    Crunchy Protein Power Wrap

    1 large whole wheat tortilla
    ½ cup canned salmon or tuna, flaked
    1 boiled egg, chopped
    2 tbsp hummus
    salt and pepper
    ½ cup carrots, shredded
    ½ cup red bell pepper, julienned
    ¼ English cucumber, sliced

    In a medium bowl, mix salmon, egg and hummus.
    Spread mixture on a large tortilla.
    Top with carrot, bell pepper and cucumber.
    Roll.
    Enjoy!

    Tangy Thai Tofu Wrap

    1 large whole wheat tortilla
    1 tbsp peanut butter
    ½ lime juiced
    1 tsp soy sauce
    1 tsp honey
    ¼ tsp ginger, freshly grated
    hot chili flakes to taste
    1 cup pressed tofu, cut into strips
    OR 1 cup chicken or salmon, cooked and shredded
    ½ cup red cabbage, shredded
    ½ cup carrots, shredded
    ½ cup red bell pepper, julienned
    crushed peanuts (optional)

    In a small bowl, combine peanut butter, lime juice, soy sauce, honey, ginger and chili flakes. Whisk well.
    Use ¾ of the dressing to marinate the tofu for at least 30 minutes.
    Place tofu strips on a parchment-lined baking sheet.
    Bake at 375°F for 20 minutes, flipping once during cooking.
    Allow tofu to cool completely.
    Toss bell pepper, carrots and cabbage in remaining ¼ of the dressing.
    Place cooled tofu on a whole wheat tortilla and top with dressed veggies.
    Roll.
    Enjoy!

    1 large whole wheat tortilla
    ¼ red onion, diced
    ½ green bell pepper, diced
    ½ cup cremini mushrooms, sliced
    ¼ tsp garlic powder
    salt and pepper to taste
    hot sauce to taste
    1 cup cooked chicken OR roast beef
    2 slices provolone cheese

    Heat olive oil in a large frying pan.
    Cook onion, pepper and mushrooms, until softened, about 5-7 minutes.
    Add cooked chicken,garlic powder, salt, pepper and hot sauce and cook for another minute.
    Place provolone on a whole wheat tortilla.
    Top with chicken mixture.
    Roll.
    Enjoy!

    How to Make the Best Chocolate Chip Cookies!

    Hey everyone! This is the best chocolate chip cookie recipe for chewy on the inside, crispy on the outside cookies! These cookies can satisfy any chocolate craving, and will be gone in minutes at a party! They’re also very easy to make by hand — no stand mixer required! Enjoy, and don’t forget to comment down below and let me know what you’re favorite kind of cookie is!

    CORRECTION: It should be 3/4 STICK (6 T.), not 3/4 CUP, of butter. Sorry for the inaccuracy!

    Ingredients
    Makes about 20 medium sized cookies

    2 cups all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    6 T. (3/4 cup) butter, melted
    1 cup packed brown sugar
    1/2 cup white sugar
    1 tablespoon vanilla extract
    1 whole egg + 1 egg yolk
    1 cup semisweet chocolate chips or chunks

    Directions:
    1. Preheat oven to 325.
    2. Whisk together flour, baking soda, and salt in a medium bowl.
    3. Stir butter, white sugar, and brown sugar until well combined.
    4. Add in egg and egg yolk and vanilla extract to butter and sugar mixture, and stir to combine.
    5. Add in chocolate chips and mix in until evenly distributed.
    6. Scoop out 2 T. of dough per cookie, and roll cookie dough into balls. Place on Silpat or parchment paper lined baking sheet. Bake for 12-15 minutes or until edges are golden brown.

    Ingredients
    1/2 cup bulgur wheat
    1 cup water
    1 15 oz can pinto beans, rinsed and drained
    1/2 cup monterey jack cheese, grated
    1/2 cup carrot, grated
    1/2 teaspoon salt
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1 tablespoon oil
    Preparation
    1. Place the bulgar wheat and water in a pot. Bring to a boil, then reduce to a simmer and cover for 13 minutes.
    2. After the bulgur has cooked, place in a bowl and let cool.
    3. Place the pinto beans in a food processor and pulse until finely chopped.
    4. Add the cooked bulgur, cheese, carrot, salt, garlic and onion powder to the beans in the food processor and pulse to combine.
    5. Form into patties.
    6. Heat oil in a large saute pan over medium heat and cook the burgers for 3 minutes on each side.
    7. Serve with accompaniments.

    Eggplant Parmesan Lasagna ~ Gluten Free:

    Sauce:

    8 Hot Sausages that are Gluten Free ( You can use Sweet or half Hot and half Sweet Sausages)
    Remove the Sausage from the casing

    In a Large Pot Brown and cook:
    Add a little bit of Extra Virgin Olive Oil
    Sausage Meat
    1 Medium Onion Chopped
    When almost done add desired amount of Garlic and cook for 2 minutes
    Drain the fat

    Put the Pan on high heat
    Deglaze the pan with
    1 cup of Red Wine (Use real wine not Cooking wine that you can get in the condiment section,, its so salty)
    Cook off the wine
    (Wine is optional,, it add a great flavor to the sauce)

    After the wine has cooked off

    Turn the heat down to low and add:

    1- 29 oz can of Tomato Puree
    2- 14-1/2 oz cans of Diced Tomatoes
    1- 8 oz can of Tomato Sauce

    Add spices/seasonings to taste

    Hot Red Pepper Flakes
    Basil
    Parsley
    Italian Seasoning

    Add water if the Sauce is to thick and simmer 2-3 hours

    Check the Sauce to see if you need to re-adjust the seasonings
    and also check if the sauce is to thick add some water or if its to thin add some Tomato Paste

    Prepare the Eggplants

    If desired partially peel the Eggplants
    Slice into 1/4″ slices
    Put the Eggplant slices into a large Colander and sprinkle with Salt. Making sure each piece has been salted.
    Let sit for one hour.. this helps the Eggplant sweat and removes the bitterness.
    After an hour thoroughly rinse the eggplant slices and place on Kitchen Towels to Dry.
    Also place a Kitchen towel on the top of the Egg Plant slices to dry.

    You will need 5-6 Eggs.

    Whisk the eggs in a bowl

    Place Gluten-Free breadcrumbs in a second bowl seasoned with Garlic and Onion Powder. (If you are not Gluten-free user regular Breadcrumbs)

    Pre-heat oven to 450*

    Brush 2-3 Cookie Sheets with Extra Virgin Olive Oil

    Dip each eggplant slice in the egg then into the Breadcrumbs
    Place on the Cookie Sheets

    Bake for 10 minutes.
    Spray with an Olive Oil Spray and turn over and continue to bake 10 more minutes or until Golden Brown.

    Remove the Breaded Eggplant slices from the cookie sheets and place on a wire wrack.

    Cheese Filling:
    (I have seen recipes where people double the amount of Ricotta, I find the amount in the recipe just right,but if you prefer more go ahead and add it)
    1- 15 oz Ricotta
    ½ Cup 4 Blend Pizza Cheese (Or Mozzarella)
    1 Egg
    Basil and Parsley to taste

    Mix with a fork or Spoon.

    Turn oven to 400*
    Spread a generous amount of sauce on the bottom of a Large Baking Pan
    Arrange 1/3 of the Eggplant Slices single Layer
    Spread with ½ the Ricotta Mix
    Top with more sauce
    Sprinkle with Parmesan Cheese
    Repeat layering ending with the Sauce
    Cover with Foil
    Place the Pan on a Cookie Sheet in case it spills over the edge

    Bake 40-45 minutes

    Remove the Foil
    Add more Parmesan Cheese
    and 1 ½ Cups of 4 Blend Pizza Cheese (Or Mozzarella)

    Place back in the oven uncovered for
    15-20 minutes or until cheese is golden brown

    Cool at least 10-15 minutes before cutting and serving.

    This meal freezes great in a storage container.

    2 pinches of Salt
    100ml Water (3.4 fl oz)

    Sesame Oil

    – Sauce –
    1 tbsp Soy Sauce
    1 tbsp Black Vinegar or Rice Vinegar
    Karashi Hot Mustard or Ichimi, red chili pepper

    Blueberry Pancakes

    INGREDIENTS
    3 tbsp flour
    1/4 teaspoon baking soda
    2 tsp maple syrup/ honey/ agave
    1 tbsp milk
    1 tbsp flavorless oil (canola, coconut, vegetable etc)
    1 eggs
    1 tbsp blueberries, frozen

    METHOD
    1. Whisk together all ingredients in a microwave safe mug. Mix thoroughly until no lumps.
    2. Microwave roughly for 1 minutes (timing is based on my 1200W microwave so your timing might vary)
    3. Enjoy immediately!
    4. Top with a little maple syrup and some more blueberries

    Sweet Potato Hash Potatoes

    INGREDIENTS
    1 small sweet potato (around 6oz/1 cup)
    2 tbsp peppers, chopped
    1 tbsp red onion, chopped
    2 tbsp grated cheese
    salt and pepper.
    2 tsp rosemary, fresh or dried
    1 nob of Butter

    METHOD
    1. Peel and chop small cubes of the sweet potato
    2. Add into your microwave safe mug and cover totally with cold water.
    3. Cook for 3-4 minutes in the microwave until it is tender. it will turn an orange color.
    (Check the potatoes halfway and stir so it doesn’t get too hot and overspill)
    4. Drain off the water
    5. Add in the peppers, onion, cheese, butter, rosemary, salt and pepper and mix everything well together.
    6. Put back in the microwave and heat up these ingredients together for another 40 seconds until hot and the cheese melts.
    7. Enjoy a quick and filling breakfast!!!

    Peanut Butter and Jelly Oatmeal (Vegan)

    INGREDIENTS
    3 tbsp rolled Oats (not quick or steel cut oats)
    6 tbsp water
    2 tbsp Nut milk (or regular milk)
    2 tsp peanut butter
    2 tsp Raspberry/ Strawberry Jelly (jam)

    METHOD
    1. Whisk together all ingredients in a large microwave safe mug.
    2. Cook for 1 minute, then stop the stir. Cook again for another 1 minute stir and continue cooking until done. This stirring will stop it overheating and spilling over in your microwave. It will take roughly 3 minutes to cook in total
    3. Take out and add a little milk if desired.
    4. Top with raspberry or strawberry jelly and enjoy!!!

    Healthy Whole Wheat Muffins

    INGREDIENTS
    3 Tbsp Whole wheat flour (you can also use plain flour)
    ½ teaspoon baking powder
    ¼ teaspoon ground cinnamon
    pinch of fine sea salt
    2 inch piece of banana
    2 tsp maple syrup/ honey/agave
    2-1/2 tbsp milk (dairy or non-dairy)
    1 tablespoon raisins

    METHOD
    1. In a microwave safe mug mash up the banana with a fork.
    2. Add in the rest of the ingredient and mix together until blended. Then stir in the raisins
    3. Microwave for 45 seconds -1 minute. (timing is based on my 1200W microwave so your timing might vary)
    4. Enjoy immediately!

    Omelette

    INGREDIENTS
    2 eggs
    2 tbsp Milk
    1 scallion/ green onion chopped
    1 tsp Parsley
    salt and pepper

    METHOD
    1. Add eggs to mug and whisk together with a fork
    2. Add parsley, scallions, milk, salt and pepper. Whisk until all ingredients are completely mixed together.
    3. Microwave for one minute. Stir and break up any large chunks of egg.
    4. Cook for another 45 to 60 seconds or until eggs are set.
    5. Top with a sprinkle scallions, salt and pepper
    6. Enjoy!

    Caribbean Style Hot Wings | Grilled Chicken Wings Recipe

    This is my take on a Caribbean Style hot wing cooked on a grill over charcoal.

    You can buy whole chicken wings and cut them yourself but I’ve found that the Party size hot wings are just the right size for grilling.

    To thaw the chicken wings place them in a large bowl and cover with water. If you have time, you can let them slow-thaw in the refrigerator but thawed in water they’ll be ready in about 1 ½ hrs.
    Once the hot wings have thawed, season both sides with my All Purpose Seasoning (Here’s the ratio: 1 cup Salt, 1/2 cup Granulated Garlic, 1/4 cup Ground Black Pepper)

    I’m cooking these chicken wings over charcoal, so I use my weber kettle set up for direct grilling. You’ll need 1 chimney of hot coals and be sure to oil the rack to help prevent the hot wings from sticking.

    While the charcoal is getting ready I make the Caribbean sauce for the grilled chicken hot wings. It needs about 40 minutes to simmer on the stove.

    Here’s the recipe for the grilled chicken hot wing sauce:

    – 2 Tablespoon Butter
    – 2 Green onions chopped fine (white parts only)
    – 1 Cup Water
    – ½ Cup Ketchup
    – ½ Cup Light Brown Sugar (packed)
    – ¼ Cup Honey
    – 1/4 Cup apple cider vinegar
    – ¼ Cup Frank’s cayenne pepper sauce (more if you like it hot)
    – 1 Teaspoons ground black pepper
    – 1/4 Cup Worcestershire sauce
    – Juice of 1 Lemon
    – 2 Tablespoons Jerk Seasoning (recipe below)
    – 1 Teaspoon cornstarch

    Instructions
    Melt the butter in a small sauce pan. Add the chopped onion and garlic and saute’ for 1 ½ minutes. Add the remaining ingredients except for the cornstarch. Heat to a simmer.

    In a separate small bowl whisk the cornstarch in 2 tablespoons of ice water to create a slurry.

    Pour the cornstarch mixture into the sauce pan while stirring. Once it reaches a low boil reduce the heat and stir occasionally the mixture will thicken. Continue to cook on low heat for 30-40 min.

    Jerk Seasoning Recipe
    – 2 Teaspoon salt
    – 1 Teaspoon garlic powder
    – 1/2 Teaspoon ground black pepper
    – 1/4 Teaspoon dried parsley flakes
    – 1/4 Teaspoon cayenne pepper
    – 1/4 Teaspoon dried thyme
    – 1/4 Teaspoon onion powder
    – 1/4 Teaspoon ground Cinnamon
    – 1/4 Teaspoon ground Clove
    – 1/4 Teaspoon ground Nutmeg
    – 1/4 Teaspoon ground Allspice

    As soon as the charcoal is ready, spread it out in the grill and place the cooking rack over it.

    Let the grill temperature settle, it needs to be about 350-375 degrees for chicken wings, medium high heat. Arrange the wing pieces on the grate and set a timer for 4 minutes. Check the grilled hot wings for color and flip them after four minutes.

    Continue cooking on the opposite side for 4 more minutes. It takes about 15-20 minutes to fully cook these chicken wings, so working in 4 minute intervals works great.

    As they get close to done the chicken skin will appear crisp and should be golden brown. It needs to be 165 at least but be sure to stick the thermometer in the meat and not against the bone.

    Now that the chicken wings are grilled, it’s time to toss them in the sauce. Place a few chicken wings in the bowl and pour a little sauce on top. Toss them around and let the sauce coat the grilled chicken wings. I garnish them with the tops of the greens onion sliced thin just for appearance, but these Caribbean Style Hot Wings are ready to eat.

    LEMON CHILLI CHICKEN LOLLYPOP

    Ingredients

    2 tablespoons lemon juice
    1½ tablespoon green chilli paste
    8 chicken lollypops
    1 tablespoon oil + for deep-frying
    Salt to taste
    2 tablespoons chopped garlic
    1 egg
    2 tablespoons cornstarch
    ½ tablespoon chopped ginger
    2 spring onion bulbs, sliced
    ½ teaspoon sugar
    1 stalk spring onion greens, diagonally sliced

    Method

    1. Heat sufficient oil in a pan.
    2. Take chicken lollypops in a bowl. Add salt, 1 tablespoon garlic, ½ tablespoon green chilli paste and 1 tablespoon lemon juice and mix well. Add egg and mix again. Add 1 tablespoon cornstarch and mix well.
    3. Deep-fry chicken in hot oil till golden and crisp. Drain on absorbent paper.
    4. To prepare sauce, heat 1 tablespoon oil in a non-stick pan. Add ginger, mix and sauté for 30 seconds.
    5. Add remaining garlic and remaining green chilli paste, mix and sauté for a minute.
    6. Add spring onion bulbs, mix and sauté till translucent. Add some water, mix and cook for a minute.
    7. Dissolve remaining cornstarch in some water to make a smooth slurry. Add to the pan, mix and sauté for a minute.
    8. Add sugar and mix well. Add fried chicken lollypops and toss to mix. Add salt, remaining lemon juiceand spring onion greens and toss to mix.
    9. Serve hot.

    Preparation Time: 10-15 minutes
    Cooking Time: 15-18 minutes

    Pasta Carbonara

    3 cups penne pasta
    1 package turkey bacon
    1 cup half & half
    1 stick butter
    2 teaspoons dried parsley
    2-3 cloves garlic
    1 teaspoon salt
    1/3-1/2 cup grated parmesan cheese
    ¼ cup green onions, sliced (optional)
    Additional grated parmesan for topping

    Cook pasta according to package.

    Cook bacon.

    In a large skillet, add half & half, butter, parsley, garlic and salt. Cook over medium low heat until butter is melted. Be careful not to allow it to boil. Drain pasta. Add to cream mixture. Chop bacon. Stir in bacon and parmesan cheese. Sprinkle each serving with green onion, chopped basil and additional parmesan cheese, if desired.

    Ingredients:

    2-1/4 cups all-purpose flour
    1-1/4 cups packed light brown sugar, divided
    2 tsp baking powder
    1-1/4 tsp ground ginger
    1 tsp salt
    1 cup whole milk
    1/4 cup vegetable oil
    2 tsp vanilla extract
    2 pears peeled, cored, and cut into 1/2″ cubes
    3/4 cup water
    1 cup pear juice or nectar
    3 Tbsp butter
    Preparation:

    Lightly grease the inside of a 6-quart slow cooker with nonstick cooking spray. Set aside.

    Whisk together the flour, 1/2 cup packed brown sugar, baking powder, ginger, and salt in a medium-size bowl. In a small bowl, whisk together the milk, oil, and vanilla. Add the liquid mixture to the dry ingredients and mix until just combined. (The batter should be really thick.) Add the chopped pears and mix until evenly incorporated. Spoon the batter into the slow cooker.

    Combine the remaining ingredients in a medium-size saucepan set over medium heat. Bring the mixture to a boil, stir constantly until the sugar dissolves, and then reduce the heat to a simmer. Cook, uncovered, for 3 minutes. Pour the hot liquid over the cake batter.

    Tightly secure paper towels or a cotton dishcloth over the mouth of the slow cooker. Place the lid on top. Turn the crock pot on low and cook for 3-1/2 hours, or until the cake is completely set in the center. Cool slightly before serving.

    Today I’m sharing with you one of my favourite meals, Thai Beef Salad. This Thai Beef Salad Recipes is an extremely quick and easy salad recipe to make for dinner or lunch. It’s healthy and full of vegetables. It has an amazing fresh tastes because of all the fresh herbs and lime juice and tastes just like summer.

    If you did want to make this a vegetarian recipe you can easily cut out the steak. Feel free to use any other type of meat as well.

    RECIPE

    8 oz / 225 g Steak (or any other meat)
    5 oz / 140 g Egg Noodles
    1 Carrot
    1/2 Cucumber
    2 oz / 50 g Snow Peas
    16 oz / 450 g / 2 cups Spinach
    6 g / 1/4 cup Basil
    15 g / 1/4 cup Coriander
    5 g / 1/4 cup Mint
    15 g / 1/8 cup Crushed Peanuts
    60 ml / 1/4 Cup Sweet Chili Sauce
    30 ml / 2 Table Spoon Lime Juice
    15 ml / 1 Table Spoon Soy Sauce
    Salt & Pepper

    Trim excess fat from the steak and coat with oil and salt & pepper. Fry steak in an extremely hot griddle pan for about 2-3 minutes on each side. Remove steak from the pan and leave to rest on a chopping board while you prepare the remaining ingredients. Bring water to the boil in a pot and cook the egg noodles according to package instructions. On a clean chopping board cut up your vegetables and herbs. To make the salad more interesting try and cut the vegetables in different ways such as using a vegetable peeler. Toss the vegetables and herbs together in a bowl. In a small bowl mix together the sweet chili sauce, lime juice, and soy sauce for the dressing. By this point your noodles should be about done. Slice the steak into thin strips. Place the noodles on the plate and top with the vegetables, steak, and dressing. Optionally you can add some crushed peanuts for some extra texture and taste. Serve with a lime wedge.

    Hello! I’m finally back with another Paleo recipe for you. Well, it’s technically not totally Paleo if you want to be very strict (it contains yogurt), but it’s definitely Primal. Of course, it’s grain free and gluten free like all of my recipes. The chicken makes you feel full, the apples offer an interesting sweet twist, and the yogurt refreshes you on a hot summer day. This recipe is great for weight loss, bodybuilding, clear skin and steady energy throghout the day. My hubby and I have been obsessed with this simple dish (have you noticed all of my food is extremely simple and quick?), and I hope you will be, too!
