This baked chicken is ahmazing! Sweet and tangy honey lemon chicken roasted with potatoes, onions and sliced lemons. All you need to go along with this is some steamed veggies and/or a salad.
So simple and delicious. Seriously a one bowl meal. Toss it all together and bake it in the oven while you are working on other things! The easiest Sunday dinner you will ever make!

I made this tonight!! I have 5 lemon trees full of ripe lemons and figured there is no reason not to make this now. It turned out wonderful. sweet, great lemon flavor. I love the chicken but the vegetables couldn't be beat. I adore parsnips in any form, i tossed in some baking potatoes, carrots and some fresh green beans I had left over from canning dilly beans last week. I'll make this again and again.

Looks absolutely wonderful! I love one pot cooking. You have the meat and veges all tender and brown. Just beautiful and looks like it made loads. whole chickens are so cheap, I buy them and cut them up myself and save money. and like you did, I 'clean out the freezer' and use what I have on hand.
