’ll want to spray it with nonstick cooking spray. And then to the slow cooker you’re going to add ¾ cup of brown sugar, and then ¾ cup of Coke, just drizzle that over the top, a half a teaspoon of five-spice powder and then hot sauce to taste. Depending on how hot you want it, you control the heat. Cook this on high for four hours and then they’ll be ready to serve.

    Smokin’ Hot Smokies, just one of the recipes to serve at your next Super Bowl get-together or a holiday. It’s a great appetizer and there’s a lot more in our Party Snacks to Share cookbook.

    Oreo cake recipe & equipment:

    For the Chocolate Cake
    (will make two 8″/9″ cakes)
    • 1 3/4 cups all purpose flour
    • 3/4 cup cocoa
    • 2 cups granulated sugar
    • 2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 2 eggs
    • 1 cup buttermilk
    • 1/2 vegetable oil
    • 2 teaspoons vanilla extract
    • 1/2 cup hot water
    • 20 quartered Oreos

    For the Vanilla Cake
    (will make one 8″/9″ cake)
    • 1 1/2 cups all purpose flour
    • 1 cup granulated sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup butter, chopped into 1″ cubes
    • 2 eggs
    • 1/2 cup milk
    • 1/2 teaspoon vanilla extract
    • 10 quartered Oreos

    For the Oreo Filling
    • 8 ounces softened cream cheese
    • 1 teaspoon vanilla
    • 2 cups icing sugar
    • 2 cups whipping cream (heavy cream)

    Garnish:
    • crumbled Oreos (about 10)
    • Halved Oreos
    • Chocolate Ganache (Our Recipe: http://youtu.be/UFW59OLLoDc)
    • Ateco Tip 827

    Procedure
    Preheat oven to 350F and grease cake pans.

    Chocolate cake:
    In a stand mixer, fitted with the paddle attachment, combine the flour, sugar, cocoa, baking soda, baking powder, salt and mix until combined. Add the two eggs and mix. While the mixer is beating, slowly add the buttermilk, oil and vanilla. Ensure that water is hot, and add water slowly. Once batter is combined, add quartered Oreo’s and mix a couple of times, being careful not to break up the Oreo’s. Divide the batter into two equal portions in prepared cake pans and bake for 40-45 minutes or until a toothpick inserted comes out clean. Allow to sit on a cooling rack before removing from pan and allow to cool completely.

    Vanilla cake:
    In a stand mixer, fitted with the paddle attachment, combine flour, sugar, baking powder and salt and mix until combined. While mixer is turning, add cubes of butter one at a time and mix until the butter has broken up into tiny pieces and the mixture resembles sand. Add eggs and continue to mix. While mixer is turning, slowly add milk and vanilla. Mix until batter is smooth. Pour batter into prepared cake pan and bake for 40-45 minutes or until a toothpick inserted comes out clean. Allow to sit on a cooling rack before removing from pan and allow to cool completely.

    While cakes are cooling, prepare filling. In a stand mixer, fitted with the whisk attachment, whisk whipping cream until stiff peaks form. Set aside in the fridge. Switching to a paddle attachment in a clean bowl, beat cream cheese until cream cheese is soft. Add icing sugar and vanilla and mix until smooth. Add whipped cream to cream cheese mixture, and mix until smooth.

    Ensure that each cake layer is even and level. Place one chocolate cake on a cake board and smooth about 1/2 cup of filling onto it in an even layer. Place the vanilla cake layer on next and repeat with a 1/2 cup of filling. Smooth the filling on top. Place the second chocolate cake on top, and cover the entire cake in a layer of filling. At this point, I always like to place in the freezer for about 20-30 minutes (to set the cake). Apply a second coat to the cake with the filling. Place remaining filling into a piping bag fitted with a large open star tip (I used Ateco 827) and place in the fridge for later.

    Prepare chocolate ganache and pour onto the edge of cake, a small amount at a time. Place some crumbled Oreos in the centre of the cake, and using remaining filling, pipe large open stars in a circle. Place a half Oreo on top of every second star. Slice and serve!

    BETH’S CHINESE CHICKEN SALAD
    Serves 4-6

    INGREDIENTS
    2 chicken breasts, bone in, skin on
    3 cups (450 g) of iceberg lettuce
    1½ (225 g)cups of green cabbage
    1½ (225 g) cups of purple cabbage
    1 cucumber, sliced into half moons
    3 carrots, peeled and cut into 2″ matchsticks
    1 cup (150 g) edamame beans, shelled
    1 red pepper, cut into matchsticks
    ½ cup (75 g) unsalted peanuts

    DRESSING:
    1/3 cup (80 g) smooth peanut butter
    4 tbsp (60 ml) rice wine vinegar
    Zest and juice of 1 lime
    3 tbsp (45 ml) warm water
    1 tsp (5 ml) soy sauce
    1 tsp (5 ml) honey
    1 tsp (5 ml) fresh ginger
    1 garlic clove
    2 tsp (10 ml) toasted sesame oil
    Pinch of red pepper flakes
    Salt and pepper to taste
    3 tbsp (45 ml) grapeseed oil

    METHOD:
    Preheat oven to 425F (218 C).

    Season chicken with salt and pepper and roast for 25-30 mins until cooked through. Set aside and allow to cool.

    To make the dressing, combine the peanut butter, vinegar, lime zest, lime juice and water, whisk until smooth.

    Then add the soy sauce, honey, ginger, garlic, sesame oil, red pepper flakes, salt and pepper. Whisk to combine.

    Then slowly add the oil, while whisking, to combine. Set dressing aside.

    Slice lettuce and cabbage into ribbons, slice cucumber into half moons, carrots and red pepper into matchsticks. Thaw edamame if frozen.

    Shred chicken with a fork.

    Place lettuce and cabbage on a plate, add veggies, chicken and toss with the dressing. Garnish with 2 tbsp of peanuts. Enjoy!

    Slow Cooker Brown and Maple Sugar Pork Tenderloin- with yoyomax12

    This pork tenderloin recipe has some great flavour! This can be baked in the oven as well.

    2 lbs. pork tenderloin
    salt and pepper
    2 cloves garlic finely chopped
    2 Tbsp maple syrup
    4 Tbsp Dijon mustard (I used “regular” whole grain)
    2 Tbsp brown sugar
    1 Tbsp balsamic vinegar
    1/2 tsp dried thyme

    To thicken sauce combine:
    1 Tbsp cornstarch and 1 Tbsp water in a small cup and stir until smooth. Set aside and use to thicken sauce after pork is cooked.

    Place tenderloin in the slow cooker and sprinkle with salt and pepper.
    In a small bowl combine the garlic, mustard, honey, brown sugar, vinegar, thyme and maple syrup.
    Pour the mixture over the pork.
    Replace the lid and cook on low for 7-9 hours or on high 3-4 hours.

    Remove the pork, pour the sauce from the crockpot and pour into a small saucepan. Bring to a boil and add small amounts of the cornstarch and water mixture, stir after each addition. Cook until thickened (you may not need to use all the cornstarch/water mixture).

    Serve the sauce over the pork.

    RECIPE NOTES:
    I think that I would use a different cut of pork for this next time. Pork tenderloin is already tender and doesn’t need a lot of cooking to begin with. Although the flavour of this sauce is excellent, I found the pork tenderloin a bit stringy because it had cooked for so long. So reducing the cooking time or using a different cut pork that needs longer slow cooking would be best.
