    Total Time: 2 hours 30 minutes

    1 lb ground Italian sausage
    1 yellow onion, chopped
    2 garlic cloves, minced
    2 cans (14 oz) chicken broth
    1 can (15 oz) cannellini beans, rinsed
    2 cans (14.5 oz) Italian stewed tomatoes
    2 cups fresh baby spinach

    In a large skillet over medium heat simmer (stirring frequently) sausage, onion and garlic until fully cooked. Add mixture to 6 qt slow cooker insert followed by remaining ingredients, less spinach.

    Cover and cook on high for 2 hours. Just before serving add spinach leaves and stir until wilted. Pleasant Tastings!

    BETH’S FEED ME FAST CHICKEN RECIPE
    Serve 2 adults + 2 kids

    INGREDIENTS:
    3/4 lb (340 g) Chicken Tenders
    ¼ cup (60 ml) low sodium soy sauce
    1 tbsp (15 ml) Mirin
    1 tsp (5 ml) toasted sesame oil
    2 ½ (12.5 ml) tsp honey
    1 garlic clove, minced
    3 tbsp (45 ml) cornstarch
    1 tbsp (15 ml) flavorless oil (canola or vegetable)
    a pinch of sesame seeds
    1 ½ cups (325 g) broccoli florets
    drizzle of toasted sesame oil
    Pinch of red pepper flakes
    1 packet microwaveable brown rice

    METHOD:
    Place rice in microwave and cook according to package instructions. Usually takes about 4 mins to complete.

    Then prep the chicken. Place cornstarch in a large bowl. Cut chicken into bite sized pieces, toss in the cornstarch and set aside.

    Heat oil in a large skillet on medium high. At the same time, heat large pot on medium high with a shallow amount of water on the other burner, covered.

    Combine soy sauce, mirin, toasted sesame oil, honey and garlic in a bowl. Stir to combine and set aside.

    Then once the oil is shimmering add the chicken. Cook until golden brown on one side. Flip chicken, once cooked through add the sauce. Allow to simmer until chicken is coated and sauce has thickened.

    Meanwhile, throw the florets into the water. Turn off the flame. Cover and steam broccoli while sauce is thickening on chicken.

    Then in a large bowl, place the cooked rice on the bottom, on one side add the broccoli on top. Sprinkle broccoli with a drizzle of toasted sesame oil and a few red pepper flakes. On the other side add the chicken and sprinkle with sesame seeds.
    Enjoy!

    Ingredients:
    One Avocado
    One Banana
    One Strawberry
    1/4 Cup of Cocoa (four tablespoons)
    1/4 Cup of Honey (four tablespoons)
    1/8 Cup of Coconut (two tablespoons)
    Teaspoon of Vanilla Extract
    1/4 Cup of Almond Milk (80ml)

    Method:
    In a Medium mixing bowl, half your avocado, take the stone out and scoop into the bowl. Chop the banana and add it, mash them together (stab holes in the banana to make it easier). Add all your ingredients except the strawberry and whisk together. Slice your strawberries and without chopping them fully and add to the top. Sprinkle some coconut and cocoa powder to finish! Enjoy one of the easiest and best paleo desserts the Chocolate Avocado Mousse!

    2 Squirts Sriracha (10-20g)
    2 Teaspoons Black Pepper
    2 Teaspoons Chili Powder
    1 Green Pepper
    1 Red Pepper
    1 Onion
    5-6 Cloves Garlic
    1 Can Dark Red Kidney Beans (Reduced Sodium) (16oz)
    1 Can Fire Roasted Diced Tomatoes (14.5oz)
    1/2 Can Diced Tomatoes (No salt added) (7.25oz)
    1 Can 99% Fat Free Baked Beans (28oz)
    1 Cup Water
    Half packet (18g) Chili Seasoning Mix
    2 Tablespoons Milled Flax Seed (Optional)

    Calories in the whole recipe:

    Calories: 2296
    Fat: 15g
    Saturated Fat: 1g
    Sodium: 3394mg
    Potassium: 4481mg
    Carbs: 242g
    Fiber: 76g
    Sugar: 68g
    Protein: 245g

    Wash and cut your chicken into halves. Bake chicken on 375 for 20:00. Cut chicken into small pieces. Combined the rest of the ingredient into whatever you’re using to cook your chili. If you’re using a crock pot cook on low for 2 hours. Add in 99% fat free beans after 2 hours. Cook for another 2 hours on low heat. Add in flax seed (optional). Portion out and enjoy!

    Potato Chips

    1. Cut 1 medium potato into 1/8 inch slices ( 3.2 Millimeters )
    2. Put the slices on a paper towel or parchment paper and add a few pinches of salt to taste
    3. Microwave on high for 4 minutes
    4. Remove immediately from the paper towel or it may stick
    5. Put in an oven on 400 degrees for between 7 to 10 minutes ( Till they brown )

    Strawberry Cheese Cake

    1. Grind 1.5 Cups of Graham Crackers in a bag, or blender
    2. Add 3 TBs of Margarine or 0% Fat Yogurt ( Go with the Margarine for the crunch )
    3. Blend the above and put in the bottom of a pan

    Mix the following in a blender and poor on the graham cracker crust

    1. 2 Cups of Strawberry Chobani Yogurt
    2. 2/3 Cup Sugar
    3. .5 Cup of Egg Beaters or Egg Substitute
    4. 2 tsp Vanilla Extract
    5. 3 TB Corn Starch
    6. Bake at 350 degrees for about 30 minutes

    Fake Mayo Recipe

    Add the following to a blender and blend

    1. 3 TB 0% Fat Plain Yogurt
    2. 1 tsp Dijon Mustard ( I’ve only ever used Grey Poupon, but anything should be fine )
    3. .5 TB Fresh Chopped Parsley
    4. 1 tsp Garlic Powder
    5. 2 tsp Capers
    6. Dash of Paprika to taste

    Fake Sour Cream Recipe

    Add the following to a blender through the spout while blending

    1. 1 Cup 0% Fat Cottage Cheese
    2. 1 TB Lemon Juice
