Learn how to make this chicken broccoli garlic alfredo dinner in just 20 minutes using only a skillet! A super simple one pot meal! Great for weeknight meals when you don’t want a fuss but also when you want something a lot better than something from a box. 😉
What you’ll need:
1/2 lb boneless, skinless chicken breasts, cut into 1″ pieces
4 cloves garlic, minced
1 (14.5 oz) can low sodium chicken broth
1 cup water
1 head broccoli, chopped or 2 cups frozen broccoli florets
8 ounces dry pasta (penne, ziti, mostaccioli, etc)
1 cup grated parmesan cheese
1/4 cup heavy cream or half and half
pinch of nutmeg
In a large skillet over medium-high heat, brown chicken in a bit of oil. When cooked through, add in garlic and saute until fragrant, about 30 seconds. Add in chicken broth and water. Bring to a boil while scraping the bottom of the pan to release all the browned bits. When boiling, add in broccoli and pasta. Stir and cover. After 4-5 minutes, stir again to make sure pasta is not sticking. Replace cover and cook for another 15 minutes or until pasta is done and liquid is absorbed. Turn off heat and add in parmesan, cream and nutmeg. Stir to combine and to melt the cheese and then serve. Serves 4-5. Enjoy!!

+Samar Masmoudi, because with the chicken broth and parmesan cheese, there
is already 2400mg sodium in the entire dish. There is no need for more
salt.

Does anyone know how and where I can find heavy cream in Mexico? I tried
making this, but I used the wrong type of cream and the sauce was sweet!
