Cheesy Chile Squares – Appetizer Food Recipes

Recipe ingredients and directions:

4 Tbsp butter

5 eggs

1/4 cup flour

1/2 tsp baking powder

1/8 tsp salt

dash cayenne

2 cup Monterey Jack or Cheddar Cheese (8 oz)

1 cup small curd cottage cheese

1-4 oz can diced green chilies

Preheat oven to 400. Melt butter in 9" square baking pan in oven.

In large bowl, whisk eggs until well blended. Stir in flour, baking

powder, salt and cayenne. Tip baking pan to coat bottom and sides;

add melted butter to egg mixture. Add Jack and cottage cheeses,

and chilies, and blend well.

Pour mixture into buttered pan and bake 15 minutes. Reduce oven

temperature to 350 and bake 30-35 minutes longer, until top is

lightly browned and a knife in center is clean. Let cool on a rack

at least 10 minutes. Cut into 1 1/2 inch squares. Can be made in

advance, cover and refrigerate up to 2 days. Can freeze. Serve warm

or at room temperature.
