  • Crab Tidbits – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 pkg. Sandwich-style english muffins

    1 lb. crabmeat

    5 oz. Kraft Old English Cheese Spread

    1/2 cup butter, softened

    2 Tbsp. mayonnaise

    1/2 tsp. garlic powder

    1/2 tsp. seasoned salt

    3 Tbsp. Old Bay seasoning

    Parmesan cheese, grated

    Split english muffins into halves.

    Combine crabmeat, cheese, butter, mayonnaise, garlic powder, seasoned

    salt, and

    Old Bay seasoning; mix well; spread mixture equally onto each half;

    cut halves into 8 bite-size pieces; sprinkle with Parmesan cheese.

    Place bite-size pieces on a cookie sheet and place under broiler

    until cheese melts.

    Makes 96 puffs.

  • Freeze-Ahead Crab Appetizers – Appetizer Food Recipes

    Recipe ingredients and directions:

    1/2 cup butter, softened

    2 6-oz jars sharp cheddar cheese spread

    1 tablespoon mayonnaise

    1 teaspoon garlic salt

    1 teaspoon seasoned salt

    2 6-oz cans crab meat

    18 English muffins

    Blend together first five ingredients. Stir in crab meat. Pop

    muffin halves in toaster briefly to crisp. Spread the mixture on

    the the muffin halves. Cut each half into eight wedges.

    At this point, you can either broil them for several minutes until

    bubbly and lightly browned, or place the wedges onto a cookie sheet

    and flash-freeze them in the freezer. When frozen, put them into

    plastic bags, seal well, and return to freezer.

    To reheat, simply place them under a broiler for several minutes,

    or until bubbly.

    Serves 36 (assuming one half muffin each, or 8 triangles).

    1 cup butter, softened

    1 jar Old English cheese (sharp), softened

    2 tablespoons mayonnaise

    1/2 teaspoon garlic salt

    2 dashes Worcestershire sauce

    7 ounce can crab meat

    6 English muffins, split

    Blend crab, butter, cheese, seasoning, mayo,and Worcestershire

    sauce into a paste.

    Spread on English muffins. Each muffin may be cut into 8 bite-sized

    pieces or left whole and frozen.

    Bake thawed in a preheated oven 10-15 minutes or until browned.

    Yield: 6 servings

    24 cherrystone clams

    1 garlic clove, minced

    4 tablespoons green pepper, chopped

    8 tablespoons butter

    1 tablespoon lemon juice

    6 tablespoons seasoned bread crumbs

    Preheat oven to 450f. Open clams and discard top shell. Place

    clams in a shallow baking pan. In a saucepan, melt 4 Tbsp. butter

    and saute the garlic and green pepper for 2 – 3 minutes. Add

    remaining butter, lemon juice, and bread crumbs, mixing thoroughly.

    Place 1 teas. of mixture on top of each clam and bake for 10 minutes.

  • Brie Topped With Blueberry Chutney – Appetizer Food Recipes

    Recipe ingredients and directions:

    8 to 12 oz. piece or round of brie cheese

    1 cup blueberries

    2 Tbsp. onions, chopped

    1 1/2 Tbsp. fresh ginger root, grated

    1/4 cup brown sugar, packed

    2 Tbsp. cider vinegar

    1 1/2 Tbsp. corn starch

    1/8 Tbsp. salt

    1 3 inch cinnamon stick

    Combine all ingredients in a large sauce pan. Bring to a boil over

    medium heat. Boil 1 minute. Remove cinnamon stick. Cover and

    refrigerate 30 – 45 minutes.

    Preheat oven to 350 degrees.Bake brie on an ungreased cookie sheet

    for 10 – 12 minutes, or until soft. Place brie on a serving plate,

    and top with the cold chutney. Serve with mild-flavored crackers.

  • Chinese Chicken Wings – Appetizer Food Recipes

    Recipe ingredients and directions:

    3 lb chicken wings and/or drumettes

    salt and pepper

    1 cup liquid honey

    2 Tbsp ketchup

    2 Tbsp vegetable oil

    1/2 cup soy sauce

    2 cloves garlic minced

    Place chicken in a large pan (I use a lasagne pan). Sprinkle with

    salt and pepper. Combine remaining ingredients and pour over chicken.

    Bake at 350F for 1 hour basting and turning chicken frequently.

    Serve warm. To reheat, place in a casserole dish and reheat at 325F

    for 25 minutes or until warm.

  • Chicken Wings in Oyster Sauce – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 dozen chicken wings

    3 slices fresh ginger root

    vegetable oil

    4 tablespoons oyster sauce

    1 tablespoon dry sherry

    1/2 teaspoon sugar

    2 1/2 tablespoons soy sauce

    1 cup water

    Cut each wing into two pieces by separating at the joint, discard

    the tips. Heat the ginger slices in the oil in a wok, add a third

    of the wings at a time and brown. When the wings are browned,

    drain the oil and remove the ginger slices from the wok. Add the

    oyster sauce, sherry, sugar soy sauce, and water.

    Place the browned wings in the wok and simmer, covered, for 10 to

    12 minutes. Cook another 12 to 15 minutes with the lid off, basting

    frequently with the sauce. When the wings are tender and nicely

    glazed, they are ready to be eaten.

  • Chili Bacon Breadsticks – Appetizer Food Recipes

    Recipe ingredients and directions:

    30 thin slices bacon

    30 whole grissini (long thin breadsticks)

    1/3 cup firmly packed light brown sugar

    3 Tbs. pure chili powder

    Preheat oven to 350 degrees. Let the bacon come to room temperature

    so it’s pliable. Wrap one bacon slice gently in a spiral around

    each breadstick. In a shallow dish long enough to fit the breadsticks,

    stir together the brown sugar and chili powder. Press out any lumps

    or brown sugar with a fork. Roll each bradstick gently in mixture,

    coating bacon well and arrange about 1/2 inch apart on the rack of

    a broiler pan.

    Bake the breadsticks for about 20 minutes or until the coating is

    carmelized and bacon is deep golden. Loosen the breadsticks GENTLY

    from the rack. They will be very soggy! Allow to cool about 15

    minutes. The bacon will become crip and the breadsticks will harden

    as they cool. Serve at room temperature.

    1 c. mayo

    2 tsp. dried minced onions

    2 tsp. dry mustard

    1 c. crushed butter flavored crackers

    1/2 c. sesame seeds

    2 lbs. boneless chicken breast (or chicken tenders)

    1 c. mayo

    2 Tbls. honey

    Combine mayo, onion & mustard. In another bowl combine crackers &

    sesame seeds. Cut chicken lengthwise into 1/4 inch strips. Dip into

    mayo mixture & then cracker mixture. Place in a single layer on

    greased baking sheet. Bake at 425’F for 15-18 minutes. Combine

    ingredients for sauce & serve as a dip with the chicken.

  • Chicken, Bacon & Banana Kebabs – Appetizer Food Recipes

    Recipe ingredients and directions:

    8 – 12 chicken thighs, skinned and boned

    1 Tbsp brown sugar

    1 Tbsp Worcestershire sauce

    1/2 Tbsp soy sauce

    juice of 1 lemon

    4 – 6 slices bacon

    2 bananas

    Kebab skewers (soaked a few hours to prevent burning)

    Cut the chicken into large cubes. Blend the sugar, Worcestershire

    and soy sauce and marinate the chicken overnight. Slice the bananas

    into 4 – 6 pieces. Wrap the bacon around the bananas. Thread the

    chicken and bacon wrapped bananas onto the skewers. Brush with

    the excess marinade and grill under a low grill for 10 – 15 minutes,

    turning and brushing with marinade occasionally. Serve over noodles

    or rice with a fruity chutney.

  • Spicy Chicken Fingers – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 pound boneless, skinless chicken breasts

    1 tablespoon butter

    1 tablespoon vegetable oil

    1/2 cup dry bread crumbs

    1 teaspoon paprika

    1 teaspoon dried thyme

    1 teaspoon dry mustard

    salt

    pepper

    1/4 teaspoon cayenne pepper

    1/4 cup milk

    Cut chicken into strips about 1 inch wide and 3/4 inch thick. On

    rimmed baking sheet, melt butter and oil in 375F oven, tilting pan

    to coat evenly. In shallow dish, combine bread crumbs, paprika,

    thyme, mustard, salt, pepper and cayenne. Pour milk into separate

    shallow dish. Dip chicken into crumb mixture, then into milk and

    again into crumbs. Arrange on prepared baking sheet, turning to

    coat in butter mixture. Bake for about 15 minutes, turning once,

    or until no longer pink inside.

    Makes four servings.

    Recipe ingredients and directions:

    1-pound country-style round bread loaf, sliced 3/4 inch thick

    1 large garlic clove

    6 ounces soft mild goat cheese

    2 tablespoons extra-virgin olive oil

    1/3 cup chopped mixed fresh herbs and edible flowers such as chives,

    basil, thyme, chervil, scented geranium, and marigold

    freshly ground black pepper

    Preheat broiler. Wash herbs well and spin dry.

    In a shallow baking pan broil bread slices about three inches from

    heat one minute, or until tops are golden. Turn over slices and

    broil one minute, or until golden. Rub one side of each toast with

    garlic and spread with goat cheese. Cut toasts into thirds and

    arrange on a platter. Drizzle toasts with oil and sprinkle with

    herbs and flowers. Season toasts with pepper.

    Serves 6 to 8.

    Goat cheese is creamy and mild-flavored when a few weeks old, it

    becomes crumbly and sharper tasting as it matures. Try making

    these toasts with a younger cheese and sprinkle them with fresh

    herbs and edible flowers.

  • Cheesy Chile Squares – Appetizer Food Recipes

    Recipe ingredients and directions:

    4 Tbsp butter

    5 eggs

    1/4 cup flour

    1/2 tsp baking powder

    1/8 tsp salt

    dash cayenne

    2 cup Monterey Jack or Cheddar Cheese (8 oz)

    1 cup small curd cottage cheese

    1-4 oz can diced green chilies

    Preheat oven to 400. Melt butter in 9" square baking pan in oven.

    In large bowl, whisk eggs until well blended. Stir in flour, baking

    powder, salt and cayenne. Tip baking pan to coat bottom and sides;

    add melted butter to egg mixture. Add Jack and cottage cheeses,

    and chilies, and blend well.

    Pour mixture into buttered pan and bake 15 minutes. Reduce oven

    temperature to 350 and bake 30-35 minutes longer, until top is

    lightly browned and a knife in center is clean. Let cool on a rack

    at least 10 minutes. Cut into 1 1/2 inch squares. Can be made in

    advance, cover and refrigerate up to 2 days. Can freeze. Serve warm

    or at room temperature.

  • Cheese-Stuffed Bread – Appetizer Food Recipes

    Recipe ingredients and directions:

    1 lb round or oval French bread, unsliced

    12 oz cheese, shredded or diced (Havarti, Fontina or Svenbo)

    1 oz blue cheese, blue creme or any soft ripened cheese, crumbled

    1/4 cup chopped fresh herbs (basil, rosemary, oregano, thyme, dill, parsley)

    1/4 cup green onion, finely chopped

    With curved fruit knife, remove center from loaf of bread in one

    piece, leaving 1-inch shell; set shell and center aside. In large

    bowl, combine cheeses, herbs and onion and toss to mix thoroughly.

    Spoon about 1/3 mix in bottom of bread shell. Using serrated bread

    knife, carefully cut reserved center of bread into 2-inch squares,

    keeping shape intact. Replace in bread shell. Press remaining

    cheese into all openings between pieces.

    Place on baking sheet and heat in 325F oven for 15 minutes or until

    cheese melts. Best when eaten hot.

    1 cup flour

    2 tsp mustard powder

    1/4 tsp. cayenne

    1/2 tsp paprika

    1/2 tsp thyme

    1/2 tsp chili powder

    1/2 tsp salt

    1/4 cup margarine

    2 cups aged cheddar, grated

    1/4 cup cold water

    Preheat oven to 325! F. Combine mustard powder and seasonings with

    the flour and mix well. Cut margarine into the flour mixture.

    Add grated cheese to the flour and mix well. Add the water and

    knead for a short time until the dough forms a ball. Take one

    quarter of the dough at a time and roll out very thin (about 1/8

    inch). Cut into long strips and bake on a greased cookie sheet

    for about 10 minutes or until lightly browned. Allow the strips

    to cool for a short time and then break into 4-inch lengths. Put

    into a container and allow to sit overnight uncovered.

    7/8 cup flour

    1/2 cup butter

    1/4 cup milk

    2/3 cup grated cheddar cheese

    Mix all ingredients in a bowl until a dough is formed. Pat out on

    wax paper or floured board until 1/4 inch thick. Cut in strips

    1/2 inch wide and form into sticks 3 to 4 inches long. Place on

    ungreased baking sheet so they do not touch each other. Bake at

    400 degrees about 12 minutes, until golden brown. Cool on a rack.

    1 can reduced cream

    1 pkt onion soup mix

    1 tsp lemon juice or cider vinegar

    1/2 cup grated tasty cheese

    1/2 cup well drained

    canned whole kernel corn

    20 slices thinly sliced bread

    Mix reduced cream, onion soup mix and lemon juice or cider vinegar.

    Stir in cheese and well drained canned whole kernel corn.

    Remove crusts from 20 slices thinly sliced bread. Spread about 1

    Tbsp over each slice of bread.

    Roll up and secure with a toothpick. Place on an oven tray toothpick

    side down. Brush each roll lightly with melted butter.

    Bake in preheated oven 200 C for 15-20 minutes or until golden

    brown. Remove toothpicks and cut each roll in half before serving.

    Recipe ingredients and directions:

    1 cup flour, sifted

    1/4 tsp salt

    1/4 tsp paprika

    1/2 cup butter or margarine

    6 oz shredded mozzarella cheese

    Sift the dry ingredients together. Cream the butter and the cheese.

    Add the dry ingredients and mix well. Shape the mixture into small

    balls about 1" in diameter. Place them on a lightly greased baking

    sheet and bake them for about 15 to 20 minutes at 350 degrees.

    Recipe ingredients and directions:

    1 cup milk

    1/2 cup butter

    1/2 teaspoon salt

    1 cup flour

    4 eggs

    2 teaspoons sherry

    2 cups shredded cheddar cheese

    Bring to boil in a medium-sized saucepan the milk, butter, and salt

    Add flour, all at once. Continue to cook, stirring vigorously,

    until mixture forms a ball and cleans sides of pan. Remove from

    heat.

    Add eggs one at a time, stirring vigorously after each until each

    is mixed into dough. Add sherry and cheese and stir in until

    thoroughly mixed.

    Drop by teaspoonfuls onto greased pan. Bake at 375 F. for 18 to

    20 minutes. Remove from pan and allow to cool completely on rack.

    May be stored in container in waxed paper, or frozen in airtight

    container.

    Makes about 4 dozen

    These make great appetizers. Mix up some tuna, finely chopped

    celery & onion, and enough mayonnaise or salad dressing (Miracle

    Whip) to make a sandwich spread, and stuff those cheese puffs with

    the mixture. Also try cream cheese and crab…nearly

    anything…Experiment!

    16 oz shredded cheese medium sharp

    1/4 cup butter or margarine

    2 cups plain flour

    2 cups Rice Krispies cereal

    pecan halves

    red pepper to taste

    Lawry’s Seasoning Salt or Accent

    Allow cheese and butter to reach room temperature. Cream together

    adding red pepper to taste. Add flour and mix. Stir in Rice Krispies

    by hand and mix. At this point you will want to take small pieces

    of dough and make into a ball similar to making cookies. If dough

    is hard to handle you may wish to chill before handling. Place ball

    on cookie sheet and flatten with a fork. Top with a pecan half and

    sprinkle with Lawrys seasoning salt or Accent. Bake at 350 degrees

    for about 10 minutes. Cool and store in air tight container. Makes

    about 8 dozen. Great for parties, snacks or as a holiday gift.

    nonstick cooking spray

    1/3 cup chicken broth

    1 envelope unflavored gelatin

    2 cups part-skim ricotta cheese

    1/2 cup grated Parmesan cheese

    2 oz cream cheese, softened

    1/3 cup plain low-fat yoghurt

    3 tablespoons minced fresh basil

    1/4 teaspoon black pepper

    1/8 teaspoon salt

    Lightly coat a glass 8 x 8x 2 inch baking dish with the cooking

    spray and set aside. Pour the chicken broth into a small heavy

    saucepan, sprinkle the gelatin over it, and let soften for 5 minutes.

    Set over very low heat and stir until the gelatin dissolves, about

    5 minutes. remove from heat and set aside. In the large bowl of an

    electric mixer, beat the ricotta cheese, Parmesan cheese and cream

    cheese at modest speed for 1 minute or until smooth.

    Beat in the yogurt, basil, pepper, and salt, then stir in the

    gelatin. Pour the mixture into the pan, cover and refrigerate at

    least 3 hours or until set. To serve, run a thin metal spatula

    around the edges of the cheese mixture and invert onto a large

    platter. Cut into 8 strips one way, then into 6 strips the opposite

    way, to form 48 fingers. Serves 16 as a finger food.
