Michelin star chef Elena Arzak, from Arzak in San Sebastián, part of Spain’s Basque region, creates two dishes from the Arzak menu. The first is a hake dish which is served with green sorceress, a green like dome that is placed over the fish. This is followed by the big truffle, both of which appear at the restaurant and play homage to the region’s cuisine, while also being representing today’s cuisine, being creative and inventive in their approach.

    Day 32: Chicken Chili Recipe

Day 32 Update: Here is my recipe for Chicken Chili:

    1-3 boneless, skinless chicken breasts
1 can light red kidney beans
1 can white beans (or any other bean of your choice)
1 jar of salsa (small jar for 1 chicken breasts, large har for 3 chicken breasts).

Place items in that order into the slow cooker (crock pot). Mix the beans and salsa over the chicken. Cover. Cook on high for 4 hours.

In 3 hours 30 minutes, remove the cover and use two forks to gently pull apart / shred chicken in the slow cooker. Leave all contents in the slow cooker, do not drain. Replace cover and cook remaining 30 minutes on high. This chicken will absorb most of all the juices in the crock pot.

Serve, enjoy! Makes several servings. Read all labels to calculate nutrional information. The chicken chili will be very moist and tender. Yum.

Authentic Thai Recipe for Hat Yai Fried Chicken | ไก่ทอดหาดใหญ่ | Recipe for Gai Tod Hat Yai

Authentic Thai Recipe for Hat Yai Fried Chicken | ไก่ทอดหาดใหญ่ | Recipe for Gai Tod Hat Yai

This Thai fried chicken recipe is popular at street food vendor location throughout Thailand, but it is originally from Hat Yai in the southern part of the country. While the recipe varies from chef to chef, the one thing that is always included are the crispy fried shallots. We marinate ours in a dark and rich seasoning made with lots of garlic, coriander root, peppercorns, soy sauce, dark sweet soy sauce, sugar, and salt, then we use the marinade to make a thick batter for the chicken. It fries up dark and crispy, with sweet and peppery undertones. As popular as KFC is in Thailand, nothing beats a couple of pieces of Hat Yai fried chicken with some freshly cooked sticky rice, topped with these savory little fried shallots.

    Ingredient List:

    1 1/2 – 2 Pounds Chicken Meat (chicken wings)
    6 cloves Garlic
    2 – 3 Coriander Root
    1/2 teaspoon Black Peppercorns
    1/2 teaspoon White Peppercorns
    1 1/2 Tablespoons Sugar
    1 teaspoon Salt
    3 Tablespoons Light Soy Sauce
1 1/2 teaspoon Dark Sweet Soy Sauce
1 Cup Rice Flour (more or less, as needed)
    1/2 Cup Water
1 Cup Red Shallots (1 cup thinly sliced shallots)
2 Cups Glutinous Rice (if making the sticky rice)
    1 1/2 liters Vegetable Oil

    Directions:

1: Grind the coriander root, garlic, and white and black peppercorns with a mortar and pestle until a rough paste is made. Stir in the sugar, salt, light and dark soy sauces, and 1/4 cup of water. Stir until the sugar dissolves.

2: Put the marinade in a large zip lock bag with the chicken and marinate for 2 – 3 hours at room temperature.

3: After marinating, mix rice flour into the chicken and marinade until you have a thick batter.

4: Heat the oil in a deep pot and fry the chicken for about 7 minutes, a few pieces at a time. Serve with sticky rice and crispy fried shallots.

    1. Stovetop Oats
Combine 3/4 cup rolled oats and 1.5 cups unsweetened almond milk in a small pot over high heat. When boiling, reduce heat to low and let simmer, stirring occasionally and watching to make sure it doesn’t boil over. Once thick, stir in 1 tsp cinnamon and 1 mashed banana. Remove from heat and serve with any toppings. My favourites are peanut butter, strawberries and banana.

    2. Baked Oatmeal
Combine 1/2 cup oats, 1 mashed banana, cinnamon (optional), 1 tsp baking powder, and 1/2 cup almond milk. Place in a mini ramekin or other oven safe dish and bake for 25 minutes at 350F. Add any desired toppings, my favourites are strawberries and peanut butter with almond milk.

    1. Lettuce Wraps
Take a piece of Romaine Lettuce (or any lettuce with a large, flexible leaf) and fill it with brown rice/quinoa, smoked tofu/veggie beef cooked in hoisin sauce, sautéed bell peppers/carrots/zucchini/or any vegetables, sautéed onions and mushrooms, avocado and salsa, nutritional yeast or vegan cheese, hot sauce, and anything else of your choice.

    2. Avo-Tomato Sandwich

    —– DINNER —–
    1. Spaghetti and “Meat” Balls
Boil spaghetti pasta according to package instructions and set aside.
In a pot, steam chopped broccoli until tender. Saute mushrooms, onions, and any other desired vegetables until cooked. Separately bake/saute bought “meat” balls.
Optionally, you can bring saute all of this together in a large skillet with the tomato sauce to make a more uniform “meat” sauce, or it can just be dished into a bowl with the spaghetti with sauce over top.

    2. Pesto Pasta
In a dry skillet over medium-high heat, toast 1/2 cup of pine nuts until golden brown. Set aside. In a food processor, process two bunches of cilantro and 4 cloves of garlic. Once mixed, add in your toasted pine nuts, 1 tsp salt, 1 tsp black pepper, 1 tbsp lemon juice, optional smoked paprika, and process until smooth. If it’s too dry, add in some olive oil or water until it reaches your desired consistency.
I love putting this over pasta (whole wheat, rice or zoodles) with avocado and nutritional yeast.

    3. Veggie Burgers
Prepare patty’s according to package instructions, or make your own (http://minimalistbaker.com/easy-grillable-veggie-burgers/)
I like to eat mine on a toasted whole wheat bun with hummus, avocado, tomato, any other veggies (spinach, lettuce, sprouts, mushrooms, etc), and nutritional yeast for a cheesy flavor.

    4. Spring Rolls
Prepare angel hair or fettuccine rice noodles as per package instructions. Chop up bell pepper, cilantro, avocado, cucumber, mushrooms, smoked tofu, bean shoots, and shred some carrots. Soak your rice paper wrap in lukewarm water for about 10 seconds until soft, then fill with any fillings of your choice. Dip into peanut sauce.
    Peanut Sauce Recipe:
In a food processor, process 1/2 cup peanut butter, 1 tablespoon minced garlic, 1/4 cup tamari (soy sauce), 1/4 cup water, 1 tablespoon rice vinegar, 1 teaspoon hot sauce, 1 teaspoon sugar or other natural sweetener until smooth. Be sparse with soy sauce as it can be quite salty.
An alt. spring roll recipe – http://minimalistbaker.com/vietnamese-spring-rolls-with-crispy-tofu/

    5. Chickpea Omelet
Blend or hand mix 2/3 cup water, 1/3 cup chickpea flour, 1 tbsp ground flax seed, 1 tbsp nutritional yeast, 1/8 tsp turmeric, 1/2 tsp baking powder, 1/2 tsp garlic powder, salt and pepper to taste. Pour it over a greased skillet over medium-high heat. Let it cook like you would a normal omelet, flipping when the edges are firm and there are bubbles. Once the other side is cooked, put it on a plate and fold over any fillings. I fill it with sauteed veggies (mushrooms, spinach, bell pepper and zucchini) and sprinkle on nutritional yeast.

Paleo Diet Food List – The Secret to the Healthy Life!
    http://www.trackmyurl.biz/r25

A paleo diet food list is the optimum diet which is based on the nutritional requirements established during the evolutionary path to the present form for the human animals – having the biological name of Homo sapiens. Paleo diet is also called the biologically appropriate diet. The modern dietary regimen is known as the Paleo diet food list abbreviated as Paleo diet or paleo diet which is also popularly referred to as the caveman diet, hunter gathered diet or Stone Age diet.

Paleo diet can be easily termed as the natural food which was being used by the ancient people during the Paleolithic era – an era of about two and a half million years duration that came to an end some ten thousand years ago. Paleo food of that era consisted of wild plants and wild animals which were consumed by the human beings of the said era. Paleolithic age ended with the development of modern agricultural techniques and concepts around ten thousand years ago. The concept of Paleo diet has become known during the 1970s and the credit goes to the gastroenterologist, Walter L.V. to popularize the concept. The theme behind the concept about feasibility of Paleolithic diet for human is that, the perfect diet for human health should be closely similar to the ancestral diet.

A Paleo diet food list should be composed of the above mentioned ingredients. Starting with the meat, which should be eaten as much as one can but the point to remember is that, the meat should be cooked simple without adding much of the fats because fats cause many diseases like blood pressure, cholesterol and also increase the chances of lethal heart attack by blocking the passage of blood circulation. By keeping this point in mind, meat is healthy for us whether we use it in the breakfast, lunch or dinner. Lean meat is the meat which is trimmed of visible fats and the lean meats list can be stretched to contain the lean beef, flank steak, extra-lean hamburger, lean veal, Chunk steak, London broil, Top sirloin steak and any other lean cut.

Lean poultry consists of chicken breast, turkey breast and game hen breast having white meat with skin removed out of it. Eggs at maximum six in a week of duck, goose and chicken (go for the enriched Omega 3 variety of chicken eggs). Other types of meat may consist of rabbit and goat meat. Game meat should consist of alligator, bear, bison or buffalo, kangaroo etc. Fish meat is also favorable to be used as diet. The next to meat in the Paleo diet food list, comes the number of fruits and the vegetables. Some people are of the view that fruits and vegetables increase the weight and make them fat.

In relation to the above, this is obviously the biggest misconception about the inclusion of fruits in the daily life. Fruits do not increase the weight at all, no matter how much you eat it as fruits and salad vegetables contains very low amounts of calories. For the ideal life and health, every meal should include a combination of meat, salad, vegetables, nuts, seeds and fruits like apples, pomegranates, grapes, apricots, figs and bananas in his diet. Oranges, lemon, pears, pineapples, watermelons and Papaya are among the famous fruits because these contain higher amount of water in it, hence provide extra energy to the consumer.

Regarding the other foodstuffs included in Paleo diet, in an event of actively losing weight, at maximum 4 ounces of nuts and seeds should be used. Vegan Recipe: Jackfruit Tacos | Jason Wrobel

Vegan Recipe: Jackfruit Tacos | Jason Wrobel

Culinary superstar, Jason Wrobel, aka J-Wro, throws his hat into the ring, and serves up a plate of organic jackfruit tacos. Time for an education break! Jackfruit is native to parts of South and Southeast Asia, and is the largest tree-born fruit, some reaching as much as 80 pounds! Its flavor is comparable to a combination of apple, mango, banana, and pineapple when ripe. They taste more like chicken when green. So how can you go wrong? Okay, back on track. To make the filler for our tacos, start by adding safflower to your pan, heating it to a medium-high temp. Once heated, add yellow onion and minced garlic, and sauté until translucent. Add the jackfruit, and mix it all together. Next, add lime juice, maple syrup, cumin, coriander, chili powder, cinnamon, and apple cider vinegar. For extra minerals, add a dash of Sunwarrior Liquid Vitamin Rush. Give your concoction a quick stir, then finish by adding gluten-free beer. Get to a rolling boil, then reduce to a medium-low heat, and let sit for about 25 minutes. Once most of the liquid is absorbed, add salt and pepper, and take it off the heat. Grab your favorite taco shell, fill ‘er up, and top with fresh salsa, guac, and cilantro. This is a cool and unusual substitute to traditional tacos that even the biggest of meat-eaters are sure to enjoy.

Get this recipe and more here: http://bit.ly/1qu8HU1

Thinking about popcorn brings back incredibly fond memories. When I was a kid and my parents went away for a week or two, my grandparents would come and stay with my brother and I. We always looked forward to this special time with our grandparents and of course the super fun movie nights filled with cuddles on the couch, funny movies, and POPCORN!!

There is definitely something very comforting about snacking on popcorn and watching a movie. My grandfather always made our popcorn with an air popper and then poured a bit of melted butter on top with a sprinkle of salt. Three simple ingredients. If you have ever read the terrifying ingredient list of microwave popcorn or movie theatre popcorn you will know that those alternatives are a far cry from anything remotely healthy.

I wanted to put together a video to demonstrate how to make popcorn. Not just any popcorn. This one is healthy and delicious. It’s the recipe Steve and I use when snuggling on the couch for movie nights at our house. This healthy popcorn recipe is definitely one that you can feel good about eating yourself and feeding to your family. Plus, as a bonus, it’s super quick and simple to make. Enjoy!

This Italian classic is one to keep in your kitchen repertoire – easy enough for family suppers, it can be made ahead and reheated the next day. It’s also elegant enough for a dinner party with friends.

Using chicken thighs ensures succulent, moist results, but you can use a mixture of bone-in chicken breasts, thighs and drumsticks, if desired.

    Method of preparation:
Chop cashews, almonds, pistachios, finely chop apricots, melt chocolate. Place melted chocolate in a pastry bag (or plastic bag), squeeze out small amounts of chocolate on a piece of parchment. Gently shake the parchment to make chocolate circles spill to sides and flatten.

Oreo Cookie Truffle Cupcakes with Cookies and Cream Frosting

    A subscriber Margrét Ása Helgadóttir
    https://www.youtube.com/channel/UCxbMgdH9nsKLeXrwfdVAQQg
sent me this idea and it was on this website:
    http://www.lovefromtheoven.com/2012/04/03/oreo-truffle-stuffed-cupcakes-with-cookies-cream-frosting/

Crush a small package of Oreo cookies (about 28) into fine crumbs (I used a food processor but you can put them in a bag and crush them with a rolling pin or the bottom of a pot).
Add 3/4 to 1 full 8oz brick of cream cheese.
Blend until you get a smooth dough.
Form dough into 1″ balls and place on cookie sheet, freeze for about 20 minutes (chilling will help the balls keep their shape during baking).
Mix up a white cake mix according to package directions (I used French vanilla)
Place a couple of tablespoons of the cake mix into the bottom of a muffin cup, add the Oreo cookie ball and cover with more batter until ball is covered and cup is filled to about 3/4 full.
Bake at 350F for about 20 minutes until toothpick inserted in the center (white part) of the cupcake comes out clean.
    Let cool completely.
Mix about 1/4 to 1/2 cup of cookie crumbs into some white frosting of your choice and blend well.
Frost cupcakes and garnish with mini Oreo if desired.

    Frosting recipe I used:
    Buttercream Frosting/Icing

    2/3 cup butter — softened
    4 cups powdered sugar
    1 teaspoon vanilla
    4 tablespoons cream or milk

    Directions:
In a bowl, beat butter until light and fluffy. Gradually add powdered sugar, beating well. Beat in vanilla and enough cream or milk until desired spreading consistency. 1 batch frosts a 2-layer, 13 x 9-inch cake or about 2 doz cupcakes
