    Rainbow Quinoa Salad
    1 cup quinoa
    2 cups vegetable broth
    1 cup corn
    2 carrots, grated
    1 cup cherry tomatoes, halved
    1 cup red cabbage, shredded
    1 cup broccoli florets
    ¼ cup olive oil
    3 tbsp white wine vinegar
    1 tsp Dijon mustard
    1 tsp honey
    salt and pepper

    In a medium saucepan, combine quinoa and vegetable broth. Bring it to a boil.
    Reduce heat to low, cover and simmer for 15 minutes.
    Turn off heat and allow quinoa to sit for 5-10 minutes.
    Allow quinoa to cool completely.
    In a large bowl combine cooled quinoa with corn, carrots, cherry tomatoes, red cabbage and broccoli florets.
    In a small bowl whisk olive oil, white wine vinegar, Dijon mustard, honey, salt and pepper.
    Pour dressing over salad and stir until it’s evenly dressed.
    Store in the refrigerator for 4-5 days.
    Enjoy!

    Quinoa Tabbouleh Salad
    1 cup quinoa
    2 cups vegetable broth
    2 cloves garlic, minced
    1 English cucumber, diced
    2 tomatoes, diced
    ¼ cup white onion
    fresh parsley
    fresh mint
    ¼ cup olive oil
    1 lemon
    salt and pepper

    In a medium saucepan, combine quinoa and vegetable broth. Bring it to a boil.
    Reduce heat to low, cover and simmer for 15 minutes.
    Turn off heat and allow quinoa to sit for 5-10 minutes.
    Allow quinoa to cool completely.
    In a large bowl combine cooled quinoa with cucumber, tomato, white onion, parsley and mint.
    Dress with olive oil, lemon juice, salt and pepper.
    Store in the refrigerator for 4-5 days.
    Enjoy!

    One Pan Mexican Quinoa
    1 cup quinoa
    1 can black beans, rinsed and drained
    1 can corn, drained
    1 red bell pepper, finely diced
    1 clove garlic, minced
    1 jalapeno, minced (optional)
    1 cup salsa
    1½ cup vegetable broth
    1 lime
    fresh cilantro to taste

    In a large skillet combine quinoa, black beans, corn, red bell pepper, garlic, jalapeno, salsa and vegetable broth.
    Stir well and bring mixture to a boil.
    Reduce heat to low, cover and simmer for 20-25 minutes or until liquid is all absorbed.
    Turn off heat and all quinoa to sit for an additional 5 minutes.
    Finish with fresh lime juice and freshly chopped cilantro.
    Store in the refrigerator for 4-5 days.
    Enjoy!

    1/2 T. olive oil
    1/2 onion, chopped
    1/2 green pepper, chopped
    1 (16 oz.) bag frozen hash browns
    1/2 lb. cooked ham, cubed
    1 1/2 C. shredded Cheddar cheese
    6 eggs
    1/2 C. whole milk
    1/4 tsp. salt
    1/4 tsp. pepper

    Slow Cooker Omelet Video Transcript

    Hi, it’s Kristy in the Rada Cutlery kitchen, and I just made this delicious Western Omelet overnight. While I was sleeping, it was cooking. I made it in a slow cooker, it’s one fo the recipes in our 12 Hour Slow Cooker Recipes book. Let me show you how I mixed it up.

    First of all, you’ll need half an onion and half a green pepper. I’m just going to dice these. What we’re going to do is put them in a medium saucepan and just sauté them until they’re tender. Here I’m using the Rada Stubby Butcher. It works really well to chop up vegetables and meats. I’m going to go back and dice up that ham in a second, here. So you’ll need half an onion and half a green pepper. This is going to make enough for 6 servings. If you want to double the recipe, you certainly can do that, too. So to our medium saucepan, in this skillet we’re going to add a couple tablespoons of olive oil. And then we’ll add our vegetables and just sauté these on the stove until they’re tender. Then we’ll want to let them cool for about 10 minutes.

    While our vegetables are sautéing, I’m going to dice up a half pound of cooked ham. Again, you can go back and use the same Rada Stubby Butcher knife. It’s a good, sturdy knife if you’re slicing roasts, it would be good for melons. It’s super sharp and easily cuts through that ham. If you have a group of team looking to raise money for uniforms, membership dues, or travel, these Rada products sell easily and you make a 40% profit. Now we’ll go check our vegetables.

    Once your vegetables are tender, you’ll want to let them cool for about 10 minutes because we don’t want our eggs to cook when we place them on top of it. So put those aside. In your slow cooker you’ll want to spray it well with cooking spray. Make sure you get it on the sides. Then we’re going to take a pound of frozen hash browns. What we’re going to do is put a third of them on the bottom of the slow cooker. Then we’re going to add a third of our cooked, diced ham. Just sprinkle that over those hash browns.

    Then we’re going to add a third of the green peppers and onions. Then here I have a cup and a half of shredded cheddar cheese. We’re going to put a third of that over the top of the vegetables. Then we’re just going to repeat it 2 more times.

    Now we’re ready to mix up our eggs. So here I have 6 eggs. To that we’re going to add a half cup of whole milk and about a half a teaspoon of salt and pepper. Now with a wire whisk, in this case the Rada Handi-Stir, we’re just going to whip those eggs and milk together. You can see it works really well with how fast these are scrambled together. It puts a lot of air into them so you get those nice, fluffy scrambled eggs. It’s great on pancake batters, Jell-O puddings. Now we’re just going to pour this over the ingredients in our slow cooker. I like to just evenly get it spread around.

    Cook it on low 8, 10, 12 hours depending on the size of your Crockpot. You wake up in the morning, people will think you worked all night to bring them a delicious Western Omelet. That’s just one of the recipes in our 12-Hour Slow Cooker Recipes book.

    Ingredients:
    12 chicken drumsticks with bone

    * 1 clove garlic, sliced
    * 2 bay leaves
    * 1/2 cup (100ml) soy sauce
    * 1/2 cup (100ml) rice vinegar
    * 2 tbsp. sugar
    * 1 (200g=7oz) onion, cut into wedges
    * cracked black pepper
    steamed rice

    Directions:
    1. Remove excess fat from the chicken pieces if desired. Prick the chicken with a fork to let the seasonings penetrate.
    2. Combine A in a large pot. Cover and marinate the chicken for 1 hour. *you can use a Ziploc bag and keep in the fridge for more than 1 hour
    3. Add 1/2 cup (100ml) water and bring to a boil. Then turn the heat down to low and cover with otoshi buta (drop-lid – you can use aluminum foil) and cook for 30 minutes. *if you can, stir occasionally
    4. Uncover and simmer until sauce is reduced and slightly thickened.
    5. Serve the chicken with (or over) steamed rice and drizzle with the sauce. *noodles, pasta, bread, or mashed potatoes goes well, too!

    Deviled eggs are a simple, easy and delicious side for barbecue. And you can get creative adding different flavors and using different toppings on your deviled eggs.

    For this deviled egg recipe, I keep it classic and go with a Southern Style Deviled Egg.

    Here is what you need for Deviled Eggs

    – 1 dozen eggs
    – 1/2 cup Mayo
    – 2 teaspoons Sweet Pickle Relish
    – 2 teaspoon Yellow Mustard
    – 1 teaspoon Apple Cider Vinegar
    – ½ teaspoon Salt
    – ½ teaspoon Black Pepper

    Garnish:
    – Sliced Pickled Jalapeno Peppers
    – Fresh Chives finely chopped
    – Sweet Paprika

    Place eggs in a single layer in the bottom of a large pot. Add enough cold water to cover the eggs 1”. Bring the pot to a boil over medium high heat. Turn the burner off once a boil is reached and cover the pot. Set a timer for 10 minutes for hard boiled eggs.

    Run cold water over the eggs to cool and peel each egg under cold running water.

    Slice each egg in half length wise and remove the yolk. Use a fork and mash the yolks together to a crumbled consistency.

    Add the mayo, pickle relish, mustard, vinegar, salt and pepper and gentle stir until incorporated. Fill each egg half with a teaspoon of the yolk filling mixture.

    Garnish the eggs with Jalapeño peppers, chives, and paprika. Loosely cover and chill in the refrigerator until ready to serve.

    Pizza is basically a blank slate, delicious with sauce and cheese, but when you add new toppings, it becomes a whole different story. Today I’m going to take a classic pizza pie and turn it into a gourmet treat! Let me show you how to make my Chicken Cordon Bleu Pizza. The sauce on this pizza begins as a roux, flour, butter and milk. Now, you can make just about any creamy sauce using those three ingredients. Just be sure to remove the sauce from the heat after the milk has thickened, so then you can add your cheese and all the savory spices. For dessert, why not make my Fudgy Salted Caramel Brownies or my Chocolate Chip Lava Cookies. You’ll find all those recipes on QVC.com and of course, the how-to videos are on YouTube.

    Chicken Cordon Bleu Pizza
    Serves 4

    Ingredients:
    Sauce:
    1 Tbsp butter
    1 Tbsp + 1 tsp flour
    3/4 cup milk
    1 cup shredded Swiss cheese
    1/2 tsp Dijon mustard
    1 tsp salt
    1/4 tsp pepper
    Pinch of paprika

    Pizza:
    1 12″ pre-baked pizza shell
    6 oz fully cooked, frozen, breaded chicken fingers, defrosted & medium diced
    1/2 cup thinly sliced and diced deli ham
    1 cup frozen broccoli florets, defrosted and chopped into 1/2″ pieces
    1 cup shredded extra sharp cheddar cheese

    Preparation:

    Preheat the oven to 450°F.

    To prepare the sauce, melt the butter on medium heat in a small saucepan. Whisk in the flour and cook for 30 seconds. Whisk in the milk and heat; keep stirring until the sauce is almost simmering and has thickened. Remove the pan from heat and whisk in the cheese until melted. Return the pan to the heat if needed. Stir in the mustard, salt, pepper, and paprika.

    To prepare the pizza, place the shell on a pizza pan or baking sheet. Spread the cheese sauce over the surface of the pizza shell leaving about an inch uncovered around the edge. Sprinkle the chicken tenders, deli ham, broccoli, and cheddar cheese over the sauce. Bake for 25 minutes.

    Betty demonstrates how to make Chicken Casserole Supreme. This is a great chicken recipe that has layers of chicken, rice, green peas, mushrooms, onion, Cheddar cheese, Ritz cracker crumbs, and chicken gravy.

    Chicken Casserole Supreme

    4 cups cooked chicken breast (You may use white and dark meat.)
    3 cups cooked rice (You may boil 2 cans of chicken broth and 1 equal-sized can of long grain white rice for 15 minutes, covered, over low heat.)
    8.5-ounce can green peas, drained
    2.5 ounces sliced mushrooms, drained
    2 tablespoons minced onion
    1 cup finely shredded Cheddar cheese
    1 cup finely crushed Ritz crackers
    (2) 10.5-ounce cans chicken gravy, heated slightly for even spreading

    You may cook the chicken breasts by salting them and placing them in a slow cooker for about 4 hours on HIGH. (I line the slow cooker with aluminum foil for added tenderness.) Cool to room temperature. Chill, and then shred. Spray a 13-inch by 9-inch by 2-inch baking dish with cooking oil spray. Into the dish spread 2 cups of the cooked, shredded chicken breast, then 1 ½ cups cooked rice, and then ½ can green peas. Now, spread all of the onion evenly, followed by all of the sliced mushrooms. Repeat the chicken, rice, and green pea layers, using the same amounts in the earlier layers. In a small bowl, combine cracker crumbs and Cheddar cheese. Sprinkle over top of casserole. Pour the 2 cans of chicken gravy over all. Bake at 350 degrees for 30 to 45 minutes, until casserole is bubbly and beginning to brown. Remove from oven and serve immediately. Enjoy! –Betty
