  • Armenian Lentil Soup – Armenian Food Recipes

    Recipe ingredients and directions:

    Armenian Lentil Soup

    1 c chopped onion
    1/2 c sliced carrots
    1/2 c sliced celery
    3 c peeled, cubed eggplant
    1 c diced green pepper
    3-6 cloves garlic, minced

    6 c stock
    1 1/2 c lentils
    1 1/2 c chopped tomato
    4 oz dried apricots, sliced
    1/4 t cinnamon
    1/4 t allspice
    1/4 t cayenne
    1 T paprika
    1 1/2 t salt

    3 T parsley
    1 T mint

    Saute onion, carrots, celery, eggplant, green pepper and garlic in
    olive oil until lightly browned.

    Add stock, lentils, tomato, apricots, cinnamon, allspice, cayenne,
    paprika and salt. Simmer until lentils are tender.

    Add parsley and mint. Adjust seasonings to your taste.

  • Armenian Lavosh bread – Armenian Food Recipes

    Recipe ingredients and directions:

    Armenian Lavosh bread

    1 1/2 cup warm water
    1 pkg active dry yeast
    2 Tbl oil, preferably olive oil
    3 1/2 to 4 1/2 bread flour (preferred) or all purpose flour
    1 1/2 tsp salt
    oil for greasing bowl

    In a large bowl, sprinkle yeast over warm water to soften, stir
    to dissolve. Add oil. 3 1/2 cups flour, and salt. Mix until dough
    comes away from side of bowl. Knead, adding 1/4 cup flour at a
    time, if necessary. The dough will be stiff, though it will soften
    somewhat while kneading. Knead until dough is elastic, 8-10 minutes.

    Transfer to oiled bowl and allow to rise until doubled. Punch down
    and devide into 10 pieces. Shape into rounds with your palms while
    cupping them over the dough. Coat with oil or butter and allow to
    rest 10 min.

    On a floured surface, roll each ball into a circle 10-12 inches
    across and thin as possible. Cover and let rest 10 min.

    Bake in a preheated 500F oven until flecked all over with brown
    spots. Oven tiles or a stone work best. If neither is available,
    place 2 baking pans upside down in middle oven shelf and allow to
    preheat 15 min. Drape each lavash over a dowel or rolling pin and
    roll off into oven. Prick large bubbles with fork.

    Remove from oven with long handled spatula. It can be left to cool
    and used as a crisp bread, or if soft lavash is desired, stack one
    on top of another and cover with towels. When all are baked, sprinkle
    with a little water. and keep covered until cool.

  • Armenian Eggplant Supreme – Armenian Food Recipes

    Recipe ingredients and directions:

    Armenian Eggplant Supreme

    2 pounds lean ground lamb or beef
    1 large eggplant
    1 green bell pepper
    1 6 ounce can tomato sauce
    3 ounces tomato paste
    1 cup fresh chopped parsley
    4 large tomatoes
    3 ounces water
    salt and pepper to taste

    Mix the ground beef with salt, pepper and 1/2 cup parsley. Slice
    the tomatoes about 3/8 inch thick. Cut eggplant in half lengthwise
    and then cut each half into 1/2 inch slices. Divide the ground meat
    into the same number of parts as you have slices of eggplant and
    tomato. Shape the meat into patties the same size as the eggplant.
    Place a slice of eggplant on one end of a 9 x 13 pan. Against the
    eggplant place a meat patty, then a slice of tomato, then another
    piece of eggplant. Continue this until the dish is full. This
    makes two rows with any extra pieces tucked into the unfilled areas.
    Mix the tomato sauce, tomato paste and water together until smooth.
    Pour over the top of the casserole. Chop the bell pepper and sprinkle
    it and the remaining parsley over the top. Bake at 350 for 1.5
    hours. Baste occasionally with the pan juices.

  • Armenian Eggplant Dip – Armenian Food Recipes

    Recipe ingredients and directions:

    Yield: 1 batch

    1 md Egg plant

    1/4 c Chopped red onion

    1/2 c Milk

    1 tb Olive oil

    2 tb Lemon juice

    1 tb Butter

    1 tb Flour

    Salt and pepper to taste

    Freshly grated nutmeg

    — to taste

    3 oz Parmesan cheese

    Preheat oven to 400 F.

    Prick eggplant with a fork in 10-12 places and rub with olive oil.

    Bake uncovered for about an hour, or until the pulp feels quite soft.

    Scoop out the pulp and place in a small saucepan. Add lemon juice and

    cook over medium heat until the water has evaporated – about 5

    minutes.

    Saute the onion in butter. Blend enough of the flour in to make a

    thick roux, then add milk slowly to form a thick sauce. Beat lightly

    into the eggplant. Season with salt, pepper and nutmeg. Add the

    Parmesan cheese and a few drops of warm milk if dip is too thick.

    Store overnight in the refrigerator but bring to room temperature

    before serving with crackers, bagel chips, or strips of crisped pita.

  • Armenian Eggplant Casserole – Armenian Food Recipes

    Recipe ingredients and directions:

    Servings: 4

    1 ea Eggplant, lg 4 ea Tomatoes

    1 ea Green pepper, diced 1/4 c Olive oil

    1/2 ea Clove garlic, finely minced 1 x Pepper, freshly ground

    1 ea Onion, med, sliced 1 1/2 t Salt

    1 x Sour cream (optional sauce)

    Pare and dice eggplant. Heat oil in skillet, add onion, green pepper, and

    eggplant. Stir over low heat until eggplant is soft. Add tomatoes(may

    substitute canned Italian solid pear shape, drained), salt, and pepper.

    Simmer a few minutes. At this point you can add basil, chives, parsley,

    tarragon or oregano to taste. Turn into casserole dish and bake at 325

    degrees for 40 minutes. Casserole may be served hot or cols, with sour

    cream.

  • Armenian Cracker Bread – Armenian Food Recipes

    Recipe ingredients and directions:

    1 pk Dry yeast

    1 1/2 c Warm water

    1 t Salt

    2 c All-purpose flour

    2 c Whole wheat flour

    Toasted sesame seeds

    Sprinkle yeast into warm water in large bowl and stir

    until dissolved. Add salt. Combine all-purpose and

    whole wheat flours and add enough to yeast mixture to

    make stiff dough. Turn out on floured surface and

    knead until smooth and elastic, 8 to 10 minutes. Shape

    into ball. Place in greased bowl and turn to grease

    top. Cover and let rise until doubled in bulk, about 1

    1/2 hours. Punch down and let rise again until

    doubled, about 30 minutes. Divide dough into 8 pieces

    and roll each out on lightly floured surface to very

    thin circle about 9 inches in diameter. Place, one at

    a time, on baking sheet and sprinkle with sesame

    seeds. Bake at 400F 5 to 6 minutes, or until bread

    appears dry, lightly browned and blistered. Run palest

    side under hot broiler until lightly browned. Cool and

    store in dry place.

  • Armenian Barley and Yogurt Soup – Armenian Food Recipes

    Recipe ingredients and directions:

    Armenian Barley and Yogurt Soup

    1 cup barley
    6 cups chicken broth
    1 cup onion, chopped
    1/4 cup butter
    3 Tablespoons fresh or 1 Tablespoon dried mint
    2 Tablespoons fresh parsley, minced
    Salt and freshly ground pepper to taste
    1 quart yogurt

    Place the barley and the broth in a soup kettle and cook for a few
    minutes. Saute the onion in butter until it is golden and transparent.
    Add to the soup kettle, together with the mint, parsley, salt, and
    pepper. Simmer the soup until the barley is soft. Stir in the
    yogurt and continue to dimmer for about 5 minutes.

    Can be served either hot or chilled.

  • Ararat Home Kadayif – Armenian Food Recipes

    Recipe ingredients and directions:

    Yield: 24 servings

    2 lb Kadayif dough(Shredded Filo)

    1 1/2 c Butter, melted

    1 qt Half and half cream

    1 qt Heavy cream

    3/4 c Cornstarch

    3/4 c Milk

    4 c Sugar

    3 c Water

    Few drop fresh Lemon Juice

    Cut and fluff 1 lb of Kadayif dough in bowl with hands.

    Add half melted butter and mix until strands are evenly coated.

    Spread evenly in lightly buttered 17×13-inch baking pan.

    Combine half and half and heavy cream in large saucepan. Bring to slow

    boil over low heat.

    Combine cornstarch and milk, stirring until cornstarch is dissolved.

    Slowly add to cream mixture, stirring constantly, until mixture returns

    to slow boil. Spread hot cream filling over kadayif in pan.

    Cut and fluff remaining 1 lb. of kadayif in bowl. Add remaining melted

    butter and mix with hands until strands are evenly coated. Spread over

    top of cream layer, pressing down firmly to form an even surface.

    Place on lowest oven rack and bake at 450 degrees F. until golden brown,

    about 20-25 minutes. If not golden, move pan to top rack and bake 5 to

    10 minutes longer.

    Meanwhile, prepare syrup. Combine sugar and water in saucepan and boil

    5 to 10 minutes. Add lemon juice. Cool. Pour cold syrup evenly over

    kadayif as soon as it is removed from the oven. Cut into squares to

    serve.

  • ANDREW’S SHISH KEBAB (Barbecued lamb) – Armenian Food Recipes

    Recipe ingredients and directions:

    1 leg of lamb, cubed
    1 bunch parsley, chopped fine
    4 lge. onions, chopped fine
    1 tbsp. salt
    1 tbsp. pepper
    � cup veg. oil
    � tsp. cumin powder
    2 med. eggplants
    desired amounts, peppers and tomatoes

    Day before, mix together and marinate all ingredients except eggplants, peppers and tomatoes.
    Prior to barbecuing, wash and set aside peppers and tomatoes. Prepare eggplants by cutting
    in chunks and sprinkle with salt. Sprinkle with oil. The oil makes the eggplant soft
    and succulent.

    While charcoal is turning white, arrange meat and vegetables on shish (skewers) and cook
    slowly, turning and browning on all sides.

    After shish kebab is cooked, cut into a large roasting pan that has sliced French bread on the
    bottom. This absorbs all the juices.

  • Achot (Garlicky Farmer’s Cheese with Walnuts) – Armenian Food Recipes

    Recipe ingredients and directions:

    1 cup Cheese — farmer

    3 tablespoons Walnuts — chopped fine

    1/4 cup Yogurt — low-fat

    1 tablespoon Dill — chopped fine

    1 tablespoon Parsley — chopped fine

    1 Garlic clove — minced

    1/8 teaspoon Salt

    Lettuce — boston

    1/4 cup Walnuts — chopped coarsely

    Pita — toasted triangles

    Process the farmer’s cheese, finely chopped walnuts, and yogurt in a food

    proces sor until smooth.

    Transfer the cheese to a bowl and mix with herbs, garlic, and salt. Shape into

    a ball, cover, and refrigerate for 4 hours.

    Line a small serving platter with several lettuce leaves and carefully

    transfer the cheese ball to the platter. Press the coarsely chopped walnuts

    into the ball so they more or less cover it. Serve with the toasted pita

    triangles.

    Recipe ingredients and directions:

    Yield: 6 servings

    6.00 md Baking potatoes

    0.75 c Cheddar cheese, shredded

    0.33 c Butter

    6.00 sl Bacon, fried and crumbled

    0.33 c Green onion, thinly sliced

    Salt & Pepper

    0.25 c Butter ~~ mashed potato

    -centers for mashed

    Salt & Pepper ~~ potatoes, if desired. *-*-*

    Scrubb potatoes, dry, then pierce with fork several times. Arrange

    on a baking sheet and bake in 375 degree oven for about 1 hour or

    until tender. Let stand until cook enough to handle. Cut potatoes in

    half lengthwise and scoop out centers, leaving 1/8" potato in shell.

    Cover. Chill shells up to 2 days until ready to use for the skins.

    If desired, add the 1/3 cup milk, 1/4 cup butter, salt & pepper to use

    potato centers as mashed potatoes.

    When ready to prepare skins, melt the 1/3 cup butter. Brush shells

    with the butter, inside and out. Place, cut side up, on baking

    sheet. Bake in a 500 degree oven for 20 minutes or until brown and

    crisp.

    Distribute some bacon, onion, and cheese in each shell. Bake just

    until cheese melts. Serve hot. If the potatoes are large, you may

    want to cut in half crosswise before serving.

    You may want to double this recipe if you are serving several people,

    especially if they are hungry!

  • Jacketed Olives – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 med. jar stuffed Spanish olives

    1 cup flour

    dash Tabasco sauce

    3/4 stick margarine

    1 jar Kraft Old English Cheese Spread

    Mix cheese spread, margarine and flour. Add Tabasco sauce to taste.

    With hand, make small round flat pieces of flour mixture. Wrap

    around olives and form into balls. Refrigerate for at least 1

    hour. Bake at 375 degrees for 15 to 20 minutes until brown. Serve

    hot.

  • Fiery Hot Chicken Wings – Appetizer Food Recipes

    Recipe ingredients and directions:

    2 1/2 lb chicken wings – separated

    3 to 5 Tbsp Louisiana Hot Sauce

    2 Tbsp vegetable oil

    1 Tbsp white vinegar

    1/4 tsp garlic powder

    Set oven to broil and place rack 6" from the element. In a medium

    sized mixing bowl combine hot sauce, oil, vinegar and garlic powder.

    Place chicken wings on a broiling pan. Using a pastry brush, coat

    the wings with the sauce mixture. Broil the wings for 7 minutes on

    one side before turning them over and broiling for another 7 minutes.

    You can also cook these wings over the BBQ. Cook wings for the same

    amount of time over medium high heat. Be sure to preheat the BBQ

    and brush the grill with oil to prevent sticking. Serves 2 – 4

  • Hot Chicken Wings – Appetizer Food Recipes

    Recipe ingredients and directions:

    2 1/2 lbs chicken wings

    6 oz hot sauce or Tabasco

    1/2 cup melted butter

    Cut the chicken wings in two at the joints. In a large frying pan

    or skillet; heat to 360F enough oil (or shortening) to cover the

    chicken wings. Add the wings and fry until crisp, about 12-15

    minutes. To bake, preheat the oven to 450F. Spread the chicken

    wings out on a baking sheet in one layer and bake 45 minutes. To

    make the sauce, combine the Hot Sauce or Tabasco and melted butter

    and blend thoroughly. As soon as the chicken wings are cooked,

    douse with the sauce, and serve immediately. Serves 2-6

    Recipe ingredients and directions:

    Yield: 4 servings

    3 lb chicken wings

    1/2 c honey

    3 tb vinegar, cider

    1/4 ts pepper, black

    garlic salt

    1/4 c soy sauce

    5 garlic cloves, minced

    Trim wings and Season with garlic salt, arrange in a 13"x9"x2"

    baking dish. Cover with foil and bake at 325F for one hour until

    tender, drain all liquid. Combine remaining ingredients in a

    saucepan and simmer five mins. Drizzle honey mixture over spareribs

    and bake, uncovered, at 350F for 30 mins., baste every 10 mins.

  • Hawaiian Chicken Wings – Appetizer Food Recipes

    Recipe ingredients and directions:

    1/4 cup butter or margarine

    1/2 cup tomato ketchup

    1 clove garlic, minced

    3 lbs chicken wings, tips removed

    1 cup fine dry bread crumbs

    14 oz can pineapple chunks

    2 Tbsp brown sugar

    1 Tbsp minched fresh ginger

    1 Tbsp Worcestershire sauce

    Dash Hot pepper sauce (Tobasco)

    Melt butter in shallow baking pan in 400F oven. Stir together

    ketchup and garlic; brush over wings, then roll wings in bread

    crumbs to coat evenly. Place in pan, turning to coat lightly with

    butter and bake for 30 minutes. Meanwhile, drain pinapple, reserving

    juice in 2-cup measure; add water to make 3/4 cup liquid. Stir in

    brown sugar, ginger, Worcestershir sauce and hot pepper sauce.

    After wings have cooked 30 minutes, turn and pour on sauce; bake

    about 20 to 30 minutes longer or until chicken is tender, adding

    pinapple for last 5 minutes. Care should be taken to ensure wings

    ar lightly browned. Makes about 4 servings.

  • Ham Rollups – Appetizer Food Recipes

    Recipe ingredients and directions:

    Polish ham

    cream cheese

    green onions

    Have the ham sliced medium thickness. Take a slice and spread cream

    cheese over the slice. The thicker you spread, the cheesier the

    taste. Cut the green onions to just fit the width of the slice of

    ham. Roll the ham slice up and cut the rolled ham into bit size

    slices. Serve cold.

  • Ham & Asparagus Roll-Ups – Appetizer Food Recipes

    Recipe ingredients and directions:

    10 ounces asparagus fresh or frozen

    16 ounces light cream cheese softened

    2 teaspoons horseradish

    2 teaspoons dijon mustard

    1/2 teaspoon Worcestershire sauce

    1 pound ham thinly sliced

    Cook asparagus. Mix cream cheese, horseradish, mustard and

    Worcestershire sauce. On each slice of ham spread a thin layer of

    cheese mixture. Place one spear of asparagus at one end of ham

    slice, and roll up, jellyroll style. Cut into bite size pieces.

  • Grilled Cinnamon Chicken Wings – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 can (6 oz.) pineapple concentrate

    1/2 cup chili sauce

    1/2 teaspoon chili powder

    1/8 teaspoon cayenne pepper

    1 lb. chicken wings

    1 1/2 teaspoon cinnamon

    1/2 teaspoon onion salt

    Mix sauce ingredients together, meanwhile cut wings apart. Throw

    out tips or save for stock. Marinate wings 12-24 hours. Broil on

    low 5-10 minutes per side (grill preferred, broiler ok.) Sweet and

    spicy, wonderful!!

  • Gambas a la Plancha (Grilled Shrimp, Spanish Style) – Appetizer Food Recipes

    Recipe ingredients and directions:

    Serves 4

    1/2 pound extra-large shrimp in their shells, heads on, if possible

    Kosher or sea salt

    Extra virgin olive oil

    Freshly squeezed lemon juice

    Sprinkle the unshelled shrimp on both sides with the salt and

    drizzle with oil. Let sit 15 minutes. Coat a griddle or skillet

    with oil and heat to the smoking point. Grill the shrimp a minute

    or so, turning once. Sprinkle with lemon juice and cook briefly,

    until the shrimp have just become opaque within. Serve immediately.

  • Grilled Figs with Goat Cheese – Appetizer Food Recipes

    Recipe ingredients and directions:

    8 oz goat cheese

    2 tsp finely chopped rosemary

    salt and pepper

    24 fresh figs

    1/4 pound sliced prosciutto

    6 long sprigs rosemary

    olive oil

    Combine cheese, rosemary, salt and pepper. Make a small slit in

    bottom or side of each fig and pipe or stuff cheese mixture into

    figs. Wrap strips of prosciutto around each fig and skewer 4 figs

    per rosemary twig. Brush with oil, season. Place figs on hot grill

    and grill until cheese starts to ooze, about 6 minutes.

    Recipe ingredients and directions:

    Yield: 8 Servings

    1 c fresh garlic, coarsely chopped

    1 c onions, thinly sliced

    1/4 c plus 2 tablespoons butter

    2 c flour

    2 ts baking powder

    1 ts salt

    2 T parsley, finely chopped

    1 ts dill

    1 c milk

    1/2 c sharp Cheddar cheese

    Preheat oven to 450 degrees F. Gently saute garlic and onions in

    2 tablespoons butter about 10 minutes until tender but not brown.

    Sift flour, baking powder and salt into mixing bowl. Cut in 1/4

    cup butter until mixture is crumbly like cornmeal. Add parsley,

    dill, and milk, stir just until evenly moist. Pour into well-greased

    8 x 8-inch pan. Spread garlic and onions on top, then cover with

    cheese. Bake for 25 to 30 minutes. Cool slightly and cut into

    squares.

  • Gambas al Ajillo (Spanish Garlic Prawns tapas) – Appetizer Food Recipes

    Recipe ingredients and directions:

    1/4 pint / 150 ml olive oil

    4 garlic cloves, peeled and sliced

    1 dried red chilli pepper, seeds removed

    24 large, raw prawns, peeled

    salt

    Heat oil in large earthenware casserole over medium heat. Add

    garlic, chili pepper and prawns. Sauti, stirring, until prawns are

    done, about 3 minutes. Sprinkle with salt. Remove casserole from

    heat and immediately serve.

  • Gambas al Ajillo (Spanish Garlic shrimp tapas) – Appetizer Food Recipes

    Recipe ingredients and directions:

    shrimps

    garlic

    olive oil

    dry hot pepper

    In a ceramic oven proof dish, pour some olive oil until it covers

    the bottom. Add chopped garlic and a little piece oh hot pepper,

    and put on the heat. When the oil is hot but not smoking, add the

    raw (and peeled) shrimps. Serve when done in the same dish, and

    remember the heat of the clay dish will make it cook a little

    longer.

    Variation: Champiqones al Ajillo (Garlic mushrooms)

    Use the recipe for gambas al ajillo, but substitute the shrimps

    for finely sliced mushrooms. Yo can also add some lemon juice so

    the mushrooms don’t go black.

    Recipe ingredients and directions:

    24 shrimp in the shells

    2/3 cup olive oil

    60 ml garlic, chopped fine

    Lemon slices

    Remove heads from shrimp if desired. Heat oil to smoking point.

    Saute shrimp with the garlic over fairly high heat until they turn

    pink, about 2 minutes. Serve immediately with bread for dunking

    or on a bed of boiled rice. Garnish with lemon wedges.

  • Garlic Shrimp (Gambas Al Ajillo) – Appetizer Food Recipes

    Recipe ingredients and directions:

    Serves 4-6

    1/2 pound small shrimp, shelled

    Kosher or sea salt

    1/4 cup extra virgin olive oil

    3 cloves garlic, peeled and coarsely chopped

    1 small bay leaf

    1-inch piece dried red chile pepper, seeds removed

    1 tablespoon minced parsley

    Sprinkle the shrimp on both sides with salt. Let them sit at room

    temperature for about 15 minutes. In a small, shallow casserole

    (preferably Spanish earthenware casuela) combine the oil, garlic,

    bay leaf, and chile pepper and saut* over a medium-high flame until

    the garlic just begins to color. Add the shrimp and cook, stirring

    until the shrimp are just done, about a minute or two (if the shrimp

    have turned opaque at the center, they are sufficiently cooked.)

    Sprinkle with parsley and serve immediately in the casserole dish,

    accompanied by good crusty bread for dunking.

  • Antonio’s Italian Garlic Bread – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 1/2 loaves slightly stale Italian bread

    1 cup of butter

    1 tablespoon of garlic powder

    1 cup Parmesan cheese, grated

    1 tablespoon parsley flakes.

    Cream butter. Add garlic powder Parmesan cheese and parsley flakes.

    Toast one side of the bread. Spread the garlic mixture lavishly

    on the bread and toast or broil until it gets nice and brown.
