Chicken Breasts with Parsley-Caper Pesto – Everyday Food with Sarah Carey

You may already know that capers are one of my favorite ingredients! Today, I’m using them to make an irresistible parsley and caper pesto-stuffed chicken breasts. This technique looks more complicated than it is – just slice a pocket in the thickest part of the chicken breast and then spoon your pesto inside. To get maximum flavor, I like to add a bit of extra pesto right under the chicken skin, too. Served with crispy roasted potatoes, this meal is one that you’ll crave long after it’s finished. Try it for your family and see for yourself!

Sarah’s Tip of the Day:
For even deeper caper flavor, seek out the salt-packed variety. To use them, simply soak, drain, and rinse them before using.

PREP: 20 mins
TOTAL TIME: 55 mins
SERVINGS:4

INGREDIENTS
1 pound small red potatoes, halved
3 tablespoons olive oil, divided
Salt and pepper
1 lemon
2 cups fresh parsley
1/4 cup walnuts
2 tablespoons capers, rinsed and drained
4 bone-in, skin-on chicken breasts (3 pounds total)

DIRECTIONS
STEP 1
Preheat oven to 450 degrees. On a rimmed baking sheet, toss potatoes with 2 teaspoons oil and season with salt and pepper. Roast 15 minutes.

STEP 2
Meanwhile, peel 3 strips zest from lemon, then thinly slice lemon crosswise. In a food processor, puree lemon zest, parsley, walnuts, capers, 2 tablespoons oil, and 1 tablespoon water until smooth. Season with salt and pepper. With a paring knife, cut a 1-inch horizontal slit in thick end of each breast; using your fingers, create a deep pocket between meat and bone. Tightly pack each pocket with pesto. Spread more pesto under skin. Rub chicken with remaining teaspoon oil and season with salt and pepper. Add chicken and lemon slices to sheet. Roast until chicken is cooked through and potatoes are golden, 35 minutes more.

A fantastic recipe. Capers are also a favorite of mine. My secret ingredient…hmmm…I would say anchovies paste. In a perfect world I'd choose salt packed anchovies. But the paste adds something to every savory dish. A vinaigrette to say the least. A pot roast or more to say the most. Iits the universal umami in my opinion.

Sarah, your genuineness is refreshing. I'd like to know in which state is the "EverydayFood" kitchen located. Love from Puerto Rico.

Lately I've been hearing more articles about not needing to wash chicken so I was just wondering if you think it is still a good idea to wash chicken or not.

Done and tasted just now. Very good dish. Next time i'ld season the pesto too and double the walnut as it was lacking some taste. the lime really added a kick to the recipe. thx a lot for sharing 🙂

looks good, but i don't understand why cooking shows feel the need to show us shots of the host washing their hands.  what's up with that?  like we don't know how to wash our hands?  give me food porn, damn it!  save the hand washing demo for the 1st graders.
