ginger = green chillis = curry leaves= 1 table spoon
carrots = potatoes = 1/2 green peas = 100 grams
shallot aka sambar onions = 8 numbers ( else 2 onions)
pepper powder = 1/2 table spoon
coconut milk = 1/2 to 3/4 can
1.5 table spoons oil
1/2 table spoon black mustard
1 teaspoon of vinegar ( or 1/2 green lime’s juice or less than 1/2 yellow
lemon’s juice just a couple of squeezes)
process
1st heat oil in pan
2nd add mustard to hot oil wait it it splutters
3rd add shallots or two onions
4th once onions / shallots are transparent add ginger + curry leaves +
green chills
5th once the above is slighly brown add the vegtables ( I used the frozen
mixed veg from the local store)
6th stir all atleast until the frozen look has gone and all vegs are
looking oil covered then add the pepper powder
7th next add salt , ttypical ratio 1 teaspoon for every 1 lb of vegtables
8th add diluted coconut milk i.e. part of what you plan to use
9th after everything boils add the lime juice or vinegar , she suggests
1-tomatoe, but that isn’t a true kerelite way.

Yes, the first item added to heated oil is mustard seeds, after crackling
the mustard seeds only we add the shallots (small onions).
