    You have to love a cake that you really don’t have to do much to. This cake is one of those. You can top it off with what ever or leave it plan. Depending on how long you cook it for it can be like a pudding cake or a super moist cake.

    SLOW COOKER CAKE
    1 cup butter, softened
    2 cups raw sugar
    1 pinch sea salt
    1 cup cashew milk (any milk will do)
    1/2 cup olive oil
    2 eggs
    1 3/4 cups flour
    1/3 cup black cocoa powder
    1 1/2 teaspoons baking powder
    1 1/2 teaspoon baking soda
    1 cup boiling water

    Grease slow cooker insert, set aside.
    Combine butter and sugar. Mix well.
    Add milk, oil and eggs. Mix well.
    Combine flour, chocolate powder, baking soda and baking powder. Mix well.
    Add flour mixture to butter mixture. Mix until just incorporated.
    Add water. Mix well.
    Pour batter into prepared insert.
    Place insert into slow cooker.
    Cook on low for 3 – 3 1/2 hours, until a cake tester insert into the cake comes out clean. Let cool. slightly and remove from insert.
    This can can be cooled completely and frosted or dusted with powdered sugar.

    Step by step peach and apricot pie – Savory

    It’s important to keep all your ingredients cool and avoid handling the dough too much.

    Crust
    In a large bowl, blend together the dry ingredients. Cut the butter into pieces. Add the butter and using your hands, a pastry blender or fork, blend until the mixture resembles coarse crumbs. Add the ice water, using your hands to mix the dough just until it just comes together in a ball.

    Refrigerate
    Gather the dough into two balls, shape into flattened disks and wrap each in cling wrap; refrigerate for at least 1 hour (up to 2 days). On a lightly floured surface, roll out one of the dough disks into a 12-inch round.
    Center the dough on a 9-inch pie plate, press it into the edges and use a paring knife or scissors to trim any dough that is hanging over the edge of the pan.

    Filling
    Cut the peaches and apricots into 1-inch slices. Squize the lemon. In a large bowl, combine the peaches, apricots, cardamom, lemon juice, vanilla, sugar, cornstarch, and salt and toss to mix completely. Mound the peach-apricot mixture into the prepared crust.

    Stars
    On a lightly floured surface, roll out one of the dough disks to a 15-inch round. Use a star-shaped cookie cutter to cut the dough into individual stars. Layer the cut-outs over the filling in an overlapping pattern until the entire pie is covered. Transfer the pie to the freezer and freeze for one hour.

    Preheat the oven to 375°F. Remove the pie from the freezer and brush the top crust lightly with heavy cream; sprinkle with the reserved 1 tbsp sugar. Place the pie on a rimmed baking sheet. Bake until the crust is golden, peaches are tender and juices bubbling, about 1 hour, 30 minutes.

    Transfer the pie to a cooling rack and cool completely. Serve at room temperature. That’s how you make step-by-step peach and apricot pie.

    FRIED SAUSAGE STIR FRY

    Ingredients

    4 big chicken sausages, cut into 3 inch pieces and halved
    ¾ cup refined flour
    3 tablespoons rice flour
    Salt to taste
    Crushed black peppercorns to taste
    3 tablespoons Semolina
    2 tablespoons oil+ to deep fry
    4 garlic cloves
    ½ inch ginger piece
    2 medium onions, sliced
    2 green chillies
    1 medium green capsicum, seeded and cut into juliennes
    1 teaspoon red chilli powder
    2 teaspoons cumin-coriander powder
    2 tablespoons tomato ketchup
    1 tablespoon vinegar
    A few fresh coriander sprigs

    Method

    1. Take half cup refined flour, two tablespoons rice flour in a
    bowl. Add salt, crushed peppercorns and mix well. Add
    sufficient water and make a thick batter. Add two tablespoons
    semolina and mix well.
    2. Take remaining refined flour, rice flour, semolina in a plate.
    Add salt, crushed black peppercorns and mix well.
    3. Heat sufficient oil in a kadai. Roll the sausages in dry flour
    mixture, dip in the batter and slide in oil. Deep fry till golden
    brown and crisp.
    4. Chop the garlic cloves, ginger. Drain the sausages on an
    absorbent paper and set aside.
    5. Heat oil in a nonstick pan. Add chopped garlic, ginger and
    sauté well.
    6. Add the onions and sauté till golden brown in colour. Slit green
    chillies in the onion mixture and continue to sauté.
    7. Add capsicum and toss well. Add salt, red chilli powder,
    cumin-coriander powder. Add the ketchup, sprinkle little water
    and mix well.
    8. Add the fried sausages and mix well.
    9. Switch off the flame and add vinegar and crushed black
    peppercorns.
    10. Chop coriander and add to the sausages.
    11. Serve hot garnished with coriander sprig.

    RECIPE:

    Ginger Scallion Sauce
    (Makes about 3 cups)

    •2½ cups thinly sliced scallions (greens and whites; from 1 to 2 large bunches)
    •½ cup finely minced peeled fresh ginger
    •1/4 cup grapeseed or other neutral oil
    •1½ teaspoons usukuchi (light soy sauce)
    •3/4 teaspoon sherry vinegar
    •3/4 teaspoon kosher salt, or more to taste

    Mix together the scallions, ginger, oil, soy, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed. Though it’s best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it’s stirred together up to a day or two in the fridge. Use as directed, or apply as needed.

    In this installment of Mario Batali presents Chef Darren Weston of Lupa Restaurant makes there famous oxtail ragu with fresh garganelli.

    Chef Darren Weston places the oxtail in a brine solution (containing salt and sugar) for up to two days. Next he chops up carrots, celery, and onions fairly small in order to give body to the dish. Then he makes the soffrito, which is created by placing carrots, celery, and onions into a food processor and blended into a fine substance, almost like a paste. Next he places it in a pan mixed with olive oil and slowly cooks it at about 200/250 degrees. Then he begins building the ragu by taking a heavy bottom dutch oven, putting it over medium-high heat, and adding a little bit of olive oil. Just before the smoke point he places in the oxtail to get a sear and removes it. Then he adds the chopped up carrots, onion, and celery from before to the same dutch oven. He sautés this mixture, seasons with salt and pepper, adds some white wine and reduces it down. Then he adds the soffritto sauce, some basic tomato sauce, and whole cherry tomatoes and stirs it all together. After the ingredients are all mixed he adds the oxtail back in. He then proceeds to add a little bit of water, brings it to a boil, and then reduces it down. He lets it go uncovered, simmering for a couple of hours, and until the meet is very tender and is separating from the bone.

    Then, to make the pasta use a 2:1 ratio of flour to egg yolks (just the yolks). Add a little bit of olive oil. mix, and roll the dough out as thin as possible. Using a pizza cutter or knife cut the dough into equal size squares. Then, using a little wooden board wrap the square around a straw and roll it into a tube shape.

    Then, once the meat is falling off of the bones, pick off all the meat and discard the bones. Cook the pasta. Place the oxtail ragu sauce in a pan and add butter, fresh parsley, celery leaves, and a little bit of orange zest. Then, add the cooked pasta and a little bit of the cooking water to the pan. Lastly, add in a little cheese. Adding cheese should always be the last step!
