Recipe:
Start your rice and let it cook while you get the rest of the food ready. I used 1 cup rice to 2 cups water.
Cook chicken with a little poultry flavoring and drop of pineapple juice. Cook about 15 minutes. Set aside.
Heat a tablespoon of olive oil in pan and cook chopped onions, broccoli and bell peppers for about 15 min or until soft.
Add chicken back in pan
In this order add
1/2 cup brown sugar
1/2 cup Chicken Stalk
1/4 rice vinegar
Now that everything is in your pan add a tablespoon of cornstarch and a tablespoon of water to your pan to thicken the sauce up.
Put the pineapple in the pan and serve over rice! Enjoy

The Italian vegetarian favorite comes to dinner on sandwich night.

Today we have an amazing alternative for dinner or lunch. This is a shrimp and crab stuffed baked potato that is decadent and delicious. This is inspired by a trip that Rick and I took to the Crystal Coast of North Carolina, not far from where we live one afternoon and had a lovely lunch at Sanitary fish market and restaurant. They offered us one of these as an appetizer and how could we resist? We shared this wonderful potato and I knew I had to make it for you!
This is super simple and is really a twice baked potato stuffed with the bounty of the ocean! I used claw crab meat and bay shrimp. I live in a coastal area and am fortunate enough to be able to procure the freshest local seafood available. If you live far from the ocean, I suggest you find a nice frozen option for the shrimp and even a canned crab meat will suffice, however it will not render the same result as the fresh. Please do not use imitation crab meat here because it will just be a horrible disappointment.

Betty demonstrates how to make Spicy Mexican-Style Chicken Tenders. This recipe was sent to me by CptvonChaos, and its original name is “Sneaky Pete’s Chicken Wings/Tenders.” I immediately loved the quick and easy recipe and got his permission to share it with all of you.
Spicy Mexican-Style Chicken Tenders
chicken tenders and/or chicken wings (I used 2 pounds of chicken tenders, and these were quite spicy! You might want to use 3 or 4 pounds of chicken for the amount of coating, if you don’t like them spicy.)
2 Mexican flavor packets—taco, chili, enchilada, fajita, burrito, etc. (I used 1 burrito packet and 1 taco packet.)
gallon-sized Ziploc plastic bag (I used a quart-sized bag, and it was a little small!)
Empty the two Mexican flavor packets into a gallon-sized Ziploc plastic bag. Toss chicken tenders and/or wings into the bag, a few at a time. Shake to coat. Place coated chicken pieces in a baking dish that has been sprayed with cooking oil spray or on a sprayed cookie sheet. Bake at 350 degrees (F) for about 30 minutes. Start checking them after about 20 minutes, and remove them from the oven when they are completely done. Serve immediately and enjoy!!! Thank you for the recipe, CptvonChaos! –Betty

Ingredients & Cooking Directions for Red Velvet Raspberry Cupcakes with Cream Cheese Frosting
Pour flour, cocoa powder, baking powder and salt into a sieve and sift them into a bowl. Next whisk the dry ingredients until well combined and then set them aside.
Step 2: Make red mixture
1/2 cup buttermilk
1 tablespoon raspberry purée
1 teaspoon liquid red food coloring
Pour the buttermilk, raspberry purée and red food color into a container and whisk them together until blended. Then set this mixture aside.
***To make the raspberry purée crush ½ cup of fresh raspberries through a sieve and use the liquid portion for this recipe and reserve the solid portion for a smoothie or other raspberry recipe.
Step 3: Bake cupcakes
1/4 cup soften unsalted butter
3/4 cup granulated white sugar
1/2 teaspoon vanilla extract
1 large egg
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda
Preheat your oven to 350 F. Then place the butter and sugar in a bowl and mix them up. Next, add the vanilla extract and egg to the butter sugar mixture and whisk until smooth and creamy.
Now add in the red liquid mixture alternating it with the dry ingredients and mix them until smooth. You want to repeat this alternating method for about 3-4 times in order to ensure all of the ingredients are well incorporated. Then set the cupcake batter aside.
In a small bowl, mix vinegar and baking soda until it fizzes up. Then quickly add it to the cake batter and mix well.
Next scoop the batter into cupcake liners filling them about 2/3 of the way up. Bake the cupcakes between 18-20 minutes or until a skewer inserted in the center of the cupcakes comes out clean. Then allow them to cool completely before frosting.
To make the frosting, add the cream cheese, butter, and vanilla into a bowl. Then sift in the powdered sugar on top of the vanilla butter cream cheese. Next mix the sugar with the butter and cream cheese until smooth and creamy. Then spread the frosting on top of all cupcakes. Finally place a raspberry in the middle of each cupcake and surround the raspberry with almond slices to create a flower in the middle of all the cupcakes.
****You can eat these cupcakes right away or store them in a refrigerator until ready to consume.

GRILLED VEGETABLE & CHEESE PANINI
Ingredients
•4 slices, Ciabatta bread (or sliced Ciabatta rolls)
•1 medium eggplant, sliced into ¼ ” slices (leave purple skin on)
•1 c. roasted red peppers, sliced
•16 fresh basil leaves (4 leaves per panini)
•1 c. Jarlsberg cheese, shredded
•extra virgin olive oil
•Italian seasoning
•garlic salt and pepper
Instructions
•Pour some olive oil onto a large plate. With a pastry brush, coat both sides of the eggplant slices with oil. Set aside plate.
•Sprinkle garlic salt and pepper over oiled eggplant slices.
•Place several slices of eggplant on a greased panini (or other type) of grill.
•Grill eggplant until the eggplant is tender and seared. Once eggplant is cooked, remove from grill and place cooked slices on a plate. (Repeat above procedure with other pieces of eggplant).
•Take the plate with olive oil and with the pastry brush, gently brush each side of each slice of Ciabatta bread with oil.
•Place oiled bread slices on the grill. Cook until slightly seared and remove from grill.
•If needed (bread should be slightly moist with oil), lightly run the pastry brush over each side of the bread once more.
•Place eggplant slices on both sides of the bread.
•Add shredded Jarlsberg cheese on top.
•Place 2 fresh basil leaves on each side of the sandwich.
•Add sliced fire roasted red peppers on top of each side of the sandwich.
•Sprinkle Italian seasoning and more shredded cheese over the top of each side of the sandwich.
•Place 2 sides on top of one another forming a panini sandwich.
•Place panini on the grill. Cook panini for a few minutes. Cheese will be melted and the bread will be a golden color.
•Serve immediately with a green salad.
