Chicken Breasts with Parsley-Caper Pesto – Everyday Food with Sarah Carey
You may already know that capers are one of my favorite ingredients! Today, I’m using them to make an irresistible parsley and caper pesto-stuffed chicken breasts. This technique looks more complicated than it is – just slice a pocket in the thickest part of the chicken breast and then spoon your pesto inside. To get maximum flavor, I like to add a bit of extra pesto right under the chicken skin, too. Served with crispy roasted potatoes, this meal is one that you’ll crave long after it’s finished. Try it for your family and see for yourself!

For even deeper caper flavor, seek out the salt-packed variety. To use them, simply soak, drain, and rinse them before using.

INGREDIENTS
1 pound small red potatoes, halved
3 tablespoons olive oil, divided
Salt and pepper
1 lemon
2 cups fresh parsley
1/4 cup walnuts
2 tablespoons capers, rinsed and drained
4 bone-in, skin-on chicken breasts (3 pounds total)
DIRECTIONS
STEP 1
Preheat oven to 450 degrees. On a rimmed baking sheet, toss potatoes with 2 teaspoons oil and season with salt and pepper. Roast 15 minutes.
STEP 2
Meanwhile, peel 3 strips zest from lemon, then thinly slice lemon crosswise. In a food processor, puree lemon zest, parsley, walnuts, capers, 2 tablespoons oil, and 1 tablespoon water until smooth. Season with salt and pepper. With a paring knife, cut a 1-inch horizontal slit in thick end of each breast; using your fingers, create a deep pocket between meat and bone. Tightly pack each pocket with pesto. Spread more pesto under skin. Rub chicken with remaining teaspoon oil and season with salt and pepper. Add chicken and lemon slices to sheet. Roast until chicken is cooked through and potatoes are golden, 35 minutes more.

Here is the recipe:
1 Scoop (30g) Vanilla Protein Powder
1/2 Cup (40g) Rolled Oats
2 Tablespoons (13g) Flaxseed Meal
1/2 Teaspoon Ground Cinnamon
1/2 Cup (116g) Fat Free Cottage Cheese (or 1/2 Cup Plain Fat Free Greek Yogurt)
1/2 Banana
3/4 Cup (12 Tablespoons/184g) Liquid Egg Whites (or 4 Large Egg Whites)
1 Teaspoon Vanilla Extract
Blend or process your Rolled Oats until they look like flour. Combine all of your ingredients into a large bowl. Mix everything together. Take out a large stove top pan, turn your burner on Low-Medium heat, and spray your pan with some non-stick cooking spray. Once your pan heats up pour your mix in (more for a thicker crepe or less for a thinner crepe). Cook for 2:00-3:00 a side! Mouthgasm!
Tips: Top with cool whip, whipped cream, sugar free chocolate syrup, nuts, cocoa powder, or anything else you can think of!

My twist on two brunch favorites. Both use homemade almond flour, which cuts some of the wheat and add tons of texture and flavor. Fresh green spinach, hearty mushroom, sweet blueberries – all the ingredients to a yummy, relaxing weekend brunch!
Quiche Recipe:
Crust:
1 cup whole wheat flour
1/2 cup packed almond flour
1/2 tsp baking powder
generous salt
*Blend in food processor until thoroughly combined.
Add:
1/3 cup soy, almond, or rice milk
1/4 cup olive oil
*Blend until a ball of dough forms. It should be easily shaped and not too sticky.
*Form to your pie plate. A springform pan would really be helpful!
Filling Part 1:
1/2 brick of firm tofu
1 egg
*Blend together
*Vegan Option — 1 whole brick of tofu only
Filling Part 2:
EVOO
1 small onion, thinly sliced
1 big handful mushrooms, thinly sliced
3 cloves garlic, minced
2 heaping handfuls spinach
*Saute onions on low with a little olive oil, 7-10 minutes. Add mushrooms for another 5 minutes. Add garlic and any or all of the seasonings below. Add spinach and cook only until wilted. Mix in Filling Part 1 and spread evenly over crust. Bake for 30 minutes at 350/180 or until golden on top.
Seasonings:
Dried basil and thyme
Red pepper flakes
1/2 lemon
1 tbsp rice vinegar, or any mild vinegar
2 tbsp dry white wine (Or more, if you like. But I don’t recommend skipping it!)
Muffin Recipe:
Blend:
1 cup whole wheat flour
1/2 cup packed almond flour
1/2 cup sugar of choice (I prefer cane sugar)
2 tsp baking powder
Generous pinch of salt
*Combine thoroughly in blender, mixer, food processor, whatever kitchen gadget you like.
Add:
1 banana
3/4 cup soy, almond, or rice milk
1/4 cup olive oil
1 tsp vanilla
*Blend just until mixture becomes pourable
*Gently fold in about 1 cup of fresh or frozen blueberries and spoon into muffin tin.
Topping:
Almond flour
Cane sugar
Cinnamon
*Mix ingredients together with hands and sprinkle over top of each muffin. Bake muffins for 30 minutes at 350/180 or until brown on top and cooked through.
Everyone has their favorite pasta dish.. Here I am showing you how to make my easy and delicious homemade pasta sauce, that goes great with any pasta from Lasagna to Spaghetti.
-1 Pound of Ground Beef (You can use Chicken, or Turkey)
-2 Cups of Diced Green Pepper
-1 Cup of Chopped Onion
-3 tbsp. of Olive Oil (or vegetable oil)
-4 tbsp. of Garlic Powder
~or~
-2 tbsp. of Fresh Minced Garlic (3 Cloves)
-1 tbsp. Salt
-1 tbsp. Pepper
-4 tbsp. Italian Seasoning
-1 Cup of Tomato Paste
-2 Cans of Diced Tomatoes (Unsalted)
-2 Jars of Tomato Sauce
-1 1/2 Cups of Grated Parmesan Cheese

Candy apples have been around for a very long time, they are a traditional fall treat

Recipe:
1 1/2 cup sugar
1 cup water
1 cup light corn syrup
(if you can’t find corn syrup (aka karo syrup or glucose syrup) there are candy apple recipes out there that don’t use it, just google a bit)
1/2 tsp ground cinnamon (optional)
1/2 tsp red food colour
6 large apples
6 wooden popsicle sticks
In medium pot over high heat bring sugar, corn syrup and water to a boil, stirring frequently. Once the mixture comes to a boil, stop stirring.
Boil until mixture registers 285F (soft crack stage) about 15-20 minutes.

While you are waiting for candy to be ready:
Line a baking dish with greased aluminum foil or silicone mat. Wash and dry apples and remove stems. Insert sticks into stem end about half way into the apple.
When candy reaches desired temperature, remove from heat and with wooden spoon, stir in the food colour and cinnamon.
Dip apples into candy mixture to coat evenly allowing excess to drip back into pot. Transfer to prepared baking dish and allow to harden completely.
Store uncovered in refrigerator for up to 2 days.
Clean up:
Remove as much melted sugar as possible into a container that you can throw out (like old milk carton) and then fill pot with water and bring to a boil over high heat until all sugar is dissolved. You can also put the pot into a sink of hot soapy water and let it sit for a couple of hours.
You can add more flavouring to the apple coating.
You can use flavoring extracts that are available in the baking supplies section of your local supermarket, such as vanilla, almond, anise, maple, and lemon. Approximately 1/2 teaspoon of this kind of flavoring should be enough for a batch.
There are also highly-concentrated flavorings specifically for candy making, available online or in specialty stores. The flavor choices are almost endless. These usually come in tiny 1-dram (1 teaspoon) bottles, and 1/8 teaspoon should be sufficient to flavor a batch.
Add the flavouring just after removing the candy from the stove and before you pour it onto the baking sheet. Be CAREFUL there might be some splattering as the flavouring comes in contact with the hot sugar mixture.
