    What you’ll need:
    1/2 lb boneless, skinless chicken breasts, cut into 1″ pieces
    4 cloves garlic, minced
    1 (14.5 oz) can low sodium chicken broth
    1 cup water
    1 head broccoli, chopped or 2 cups frozen broccoli florets
    8 ounces dry pasta (penne, ziti, mostaccioli, etc)
    1 cup grated parmesan cheese
    1/4 cup heavy cream or half and half
    pinch of nutmeg

    In a large skillet over medium-high heat, brown chicken in a bit of oil. When cooked through, add in garlic and saute until fragrant, about 30 seconds. Add in chicken broth and water. Bring to a boil while scraping the bottom of the pan to release all the browned bits. When boiling, add in broccoli and pasta. Stir and cover. After 4-5 minutes, stir again to make sure pasta is not sticking. Replace cover and cook for another 15 minutes or until pasta is done and liquid is absorbed. Turn off heat and add in parmesan, cream and nutmeg. Stir to combine and to melt the cheese and then serve. Serves 4-5. Enjoy!!

    Easy Lemon Chicken Potato Casserole

    Here’s the recipe:
    Ingredients

    2.5 cups condensed cream of mushroom OR cream of chicken soup (the equivalent of 2 cans)
    1/2 cup milk
    1.5 lbs. Yukon gold potatoes, very thinly sliced (no thicker than 1/8″)
    2 cloves garlic, minced
    1 small white onion, peeled and thinly sliced
    1.5 lbs. boneless, skinless chicken breasts
    salt and freshly-ground black pepper
    1 lemon, thinly sliced and halved (into half coins)
    (optional garnish: chopped fresh parsley or fresh thyme)
    Method

    Preheat oven to 425 degrees F.

    Add condensed soup and milk to a saucepan and whisk to combine. Heat over medium-high heat until simmering, stirring frequently. When it reaches a simmer, remove from heat and set aside.

    Meanwhile, in a separate large mixing bowl, add potatoes, onion, garlic, and chicken. Pour in the condensed soup mixture, along with a generous pinch of salt and pepper, and gently toss to combine until the potato and chicken mixture is evenly coated.

    Transfer mixture to a 9 x 13 baking dish. Tuck lemon wedges into the mixture randomly. Then cover the top of the pan with aluminum foil.

    Bake for 1 hour or until the potatoes are tender. Carefully remove the foil, and change oven to the high “broil” setting. Broil the casserole for an extra 2-3 minutes to crisp up the top, watching very carefully so that it does not burn.

    Remove pan from oven and serve warm.

    CHICKEN ENCHILADA CASSEROLE

    Preheat oven to 375 F.
    Lightly grease of spray a 13″ by 9″ baking dish. Set aside.

    3 cups chicken, diced or shredded (about 3 chicken breast)
    1/2 cup corn, fresh, frozen or canned (drain liquid from canned corn)
    2 tablespoons green onions, thinly sliced (about 4) extra for garnish
    1/2 teaspoon ground cumin
    1/4 teaspoon cayenne pepper
    1/4 teaspoon chili powder
    1/4 teaspoon garlic powder
    1/4 teaspoon black pepper
    2 (10 ounce) cans enchilada sauce
    1 (4 ounce) can Green Chilies, roasted & chopped
    1/4 cup sour cream
    2 cups (8 ounces) Colby Jack cheese, shredded
    8-12 Corn Tortillas

    1. In a large mixing bowl. Combine chicken, corn and green onions. Toss well. Set aside.

    2. In a medium bowl. Add enchilada sauce, sour cream, green chilies, cumin, cayenne pepper, chili powder, garlic powder & black pepper. Whisk well.

    3. Add 1/4 cup of enchilada sauce to bottom of prepared baking dish. Arrange 4-6 corn tortillas on top of enchilada sauce. Begin to layer half of chicken mixture, 1/3 of shredded cheese and half of enchilada sauce, Repeat with corn tortillas, remaining chicken mixture, 1/3 shredded cheese and remaining enchilada sauce. Top with remaining cheese.

    4. Cover dish with foil and bake for 30-40 minutes. Remove foil and broil until the cheese is bubbly and golden.

    5. Garnish with diced tomatoes & thinly sliced green onions, if desired.

    6. Cool 20-30 minutes.

    Makes 6-8 servings

    2 heaping cups mixed nuts
    1-1/2 teaspoons garam masala
    1 teaspoon celery salt
    2 Tablespoons olive oil
    2 Tablespoon light brown sugar
    3 sprigs fresh rosemary, finely chopped to make about 3 teaspoons
    Pinch salt

    Put a large frying pan on medium heat. Line a large baking sheet with foil.

    Put the nuts into the warm pan and toss around for about 3 minutes until they are lightly toasted.

    Add the garam masala and celery salt and toss around with the nuts so that they are evenly coated.

    Add the olive oil, sugar and rosemary and stir again to mix. When the nuts have darkened and well coated, transfer to the prepared aluminum foil lined pan and sprinkle with salt to taste.

    BINGO!!! This is an VERY close dupe of Zippy’s macaroni mac salad. SOOOO DELICIOUS!!!! This is a “Hawaiian style” macaroni salad and yes, it contains a bit of mayo.

    There are a billion and one ways to make macaroni salad. This one is from the recent local cookbook I have purchased and I modified it to how I like it, but here is the recipe in full:
    6 oz. uncooked weight elbow macaroni
    3 oz. imitation crab, shredded
    2 tsp. grated carrots, squeezed of excess liquid
    1 c. Best Foods (or Hellman’s) mayonnaise
    1 tsp. minced celery
    1 tsp. minced onion
    1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. sugar
    1/8 tsp. hondashi (Japanese bonito fish soup base)

    Cook macaroni until soft, drain well and cool completely. In a large bowl combine macaroni with imitation crab, carrots, mayonnaise, celery, onion, salt, pepper, sugar and hondashi. Mix well and refrigerate for four hours. Before serving, mix well and add more mayonnaise if needed.

    1 C. sugar, divided ¼ tsp. ground nutmeg
    3 T. lemon juice ½ tsp. ground cinnamon
    ½ C. apple juice or water ½ C. milk
    1 C. flour
    2 tsp. baking powder
    Whipped topping or vanilla ice cream, optional

    Hi, Kristi in the Rada Kitchen, and today I’m making apple cobbler. This is one of the recipes out of our 101 Recipes with Apples cookbook. I have some apple trees in my backyard so I have all different varieties, it doesn’t matter. It will use all different varieties of apples.

    The first thing you need is four cups of thinly sliced apples. Now to peel those, I like to use the Rada Vegetable Peeler. It’s really sharp, it’s really easy to move the peeling. This little end can get out little blemishes from your apples or potatoes. These are home-raised apples, so they will have some blemishes. Just cut them out. My favorite apple knife is the Heavy Duty Paring Knife. It’s really sharp and can thinly cut those apples.

    Once you’ve sliced and peeled those thin cups of apples, add a half cup of sugar, three tablespoons of lemon juice, and a half cup of apple juice. Stir that up, and now pour these into an 8×8 baking pan. Lightly grease it. I’m going to use the Rada Stoneware baking pan, which you don’t need to grease.

    Now set these aside and in another bowl, we’ll mix the dry ingredients. In a separate bowl, take one cup flour, two teaspoons baking powder, a 1/4 teaspoon salt, a 1/4 teaspoon ground nutmeg, and a 1/2 teaspoon ground cinnamon. Just whisk that together.

    In this bowl, I’m going to add a 1/4 cup of butter that’s been softened and a half cup sugar. Whisk that together till it gets creamy. You can do this in a mixer too, I just like to use my Handi-Stir so I don’t have to get out my mixer. Makes it easy.

    Just mix this until it’s smooth and creamy then we’re going to add a half cup of milk. Just mix that in well. Then we’re going to add our flour mixture. Just mix that until it’s blended. Now I’ll spread this batter over the apples. Now bake this in a preheated 450 degree oven for 40 minutes or until the crust is brown and the filling is bubbly.

    My apple cobbler is all ready to serve. I’m going to use the Serverspoon. It works great to serve stuff. It also whips and stirs. That’s the apple cobbler, one of the recipes in the 101 Recipes with Apples cookbook.
