    BUTTERMILK FRIED CHICKEN

    How To Make Buttermilk Fried Chicken

    Clean your chicken

    Sit your chicken pieces in a big bowl. Add 2 tbs of Salt, 2 tbs of Apple Cider Vinegar, and cover chicken with water and allow the chicken to soak in the Salt/water/vinegar solution for 30 mins – 1 hr. Afterwards, rinse your chicken well

    Seasoning the chicken

    Season your chicken with Seasoning Salt, Adobo Season, Onion Powder, Black Pepper, Oregano Season, Cayenne Pepper, and Paprika season

    Marinate In Buttermilk

    In a big bowl add 3-4 cups of buttermilk. Add 3 tbs of Parsley Flakes, 1 tbs of Minced Garlic, and 7-10 squirts of Hot sauce. Stir in well. Place seasoned chicken in the buttermilk and cover with a top. Let the chicken soak in the buttermilk mix for 8 to 24 hrs

    Coating

    Sit your buttermilk chicken on a plate and let the excess buttermilk drain off the chicken. Coat the chicken with flour and allow the flour coated chicken to sit for 20 minutes

    Deep Frying

    Meanwhile, pre heat your oil. Place lots of oil in a big pot over medium heat. Allow heat to heat up for 7-10 minutes.

    Add your flour coated chicken pieces to the hot oil and deep fry the buttermilk chicken until it floats to the top (It floating to the top indicates that it’s done)

    Ingredients:

    1 cup salted soda crackers, crushed
    2 cups grated extra old sharp cheddar cheese
    1/4 cup diced purple onion
    1/2 cup diced tomato
    1 tbsp pickled jalapeno or pecorino peppers (can add more if you like more heat)
    1 tbsp extra virgin olive oil
    8 pimento stuffed olives cut in halves

    Mix it all together and then drizzle in the olive oil. Roll into small balls and press a half an olive into each and shape with your hands to make an eyeball. Bake in a 350 degree oven on a parchment lined baking sheet for 7-10 minutes a side turning once so that they are golden brown.These soft cheesy little morsels are super tasty and are also fabulous dipped into fresh salsa.

    Fresh Salsa

    Ingredients :

    798 ml (30 oz) tin diced tomatoes
    1/4 cup each chopped red and green pepper
    1 tbsp diced jalapeno pepper
    1 tsp each salt, pepper, minced garlic
    pinch dried chiles
    6 tbsp fresh cilantro
    juice f half a lime

    Put everything into a blender or food processor. Blend to the consistency you like and then for an extra special halloween touch, serve it in a small hollowed out pumpkin surrounded by multi-couloured taco chips.

    Add 2 ounce of vodka to a large shaker filled with ice along with an ounce and a half of peach schnapps, the juice of half a lime, and one cup of peach, or peach and mango juice. Shake and pour in equal amounts into 4 chilled martini glasses.

    Stuffed Jalapeno Peppers

    Fry a half pound of Italian sausage, drain well, and then mix in 2 tbsp of your favorite chili – save the rest for your yummy mummies. Add a half cup of softened cream cheese, and 1 cup of grated gruyere or parmesan cheese. Stir well and stuff into 6 large halved and seeded jalapeno peppers. Bake in a 425 degree oven fr 20 minutes.

    More than twenty years after Massimo Morozzi’s “Pasta Set” (1985), Alessi once again brings its innovative spirit to the world of pasta. And it does so by proposing a new type of pot – and an apparently new method of cooking – so radically different from the classic Italian tradition as to make more conventional sorts veritably bristle with indignation (I say ‘apparently’ because, as explained below, Alain Ducasse has in fact rediscovered an ancient cooking method used by olive pickers, which he has used his talent to update for us).
    The surprising thing is that, apart from the fame and expertise of Ducasse, multi-starred French chef who conceived the new “Pasta Pot” along with young designer Patrick Jouin, it is not only highly practical but makes a truly different pasta with sauce, giving it a new and interesting flavour (i.e. the starches are not discarded with the cooking water but are totally absorbed by the pasta, and the same holds true for the ingredients of the sauce).
    Every step of the cooking process is amalgamated: first you put the dry pasta in the “Pasta Pot”, sautéing lightly if you wish; then the various ingredients of whichever sauce you wish to make; then last comes water or broth, all at once or gradually, cooking everything together with the specially designed cover, stirring occasionally. In just a little more time than normally required to boil the pasta according to the classic method, your pasta with sauce is done. And preparation has required only a single pot, which you can – indeed must – bring to the table and serve directly from its special trivet.
    The revival of this ancient method is accompanied by a booklet containing a number of recipes developed by Ducasse himself according to an escalating scale of refinement, at the end of which – and I can attest to this, having personally tried every one of them – one has achieved perfect mastery of the utensil and is ready to create intriguing recipes of one’s own.
    It is safe to predict that over the next few years, just as with Morozzi’s “Pasta Set”, we will be seeing a veritable explosion the world over of “new” pans inspired by this small but significant innovation in the field of cookware.

    “The integrity of an ancient cooking method adapted to the necessities of modern life: that’s what the Pasta Pot gives you. With this type of cooking, called ‘by concentration’, the starch keeps the pasta together and the undiluted flavours retain their intensity. The result is a wholesome, natural, exceptionally tasty dish that’s quick and easy to prepare.
    In the old days, when olive pickers would go out to work in the olive groves, they had very little water to cook with. To solve the problem, they cooked their pasta like a risotto: after having blended it with the herbs and mushrooms and other vegetables they’d found while walking, they covered it all with the little water they had until it was absorbed. This is the traditional method, which I’ve revived through my restaurant Le Louis XV in Monaco, whose secrets Alessi is about to reveal!”

The first item is my favorite which I order pretty much every time I come to Veggie Grill is call the Crispy Chickin’ Plate. It comes with cauliflower mashed potatoes with gravy sauce and steamed kale. It’s a must try on my list. It’s super delicious. Next up is the Santa Fe Crispy Chickin’ Burger. Comes with lettuce, tomato, avocado and french fries. I also ordered a couple side dishes. Their Sweetheart Fries and Quinoa Kale Salad. Go check them out, they have great services in a very friendly environment. ENJOY!

    Ingredients
    1 2-3 pound chicken, cut up into 10 pieces (or equivalent weight of chicken pieces)
    2 teaspoons salt
    2 teaspoons coarse pepper
    2 teaspoons smoked paprika
    Breading:
    1 egg
    1/2 cup plain yogurt
    1/2 cup water
    Dash Tabasco, to taste
    1 cup all purpose flour
    1 tablespoon cornstarch
    1/4 teaspoon cayenne pepper
    Oil for frying, 1/2-3/4 inch deep

    Ingredients

    1 cup finely chopped potatoes
    1/2 cup finely chopped french beans
    1/2 cup finely chopped carrots
    1/2 cup finely chopped cabbage
    2 tbsp oil
    1/2 cup finely chopped onions
    salt to taste
    1/2 tsp chilli powder
    1/4 tsp turmeric powder (haldi)
    2 tbsp plain flour (maida)
    1/2 cup plain flour (maida) dissolved in 3/4 cup water
    bread crumbs for rolling
    oil for deep-frying


    Method

    Heat the oil in a deep non-stick, add the onions and sauté on a medium flame for 1 minute.
    Add all the potatoes, french beans, carrots and cabbage and mix well.
    Cover and cook on a slow flame for 10 to 12 minutes or till the vegetables are cooked, while stirring occasionally. Sprinkle a little water (approx. 2 tbsp) to avoid the vegetables from burning.
    Add the salt, chilli powder, turmeric powder and plain flour, mix well and sauté on a medium flame for 1 to 2 minutes.
    Mash the mixture using a potato masher.
    Remove from the flame, transfer the mixture to a plate and allow it to cool completely.
    Divide the mixture into 7 equal portions and shape each portion into a 50 mm. (2”) flat oval.
    Dip each cutlet in the prepared plain flour mixture and roll in the bread crumbs till they are evenly coated from all the sides.
    Heat the oil in a kadhai and deep-fry each cutlet till it turns golden brown in colour from both the sides. Drain on absorbent paper.
    Serve immediately with tomato ketchup.

    My oven broke you all…so I found a way to bake without the oven! I’ve got an outstanding crockpot cake to share with you…pumpkin caramel…yum! If you would also like to see my homemade coconut milk caramel sauce, let me know in the comments. Thanks for watching!
    Slow Cooker Sticky Caramel Cake
    2 c. Flour
    2 t. Baking powder
    1t. Baking soda
    1/2 t. Salt
    1/2 t. Pumpkin pie spice
    11/2 c. Sugar
    1 c. Butter
    4 eggs
    1 can Pumpkin
    Caramel Sauce

    1. Spray crockpot with non-stick cooking spray.
    2. Combine the dry ingredients (flour, baking soda, baking powder, salt and pumpkin spice) in a bowl and set aside. In a mixing bowl, beat sugar and butter, add eggs in one at a time. Beat in the pumpkin purée and gradually add in the flour mixture. Spread evenly in the slow cooker.
    3. Cover and cook on HIGH for 21/2 hours. Let it cool for at least 10 minutes before removing the cake from the crockpot. Drizzle with caramel sauce.

    Whether you’re vegetarian, veg-curious or wondering what the heck to serve to your veggie friends at your next BBQ; this super tasty vegan burger is the answer.

    When we went looking for a great vegan burger recipe our first stop was to Gigi Cohen, chef and personality-at-large at Cafe Juicy Lotus in Montreal’s Monkland. She offered up her coveted Tempeh Burger Recipe (it’s a big seller at the cafe) and showed us how it’s done.

    Head to the freezer aisle and grab yourself some fermented tofu (so good for you), some fresh veg and flax meal and you’re ready to start making patties. Gigi says if you don’t have a food processor or blender, you can finely chop the veggies and kneed the mixture together. She also suggests that you use tinfoil under the burger to ensure you don’t lose any of that super tasty burger to the BBQ flames. Besides, vegetarians know that it’s the safest way to cook on a foreign BBQ — especially at our meat-loving friend’s house.

    Finish this recipe off with some Vegan Mayonnaise (check the link at the end of the video for a recipe) and fresh produce on a toasty bun. This recipe is totally vegan and the burger itself is also gluten-free and lactose-free. Oh, and super tasty!

    This is a great recipe to make ahead and pop in the freezer so you are always ready for spontaneous BBQ invitations.

    Golfetta Rolls – Appetizer

    Golfetta Rolls – Appetizer

    Nice and delicious appetizer but also to be served as a side dish always accompaied with a gently and tastefull wine, Golfetta Rolls will never let you and your guest disappointed.

    Ingredients:
    12 slices of Golfetta cold cuts
    1 tablespoon Extra Virgin Olive Oil (Italian)
    250 gr of Caprino Cheese or alternative Robiola Cheese
    bunch of arugula
    chives (12 strings)

    Preparation

    Prepare in a plate a mix of Caprino (or Robiola) cheese the chopped arugula and the olive oil prepare a plate or a chopping board and lay a Golfetta slice on it spread abuntantly the mix obtained with the cheese on the cold cut slice. Roll up the slice and tie with a string of chives. Do the same procedure for each of the 12 golfetta slices.
    Arrange the rolls on a serving dish and serve them cold.
