    Ingredients:
    2 Lbs boneless chicken thighs
    1-2 Brown onions finely chopped or slivered.
    4+ Cloves garlic minced.
    2Tsp. Mustard seeds.
    3-4 Green chilis or 1 – 2 Tsp. Red chili powder.
    2 Cans of chopped tomatoes
    1 red pepper, deseeded and sliced
    ½ green pepper, deseeded and sliced
    1 Inch finely chopped ginger or 1-2 Tsp. ground ginger.
    1-2 Tbsp. Garam Masala or Madras curry powder
    1 Cup Chicken stock or 1 Tbsp. chicken or mutton powder from Indian grocery store.
    1 Tbsp. Ground Coriander.
    1 Tbsp. Ground Cumin.
    1-2 Tsp. Turmeric.
    Handful of chopped cilantro/coriander for garnish.
    Salt and black pepper to taste.
    2 Tbsp. Melted butter optional.
    Juice of 1 or 2 limes optional.

    Method:
    In your large skillet or wok and heat your ghee or cooking oil of your choice.
    Now add your mustard seeds to the oil and fry on medium until the mustard seeds pop.
    Then add your ground coriander, cumin, turmeric and let fry for 30 seconds on medium low to medium.
    Then add your slivered onions to the wok/skillet and fry 2-3 minutes until the onions are translucent and browned lightly.
    Then add in your garlic, chilies or chili powder/flakes and red and green sliced bell peppers and fry for 2 more minutes.
    Now add in your chicken thighs and chopped tomatoes and cook for five or so minutes. Add chicken stock a little bit at a time to keep the sauce from burning/sticking to bottom of wok/skillet. You want the sauce thick but not to burn.
    Add in your garam masala now and mix in well.
    Add your chicken masala powder now if using it and mix in well.
    Now reduce the heat until the mixture is just simmering. Cover the pan with a lid offset and simmer for 20-30 minutes, stirring occasionally and adding a tablespoon of chicken stock every so often if the mixture appears too dry.
    Just before serving add your butter or ghee and mix in well.
    Then add lemon juice and mix in well.
    adjust salt and black pepper.
    Serve on white rice or even cut up boiled potatoes.

  • Vegetarian Chik’n Pot Pie

    Vegetarian Chik’n Pot Pie

    Ingredients:

    2 cups vegetable or chicken broth
    1 bouillon cube
    1/3 cup butter
    1 onion, finely chopped
    1 cup carrots
    1 cup celery,
    1 Tbs garlic paste
    1/2 tsp ground black pepper
    1/2 cup all-purpose flour or Besan flour (chick pea)
    1/4 cup heavy cream or coconut milk
    1 bag 12 oz CHIK’N Tenders or your chicken
    1/2 cup frozen peas

    Bisquick: Topping

    2-1/2 cup bisquick
    2/3 cup milk

    Preheat your oven to 450 degrees 10-15 minutes

    Directions:

    In a large saucepan heat chicken broth and bouillon cube over medium heat until hot.

    Melt butter over medium heat. Add onions, carrots, celery, and garlic, and saute until tender. Season with black pepper. Add the flour and stir together until it becomes pasty and lump-free, about 2 minutes. Stir in the hot broth, heavy cream, veggie chicken and peas. Bring to a boil then reduce to a simmer.

    Sprinkle flour on counter top. Roll out dough an extra inch. Using a biscuit round or mold, cut out dough to cover the tops of your oven-proof bowls, with about 1/2-inch hangover, depending on their size. Crimp the dough over the edge of the ramekin. Brush with butter make 4 small slits on the top. Bake for 10 at 450 degrees for minutes. Remove from the oven and serve.

    A fun way to get your ham, eggs and toast in one little bundle.
    Found this idea in a magazine at the library (some kind of country cooking magazine) but didn’t make note of the name because this is really more a method than a recipe.

    Cut crust off bread
    Roll out bread as thin as possible with rolling pin.
    Press flattened bread into well greased muffin tins. Brush bread cups with a bit of melted butter.
    Bake bread cups at 375F for 5-7 minutes or until light golden brown.
    Curl a piece of thin deli ham into the cup and add thin slices of cheese along the sides of the bread cups.
    Break an egg into each cup (medium sized eggs probably work best)
    Bake egg cups at 375F for 14-18 minutes until egg whites are barely set and still appear moist.
    Remove from oven and immediately tightly cover with tin foil and let sit for 5 minutes before serving.

    The very thought of a cheesy garlic bread is enough to tickle your taste buds and bring smile on your kids face. How about making them and bring a twist in your usual appetizer menu. Chef Ruchi Bharani teaches you how to make simple and easy to make quick homemade yummy cheese garlic breads.

    Ingredients:
    2 tbsp olive oil
    1 tsp garlic paste
    Pizza seasoning
    Plain bread loaf
    1 & 1/2 cup grated mozzarella cheese
    1/2 onion (finely chopped)
    Green chillies (finely chopped)

    Method:
    – Add olive oil, garlic paste, pizza seasoning in a bowl and mix it well
    – Brush the mixture on the bread slice and let it bake at 180 c pre heated oven for 5mins.
    – Mix well cheese, onions, green chillies, pizza seasoning and make the topping
    – Put the cheese mixture on the baked bread, put it back into the oven and let it bake at 180 c pre heated oven for 5mins.
    – Serve Hot

The major types can be roughly defined as East Asian with its origins in Imperial China and now encompassing modern Japan and the Korean peninsula; Southeast Asian which encompasses Cambodia, Laos, Thailand, Viet Nam, Brunei, Indonesia, Malaysia, Singapore, and the Philippines; South Asian states that are made up of India, Burma, Sri Lanka, Bangladesh and Pakistan as well as several other countries in this region of the continent; Central Asian and Middle Eastern.
    “Asian cuisine” most often refers to East Asian (Chinese, Japanese, and Korean), Southeast Asian cuisine and South Asian cuisine. In much of Asia, the term does not include the country’s native cuisines. For example, in Hong Kong and mainland China, Asian cuisine is a general umbrella term for Japanese cuisine, Korean cuisine, Filipino cuisine, Thai cuisine, Vietnamese cuisine, Malaysian and Singaporean cuisine and Indonesian cuisine; but Chinese cuisine and Indian cuisine are excluded.The term Asian cuisine might also be used to address the eating establishments that offer wide array of Asian dishes without rigid cuisine boundaries; such as selling satay, gyoza or lumpia for appetizer, som tam, rojak or gado-gado for salad, offering chicken teriyaki, nasi goreng or beef rendang as main course, tom yam and laksa as soup, and cendol or ogura ice for dessert. In modern fusion cuisine, the term Asian cuisine might refer to the culinary exploration of cross-cultural Asian cuisine traditions. For example combining the culinary elements of Vietnam and Japanese, Thai and Malay, or Indonesian and Chinese.
    Japanese cuisine is the food—ingredients, preparation and way of eating—of Japan. The traditional food of Japan is based on rice with miso soup and other dishes, each in its own utensil, with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled. Fish may be served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter as tempura.
    Apart from rice, staples include noodles, such as soba and udon. Japan has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga. Foreign food, in particular Chinese food in the form of noodles in soup called ramen and fried dumplings, gyoza, and western food such as curry and hamburger steaks are commonly found in Japan. Historically, the Japanese shunned meat, but with the modernization of Japan in the 1860s, meat-based dishes such as tonkatsu became common.
    Chinese cuisine includes styles originating from the diverse regions of China, plus styles of Chinese people in other parts of the world. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese peoples due both to imperial expansion and from the trade with nearby regions in pre-modern times as well as from Europe and the New World in the modern period.
    Styles and tastes also varied by class, region, and ethnic background. This led to an unparallelled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture.
    Thai cuisine is the national cuisine of Thailand. Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter.

    My white cheese dip starts with a roux. I also like to caramelize my onions a little and garlic. Add this to the roux and magical things happen!

    ▻Berries➜your preference! I used blubies! hehe.
    ▻Greek yogurt➜I prefer 0% milkfat & plain flavor. My favorite is Fage or Whole Foods 365 brand! They don’t have the sour taste that some other greek yogurts have!
    ▻Water➜you can also use green tea, but avoid juice or milk, which contain excess calories.
    ▻Chia seeds➜yes, they are the seeds that make chia pets grow hair, har har. But they’re SUPER nutritious.
    ▻Cinnamon➜add as much/little as you want. I’m addicted & top all of my meals with it. If you guys haven’t tried Whole Foods vietnamese cinnamon yet… get.it.now. you will be obsessed.
    ▻Banana➜if you’re allergic/don’t like, feel free to add stevia or honey, as it’s added to sweeten it up!

    ▻Almond Butter➜Sounds like a weird ingredient right? BUT IT’S SO GOOD! If you don’t have on hand, feel free to use unsalted ground peanut butter, it’s just a little less good for you. I’m obsessed with adding these to my smoothies though, as they add such a distinct, delicious flavor! If you’re allergic, just add another 1/4 cup of greek yogurt instead.

    ▻Berries➜again, your preference!
    ▻Avocado➜LESS IS MORE. Use 1/4-1/2 of a medium avocado.
    ▻Coconut Oil➜#1 “weight loss” smoothie ingredient!! This has a very distinct flavor, so if you aren’t a big fan of coconut, use LESS or add a 1/4 tsp of cayenne pepper (weird, but boosts that metabolism!)
    ▻Water➜you can also use green tea, but avoid juice or milk, which contain excess calories.
    ▻Chia seeds➜yes, they are the seeds that make chia pets grow hair, har har. But they’re SUPER nutritious.
