Day 32: Chicken Chili Recipe

Day 32 Update: Here is my recipe for Chicken Chili:

1-3 boneless, skinless chicken breasts
1 can light red kidney beans
1 can white beans (or any other bean of your choice)
1 jar of salsa (small jar for 1 chicken breasts, large har for 3 chicken breasts).

Place items in that order into the slow cooker (crock pot). Mix the beans and salsa over the chicken. Cover. Cook on high for 4 hours.

In 3 hours 30 minutes, remove the cover and use two forks to gently pull apart / shred chicken in the slow cooker. Leave all contents in the slow cooker, do not drain. Replace cover and cook remaining 30 minutes on high. This chicken will absorb most of all the juices in the crock pot.
