  • Orange Freeze – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    2 cups orange sherbet

    1 cup orange juice

    1/4 cup milk

    1 sprig fresh mint

    Put the sherbet, juice and milk in a blender and blend for 15

    seconds or just until all the sherbet is smooth. Pour the orange

    freeze into a tall, chilled glass. Place a sprig of mint on top

    and serve immediately.

    Here’s a drink I like, although you need a few other ingredients:

    Extra Nutty Irishman:

    1 oz Frangelico

    1 oz Irish Mist (a liqueur)

    1 oz Irish Cream (I use Carolans usually, Baileys is also good)

    If you don’t feel like springing for the Irish Mist, you can make

    a pretty good drink from just the Frangelico and Irish Cream.

    Recipe ingredients and directions:

    Nectar syrup (see formulas below)

    vanilla ice cream

    club soda

    Pour and inch of nectar syrup into a tall glass. Add a scoop of vanilla

    ice cream and club soda. Stir to mix. Serve with a scoop of ice cream on

    top or whipped cream and a cherry. Club soda may be substituted with any

    unsweetened carbonated drink or with carbonated water.

    NECTAR SYRUP I

    3 cups sugar

    6 cups water

    1 can sweetened condensed milk

    4 tablespoons vanilla extract

    4 tablespoons almond essence

    2 teaspoons red food coloring

    Over low heat dissolve sugar and water. Bring to a boil. Cool. Add the

    condensed milk, vanilla extract, almond essence and red coloring. Stir

    well. Store in refrigerator. Makes about 1-1/2 quart.

    NECTAR SYRUP II

    3 cups granulated sugar

    1-1/2 cups water

    1 tablespoon of vanilla extract

    2 tablespoon almond extract

    1/2 teaspoon red food coloring

    Bring sugar and water to a boil over medium heat. Let mixture cook about 8

    to 10 seconds. Cool. Add vanilla, almond and coloring. Makes about 1 pint.

  • Mulled Wine – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    1 bottle cheap red wine

    1 aromatic apple (eg Cox)

    1 sweet satsuma or mandarin

    12 cloves

    1 stick cinnamon

    nutmeg

    sugar

    fresh ginger

    Pour the wine into a large, non-reactive pot. Fill the bottle again with

    water and add it in. Slice the apple and satsuma straight across into

    thickish slices (skin and all) and stud the apple slices with cloves,

    then chuck ’em in. Throw in the cinnamon stick. Grate in some fresh

    nutmeg, and add a few slices of fresh ginger. Heat up the whole shooting

    match (do not boil) and leave to burble quietly on the stove. After about

    half an hour taste and adjust spices, and add sugar (I usually sprinkle

    sugar on to the fruit slices and then stir ’em around, gently). Leave it

    sitting on a very low heat to keep warm, and serve continuously all

    Christmas! (Keep adding more wine and water, and refreshing spices and

    fruit). My sister uses orange juice instead of water to dilute, and it’s

    just as good.

    Yield: 5 Cups

    32 oz Apple juice

    10 Pineapple sage leaves

    15 Lemon verbena leaves

    1/8 ts Aniseed, ground

    1/4 ts Ground cloves

    Cinnamon sticks

    — 1 for the recipe,

    — and one for each guest

    1/2 c Pineapple

    — canned (unsweetened)

    — OR fresh

    1/2 c Pears (peeled, diced)

    In a noncorrodible pot, bring apple juice to a boil, then reduce heat

    to medium and add remaining ingredients. Simmer for 30 minutes, or

    longer for stronger flavor. Remove the cinnamon stick, fruit, and

    herb leaves. Serve with a cinnamon stick in each mug.

    Makes 1-1/4 quarts

    Recipe ingredients and directions:

    24 whole cloves

    1 orange

    8 c apple cider

    4 c cranberry juice

    1/2 c sugar

    2 cinnamon sticks

    1 tsp Angostura bitters

    24 whole allspice

    1 c dark rum

    Press cloves into orange and place it in a heavy saucepan. Add water,

    cranberry juice, sugar, cinnamon, bitters and allspice. Bring to a

    simmer, stirring until sugar dissolves. Reduce heat to very low, cover

    and simmer 1 1/2 hours. Strain into punch bowl or crockpot.

    Two tablespoons rum to each cup is optional.

    Recipe ingredients and directions:

    For consumption (40-50 servings)

    3 pieces ginger 6 small oranges

    1 3" stick of cinnamon 1 gallon apple cider

    8 whole cloves 1 quart pineapple juice

    3-4 cardamon seeds 1/2 teaspoon salt

    6 lemons

    Tie spices in cheesecloth. Peel and cut lemons & oranges into thin

    slices and add to cider and juice. To this, add spice bag and bring

    to a low simmering boil. Stir as it simmers for 15 minutes then add

    salt and stir vigorously. Serve hot.

  • Mulled Cider – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    Take equal amounts of Cran-x-berry juice and Apple juice. It can be

    Cran-raspberry, Cran-apple, or just plain Cranberry juice; low-cal

    varieties work just fine. Cheaper off-brands are fine too.

    Pour them in a heavy pot. Add a handful of cinnamon sticks broken into

    1-2" pieces and a bunch of cloves (whole cloves). Optionally, add some

    citrus rind (i.e., lemon or orange peels). Bring to a low simmer, let it

    simmer for an hour or so.

    Strain out the cinnamon and cloves (and rinds) — this is important

    because if you leave the cloves and cinnamon in, the liquid will get

    bitter.

    Serve hot. This keeps a long time in the fridge, and can be nuked or

    re-heated at will. It’s great with a shot of whiskey/brandy/rum!

  • Mocha Mudslide – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    1 cup fat-free milk

    2/3 cup sliced ripe banana

    2 tablespoons sugar (some can be omitted if using frozen yogurt)

    1 teaspoon instant coffee granules

    1/4 cup vanilla low-fat yogurt or frozen yogurt

    Banana slices (optional)

    Place first 4 ingredients in a blender; process until smooth.

    Place the blender container in the freezer; freeze 1 hour or until

    slightly frozen. Loosen frozen mixture from the sides of blender

    container; add yogurt. Process until smooth, and garnish with

    sliced bananas, if desired. Serve immediately. Yield: 2 servings

    (serving size: 1 cup)

    For a chocolate-flavored shake, use reduced-fat chocolate milk

    instead of the plain fat-free milk, and reduce the sugar to 1

    tablespoon.

    Recipe ingredients and directions:

    1oz Bailey’s Irish Creme

    1oz Vodka (quality relatively unimportant)

    1oz Rum (light/white preferably)

    1oz Creme de Cocoa

    1oz Kahlua

    10 ice cubes (plastic freezer tray sized)

    Blend until frothy. (ObBlender: I prefer a TGIFriday’s blender. They’re

    tough to find but have a great blade setup, wide pitcher and a pulsing

    ice crushing setting perfect for blender drink preparation.)

    Pour into a large glass and insert a straw.

    Pour Kahlua into the straw until the straw is full.

    Top with powdered cinnamon.

    It’s a one drink "blitzing". 🙂

    5 Ounces Kahlua

    5 Ounces Bailey’s Irish Cream

    5 Ounces Absolut Vodka

    Pour ingredients into a blender filled with

    ice. Blend on high until smooth.

    FROZEN KAHLUA MUDSLIDE

    .75 oz Vodka

    .5 oz Kahlua

    .5 oz Bailey’s Irish Cream

    1 oz Vanilla Ice Cream

    .5 cup Crushed Ice

    Pour all ingredients into a Blender. Blend

    well at High speed. Pour drink into a

    Collins glass and garnish with a Maraschino

    Cherry.

    FROZEN MUDSLIDE

    2 oz Vodka

    2 oz Kahlua

    2 oz Bailey’s Irish Cream

    6 oz Vanilla Ice Cream

    Blend alcohol with ice cream. Serve in

    frosted glass.

    KAHLUA MUDSLIDE

    .5 oz Vodka

    .5 oz Kahlua

    .5 oz Bailey’s Irish Cream

    1 oz Cream

    Fill a shaker half full with ice cubes. Pour

    all ingredients into shaker and shake well.

    Strain drink into a Cocktail glass and serve.

    KAHLUA MUDSLIDE ON THE ROCKS

    .5 oz Vodka

    .5 oz Kahlua

    .5 oz Bailey’s Irish Cream

    1 oz Cream

    Fill a Shaker half full with ice cubes. Pour

    all ingredients into Shaker and shake well.

    Fill a Collins glass almost full with crushed

    ice and strain drink into glass. Garnish

    with a Maraschino Cherry and serve.

    MUD SLIDE SHOOTER

    1/3 Vodka

    1/3 Kahlua

    1/3 Irish Cream

    measure all ingredients in to shot glass

    Blend until smooth, but don’t overblend.

    Serve in a nice tall glass (I use a pint glass).

    1 (12 oz.) can evaporated milk

    6 oz. water

    6 oz. blended whiskey

    2 oz. brandy

    4 oz. (2) eggs

    Pinch salt

    2 tsp. vanilla

    3 oz. sugar

    Separate the egg yolks from whites and beat separately. Blend

    all ingredients – fold in stiff egg whites – age in cold storage 24

    hours. Dust individual servings with nutmeg. Makes 1 quart. Serves 10.

    Recipe ingredients and directions:

    1 1/2 quarts water

    1/2 cup instant chocolate drink mix

    1/2 cup sugar

    1/4 cup instant coffee granules

    1/2 gallon vanilla ice cream

    1/2 gallon chocolate ice cream

    1 cup whipped cream, whipped

    Chocolate curls, optional

    In a large saucepan, bring water to a boil. Remove from the heat. Add

    drink mix, sugar and coffee; stir until dissolved. Cover and refrigerate

    for 4 hours or overnight. About 30 minutes before serving, pour into a

    punch bowl. Add ice cream by scoopfuls; stir until partially melted.

    Garnish with dollops of whipped cream and chocolate curls if desired.

    Yield: 20-25 servings (about 5 quarts).

    Mocha Malted Coffee Cooler

    1 cup cold water

    3/4 cup cold milk

    1/4 cup light cream or whipping cream

    3 tablespoons instant chocolate malted milk powder

    2 tablespoons sugar

    1 tablespoon instant coffee crystals

    1 cup ice cubes

    Whipped cream (optional)

    In a blender container combine water, milk, light cream or whipping cream,

    instant malted milk powder, sugar and coffee crystals. Cover and blend

    until smooth. With blender running, add ice cubes, through hole in lid,

    one at a time, blending until crushed. Pour into chilled glasses. If

    desired, top with whipped cream.Serve immediately. Makes 4 (6 oz)

    servings

    NOTE: when I made this, I used regular malted milk powder (has more

    malted flavor), and chocolate syrup. I could get it as chocolatey as I

    wanted. I also used expresso instead of coffee crystals. Very intense on

    all of the flavorings!!

    2 teaspoons instant coffee granules

    2 teaspoons cocoa

    2 teaspoons powdered non-dairy creamer

    1/3 cup milk — or water

    Place dry ingredients in a blender. Add milk or water and blend

    until ice is slushy. Pour into a tall glass and serve with a straw

    or spoon.

  • Moroccan Mint Tea – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    Makes 4 cups

    apporx 1 1/4 pints (750 ml) water

    3-4 tsp tea leaves

    20-30 spearmint leaves

    4 sprigs of mint

    Boil the water in the kettle.

    Warm the teapot. Put the tea and mint leaves in and add the

    boiling water.

    Leave it to brew for 2 or 3 minutes.

    While brewing, warm tumblers by rinsing in hot water.

    Put one sprig of mint in each tumbler.

    Pour tea into each tumbler through a strainer. It is normal

    to add sugar lumps to the teapot, but it can be added tot the

    tumbler to taste after pouring.

    Now this is the original Moroccan mint tea recipe. I drink an awful

    lot of tea, lemon or mint, and this is my quick mint tea version:

    Make tea as you do normally; cut some sprigs of mint from the

    plant in the pot on the balcony, rinse under the tap, put into

    a big mug, pour tea into mug: enjoy!

  • FRESH MINT LIQUEUR – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    1 1/4 cups fresh mint leaves, slightly packed (measured after washing)

    3 cups vodka

    2 cups granulated sugar

    1 cup water (be sure to use distilled unless your tap water is very pure)

    1 teaspoon glycerine

    8 drops green food coloring

    2 drops blue food coloring

    Wash leaves in cold water. Shake or pat dry gently with paper

    towels. Snip each leaf in half or thirds, discard the stems.

    Measure cut mint leaves, packing slightly.

    Combine mint leaves and vodka in aging container (large ceramic

    crocks or glass jugs work well for this purpose). Cap and let

    stand in a cool place for 2 weeks, shaking occasionally.

    After initial aging, pour liqueur through a colander into a large

    bowl to remove leaves. Discard leaves.

    In a saucepan, combine sugar and water. Bring to a boil, stirring

    constantly. Let cool. Add cooled sugar syrup to mint liqueur

    base, stirring to combine. Add glycerine and food coloring; pour

    into aging continer for secondary aging of 1 to three more months

    (my experience is that most herbal or fruit liqueurs hit their

    prime flavor after nearly a year of aging time, but taste periodically

    to check progress). Makes approximately 1 quart.

    Variation: If you like a slightly heavier emphasis on the mint,

    adjust to taste by adding drops of mint extract (up to one teaspoon)

    to the liqueur.

    Recipe ingredients and directions:

    You can use a highball glass for this drink, but if you do, it

    won’t frost. Traditionally, a silver julep cup is used.

    Put 6 sprigs of mint in glass with 2 teaspoons of sugar. Muddle

    gently with the back of a wooden spoon until mixture forms a paste.

    Fill halfway with crushed ice, add 1 1/2 jiggers of bourbon. Don’t

    stir. Fill rest of the way with crushed ice. Stick it in the

    freezer until the glass frosts. Garnish with mint sprigs and a

    straw.

    PUMPKIN MILKSHAKE

    Ingredients :

    1 cup solid packed pumpkin

    1/2 cup brown sugar, firmly packed

    1 tsp ground cinnamon

    1/2 tsp ground nutmeg

    1/2 tsp ground ginger

    1/2 cup reconstituted Minute Maid frozen concentrated orange juice

    1 qt vanilla ice cream

    In blender container, combine all ingredients; blend until smooth.

    Serve immediately in short glasses or punch cups. If desired,

    garnish with licorice stick "stirrers". Pumpkin, orange juice and

    spices add a new twist to a milkshake, sure to be a hit with the

    kids. Makes 8 servings (1/2 cup).

    3/4 cup ground dark roast coffee

    2 teaspoons ground cinnamon

    6 cups water

    1 cup milk

    1/3 cup chocolate syrup

    2 tablespoons light brown sugar

    1 teaspoon pure vanilla extract

    whipped cream — for garnish

    ground cinnamon — for garnish

    Place coffee and cinnamon in filter basket of coffeemaker. Add

    water to coffeemaker and brew as directed. 2. In saucepan, blend

    milk, chocolate syrup and sugar. Stir over low heat until sugar

    dissolves. 3. Combine milk mixture and brewed coffee; stir in

    vallina. Garnish with whipped cream and cinnamon. makes 6 cups.

  • Cafe Flambe, Flamed Coffee – Beverages and Drinks Recipes

    Recipe ingredients and directions:

    1 lemon — thinly sliced

    1 orange — thinly sliced

    10 ounces maraschino cherries — including liquid

    10 cloves

    1 stick cinnamon

    1 teaspoon anise seed — crushed

    1/4 teaspoon cardamom seeds — crushed

    1 cup apple cider

    1 cup sugar

    8 cups water

    3/4 cup instant coffee

    3 1/2 tablespoons sugar

    1 cup brandy — 90% proof

    Combine all the ingredients down to and including the 1 cup of

    sugar in a large punch bowl. Cover with a loose lid and set it

    aside in a warm place to ferment for 3-4 days, stirring occasionally.

    (If fermentation takes place before the time to use it, refrigerate

    it. If fermentation has not taken place by the time to serve it,

    don’t worry – just use it as it is.) Pull the fruit and spices to

    the center of the bowl.

    Bring the water and powdered coffee to the boil and simmer for 5

    minutes or until full-bodied.

    Pour the coffee around the base of the fruit and spices and place

    the bowl over a small flame or gentle heat.

    In each demitasse cup put a teaspoon of sugar and 1-2 teaspoons of

    heated brandy. (To heat the brandy, put the quantity needed into

    a tiny saucepan or soup ladle and heat it over a gas flame. Be

    careful not to ignite it.)

    Pour 4 tablespoons of heated brandy over the fruits and spices in

    the bowl, taking care not to mix the brandy into the liquid or it

    won’t ignite. Ignite the brandy in the demitasse cups and serve

    the drink to guests while your partner is igniting the punch bowl.

    Turn out the lights and try to serve the ignited cafe flambe while

    it is flaming.

    Recipe ingredients and directions:

    3 3-inch cinnamon sticks

    1 vanilla bean, split lengthwise

    3/4 cup ground dark roast coffee

    10 cups water

    1/2 cup whipping cream

    1 tablespoon dark brown sugar

    Coffee liqueur

    Place cinnamon in coffee pot. Scrape in vanilla seeds and add pod.

    Brew coffee with 10 cups water. Whip cream to soft peaks. Add

    sugar and beat until stiff peaks form. Pour coffee into cups; add

    liqueur to taste. Top with cream.
