    Mirapakaya Bajji | Stuffed MIRCHI BAJJI | MOST POPULAR EVENING SNACKS IN INDIA

    Ingredients:
    100 g fresh Green Chilies (sliced into two halves)
    1 tsp Mustard Seeds (broken/ powdered)
    ½ tsp Aniseeds
    ½ tsp Cumin Seeds
    ¼ tsp Turmeric Powder
    ½ tsp Coriander Powder
    ½ tsp Dried Mango Powder/ Amchur OR ½ tsp Lemon Juice
    A pinch of Asafetida/ Hing
    1 tbsp Mustard Oil
    Salt (to taste)

    How to make Masala Mirchi:
    Place a saucepan on heat and heat mustard oil.
    Add asafetida, cumin seeds and aniseeds. Cook for a few seconds.
    Add mustard seeds and stir for 4 to 5 seconds.
    Add green chilies and sauté for about 1 to 2 minutes.
    Add turmeric powder and coriander powder. Mix well.
    Add salt and cover the pan. Allow the chilies to cook for 2 to 3 minutes.
    Add amchur powder or lemon juice. Stir for another 1 minute.
    These fried chilies keep up well for a week when stored in an airtight container. Recipes,

    Vegetarian Pie

    Enjoy the sweet delicious treat savory pastry .
    These vegetarian pies have a flaky crust made with flour and shortening. It has a 100% vegetable filling. For a delicious filling use soya granules capsicum and paneer with Indian Spices.

    Procedure:
    For The Filling:
    1. Heat oil and add onions and grated garlic.
    2. Saute until golden.
    3. Add finely chopped tomatoes, carrot and capsicum.
    4. Saute for 2 minutes.
    5. Bring soy granules in a pot of water to boil. Allow it to cool.
    6. Squeeze out the cooked granules and add it to the pan.
    7. Add red chilly powder, cumin powder, coriander powder and salt.
    8. Cover and cook until done.
    9. Finally add crumbled paneer and coriander leaves, saute for a minute and remove from flame.
    10. Allow it to cool down completely.

    For The Pastry:
    1. Mix salt and flour in a bowl.
    2. Add the shortening and mic with the fingers to cut the shortening into the flour. Do not knead.
    3. When the flour resembles large crumbs, add ice cold water little by little until the flour comes together to a crumbly dough.
    4. Divide it into two portions one larger than the other.
    5. Roll out the larger portion and cut 3″ circles out of the disc.
    6. Grease tiny pie tins and line them with the circles. Press against the edges to remove the extra dough.
    7. Fill the pastry tins with 1 tbs of filling.
    8. Roll out the other portion and cut out smaller circles to fit the top of the pastry tins.
    9. Place the smaller circles on top of the filled pastry shells and press the edges with a fork to close the opening.
    10. Preheat oven to 200C.
    11. Arrange the tins on a tray and bake until golden. It may take nearly 30 minutes to bake.
    12. Remove from the tins and serve while still hot.

    Vietnamese Seafood Soup Recipe

    I love the food of Vietnam, particularly the wide range of marvellous soups, which may be served for breakfast, lunch or dinner. This one relies for its success on a well-made Asian-style stock, which can also be used for other dishes. It can also be made with commercially available stocks, but it’s better made from scratch. Ask your butcher for chicken ‘frames’ and/or necks. You’ll need about 2 kgs. The soup itself may be made with vegetables, chicken, seafood, or mushrooms, using the same stock. This version uses prawns, scallops and mushrooms.

    Serves 6

    Ingredients:
    Asian-style Stock:
    2kg chicken bits
    (carcasses and necks)
    1 small knob of ginger,
    peeled and cut into large chunks
    2 tbsp dried Chinese mushrooms
    (or pieces)
    1 onion, roughly chopped
    2 or 3 cloves garlic,
    crushed or minced
    1 anise star
    2 tbsp fish sauce
    2 bay leaves
    2 tbsp chopped coriander
    stalks and roots (optional)
    2 or 3 strips of mandarin
    or orange rind (optional)

    Method:
    In a large saucepan, put 3 litres of water and add the stock ingredients. Bring to the boil.
    Reduce heat and allow to simmer for 40 minutes. (If cooked too long the stock may become bitter).
    During simmering, skim off any scum that appears on the surface.
    Strain into large, wide bowl. Remove surface fat by placing on paper towel and removing.
    (Alternatively, you could refrigerate the stock and next day, scrape off the solidified fat).

    Soup:
    2 litres Asian-style stock (as above)
    or bought stock
    500g rice noodles
    250g prawns
    250g scallops
    150g mushrooms
    6 or 7 spring onions, chopped,
    white and green parts kept separate
    1 tbsp peanut or canola oil
    2 or 3 cloves garlic,
    chopped or minced
    2 or 3 tsp finely sliced ginger root
    4 tbsp chopped coriander
    1 tbsp mirin
    1 tbsp fish sauce
    1 or 2 tsp chilli sauce (according to taste)
    Salt and pepper to season
    Method:
    In a large saucepan, briefly cook the white part of spring onion with garlic
    and ginger in the oil.
    Pour in the stock and bring to the boil.
    Add remaining ingredients except noodles.
    Simmer very gently until prawns are just cooked.
    Stir in noodles and continue simmering for 1 minute.

    Degree of difficulty: Low
    Keepability: Best eaten immediately.
    Wine companion: Sauvignon blanc, Semillon, or blend.

    Authentic Thai Recipe for Chicken Wing Appetizers | ปีกไก่ทอดเกลือ |Peek Gai Tod Gluea

    Try my recipe for Spicy and Salty Fried Chicken Wings, ปีกไก่ทอดเกลือ (Peek Gai Tod Gluea). They are neither too spicy nor too salty. They’re just right. I used a marinade that includes our homemade red curry paste, and then the wings are fried in a batter containing the same sauce, giving these Thai-style wings an amazing blend of flavors and aromas from fresh lemongrass, galagal, kaffir lime, and dry roasted cumin, coriander, and peppercorns. They are very easy to make up in advance, and are normally served at room temperature making them an easy party food or appetizer that your guests love.

    Servings: 8 – 12
    Prep time: 10 minutes
    Cooking time: 10 minutes
    Ready in: 30 minutes

    Ingredient List:

    3 pounds Chicken Meat (chicken wings)
    2 Tablespoons Thai Red Curry Paste (or more for a stronger flavor)
    1 – 2 teaspoons Sun Dried Thai Hot Chili (ground whole hot chili, seeds in)
    1 teaspoon Sugar
    1 Tablespoon Oyster Sauce
    1 – 2 teaspoons Fish Sauce
    1/2 cup Water (or more as needed)
    6 – 8 Kaffir lime leaves (optional, used as a garnish)
    1/2 cup Vegetable Oil (or more as needed)

    Directions:

    1: Whisk together 1 tablespoon of red curry with the water, oyster sauce, fish sauce, and sugar, and ground chili.

    2: Poor over the chicken wings and marinate them for at least 4 hours.

    3: Remove the chicken from the sauce. Add about 1 – 2 tablespoons of flour to the sauce and whisk it together to make a thin batter.

    4: Lightly dust the chicken with flour, then dip them into the batter until they are well coated.

    5: Fry in deep oil for 3 – 5 minutes on each side. Drain well. Top with crispy fried kaffir lime leaves.

    Ingredients/ Method
    I used spinach, onions, zucchini which I sauteed in a pan with some salt, pepper and Balsamic vinegar.
    Optional but You can also use portobello mushrooms in the wrap but to get their flavour out, marinate them with some Salt/Pepper and some oil+balsamic Vinegar for at least 30 mins. Then pan-fry them until they shrink in size then cut them in bite size pieces and place on your wrap.
    For the wrap, I used carrot/Pumpkin wraps which I picked from Costco. Spread cream cheese on them before adding veggies on. Instead of veggies you can also use Avocado, hummus or other sorts of spreads.
    Load the wrap up, fold and enjoy.

    Baked Ziti with Spinach and Chicken Sausage

    Ingredients
    – 1 lb fusilli (penne, rigatoni, rotini)
    – 1 lb low fat chicken sausage (casings removed if not in bulk)
    – 1 medium onion, chopped
    – 1 clove garlic, chopped (or frozen cube of garlic) (optional)
    – 28 oz can diced tomatoes
    – 14 oz can crushed tomatoes
    – 10 oz washed baby spinach
    – 8 ounces low-fat shredded mozzarella cheese
    – basil leaves or pesto cubes (optional)

    Direction
    Preheat oven to 375.
    Drizzle olive oil in large saucepan. Heat over medium heat and add sausage. Break sausage into clumps and saute until golden and mostly cooked through (about 10 minutes).
    Add onion and garlic (if using). Saute until onion is soft and translucent (about 8 minutes). Add liquid (chicken broth, wine) to bottom of pan if sausage sticks.
    Add tomatoes, with their juices. Simmer until sauce is thickened (not too much liquid), about 10 minutes. If using basil, add.
    Add spinach and allow to wilt.
    Cook pasta according to al dente directions on box.
    Mix pasta into sauce. Poor half pasta into 9×13 pan. Top with mozzarella. Pour in remaining pasta. Top with remaining cheese.
    Cover with aluminum foil. Bake for about 30 minutes until ziti is bubbling.
    You can put covered, uncooked ziti in refrigerator and store until ready to bake and serve fresh!

    Delicious Apple Crisp
    Recipe for a single 9×13 pan
    !/2 cup sugar
    3 tbsp all purpose flour
    1 tsp cinnamon
    1/8 tsp salt
    8 large Mutzu or Granny Smith apples

    Topping:
    2 cups brown sugar
    1 cup flour
    1 cup rolled oats
    1 cup butter
    (Stir together dry ingredients and then cut in the butter until you have coarse crumbs.)

    Stir together sugar, flour, cinnamon and salt. Add apples. Toss. Sprinkle topping over apples. Bake at 375 for approx 45 min (depends on how you like your apples)

    Macaron Shells:
    – 1 cup of powdered sugar (aka confectioner’s sugar, icing sugar)
    – 3/4 cup of almond flour (ground almonds)
    – 2 egg whites at room temp
    – 4 tbsp of granulated sugar
    OPTIONAL: purple food coloring and lavender buds for decoration

    Directions:
    1. Whisk together the powdered sugar and almond meal until fully combined. Then sift through a fine sifter to ensure that the macarons will be smooth on top. There will be chunks of almond that cannot be sifted, so discard those.
    2. Beat the egg whites until frothy, then add half of the granulated sugar. Beat for 1-2 more minutes and add the rest of the sugar. Beat at high speed for an additional 5 minutes until you get soft peaks.
    OPTIONAL: add some purple food coloring (a little more than you want because the color fades as the macarons bake)
    Then beat until you get stiff peaks.
    3. Add half of the dry ingredients into the meringue and fold carefully. Once fully combined, add the rest of the dry ingredients and continue to fold everything together. Continue folding until you get the consistency of “molten lava” and it should be thick, loose, and flow in one long stream, but should NOT be thin. Do not undermix or overmix, or else the macarons will not turn out right.
    4. Place the batter into a piping bag with a round tip (if you don’t have an icing tip, just cut the corner off). Then pipe round circles onto a baking sheet lined with parchment paper. You can make them any size you want, but I made mine 1 1/2 inches in diameter.
    5. Let them sit for 30 minutes or even up to 1 hour. Just make sure they sit until you can touch them and they are dry.OPTIONAL: sprinkle some culinary lavender on half of the macarons you are making once they are slightly dry (just for decoration :D)
    6. Then bake them at 300 degrees Fahrenheit, or 150 degrees Celsius for 8 minutes. Then take the baking sheet and turn it around and bake it for another 8 minutes. The macarons should be hard and smooth and top and have feet.
    7. Let them completely cool before filling them with the lavender buttercream filling.

    Lavender buttercream:
    – 1/2 cup (1 stick) of unsalted butter at room temp
    – 2 cups of powdered sugar (aka confectioner’s sugar, icing sugar)
    – 1/2 cup of heavy cream
    – 1 teaspoon of culinary lavender buds

    Directions:
    1. Beat softened butter until creamy.
    2. Add the powdered sugar half at a time and mix slowly so that the sugar doesn’t go flying everywhere.
    3. Add the cream (I used about half of what we measured out) until the consistency of the buttercream is nice and spreadable.
    4. Add a splash of lavender extract if you have any. This will make the lavender flavor more noticeable. OPTIONAL: add purple food coloring for a nice purple color!
    5. Transfer the buttercream into a piping bag.

    Ingredients

    2 tbsp grapeseed oil
    1/2 red cabbage (rough chopped)
    1/2 white cabbage (rough chopped)
    1/2 red onion (sliced)
    1 cup chopped cherry tomatoes (halved or quartered)
    2 cups shredded carrots (shredded)
    4 cloves fresh garlic (minced)
    1/2 cup chopped fresh cilantro (chopped)
    2 tsp 21 seasoning mix (I get mine at Trader Joes)
    2 tsp turmeric
    1.5 tsp sea salt (or to taste)
    2 tsp thyme
    1-2 dashes habanero pepper sauce (or to taste)

    INSTRUCTIONS

    Add oil to pan and heat
    Add garlic, cook for a few seconds
    Add onions, cabbage, carrots and seasoning mix (cook for about 2 minutes)
    Add tomatoes, and toss
    Add habanero sauce, and toss
    Add cilantro, and toss

    Serve & ENJOY

    NOTE: We sometimes enjoy this yummy stir-fry with Jamaican fried dumplings, but today we just had it with toasted sprouted bread! Either way it’s delicious!

    -HEALTHY PUMPKIN PIE RECIPE-

    Ingredients For the Crust:
    – 1/2 cup raw cashews
    – 1/2 walnuts
    – 1/2 cup dates

    How To Prepare The Crust:
    1. Add ingredients plus 1 tablespoon of water to a food processor.
    2. Pulse until ingredients come together.
    3. Press mixture into pie molds.

    Ingredients For the Filling:
    – 1 cup pumpkin puree
    – 1 1/2 cups coconut creme
    – 1/4 cup maple syrup
    – 2 tablespoons of flaxseed meal

    How to Prepare Filling:

    1. Add ingredients into a bowl and mix thoroughly.
    2. Pour mixture over the crust and let freeze for at least 2-3 hours.
    3. Enjoy as is or drizzle some delicious chocolate sauce over the top for more desserty goodness!
