    This recipe for Chocolate Chip Cookies used to be my biggest baking secret! Stuffed burgers, stuffed crust pizza, stuffed cookies. Anything with a surprise center automatically makes it that much more special. Today I’m going to take the classic chocolate chip cookies and stuff it with the crowd favorite, Nutella. You’ll have this soft and chewy cookie with this warm and gooey center. It’s heaven. Subscribe and like if you want to see how it’s made.

    Ingredients:

    ½ cup (1 stick) melted Unsalted Butter
    ¾ cup Brown Sugar
    ¼ cup Sugar
    1 Egg
    ½ tsp Vanilla
    ½ tsp Sea Salt
    ½ tsp Baking Soda
    1 ½ cups all-purpose Flour
    2 cups Chocolate Chips

    Preparation:
    1. Preheat the oven to 350º F.
    2. Mix the melted Butter, Brown Sugar, Granulated Sugar in a large bowl by hand.
    3. Add the Egg and mix again until it’s combined.
    4. Add in the Vanilla Extract, Salt, and Baking Soda until combined.
    5. Add in the all-purpose Flour and Chocolate Chips. Stir again until the dough comes together.
    6. Take a scoop of cookie dough and flatten it out like into a small disk. Then takea a spoonful of chilled Nutella and place it in the center. Pinch the seams like a dumpling. Roll into a ball and place on a baking sheet.
    7. Bake 1 dozen at a time for 10 minutes until golden brown. Then let cool for 5 minutes before serving.

    Slow Cooked Mongolian Beef is a simple version of the Chinese restaurant classic. A delicious sauce is added to the slow cooker pot allong with fresh vegetables, then simmered.     1 Cup of Water
    1/2 Cup of Corn Flour (aka Corn Starch)
    1 Large Carrot
    1 Red Capsicum / Bell Pepper
    1 Small Brown Onion
    Boiled Rice (to serve)

    Preparation Time: About 15 minutes
    Cooking Time: About 3 hours (on HIGH setting)

    Time: 45 minutes
    Serves: 8

    Ingredients:
    2 red capsicums
    2 medium red onions
    2 medium zucchini
    60g Kalamata olives (optional)
    1 fresh red chilli
    1 bunch of fresh basil
    600g wholegrain rice
    1 x Created with Jamie Sweet
    Pepper Butterflied Beef Rump
    2 lemons
    extra virgin olive oil
    sea salt and freshly ground
    black pepper
    100g rocket

    Method:
    1. Preheat a griddle pan or barbecue to a high heat. Halve and deseed the capsicums, then cut each half into 4 pieces. Peel the red onions and cut each into 8 wedges. Trim the zucchini and finely slice lengthways or speed-peel into ribbons. Destone the olives (if using), deseed and finely slice the chilli and pick the basil leaves, discarding the stalks.

    2. Grill all the veg on the hot griddle or barbecue – cook the onion wedges for 2 to 3 minutes on each side, or until dark and bar-marked, repeat with the capsicum wedges, and grill the zucchini for 1 to 2 minutes on each side. Work in batches, keeping the grilled veg warm until needed.

    3. Cook the rice, and your Created with Jamie Sweet Pepper Butterflied Beef Rump, according to pack instructions. Next, add the juice from 1 lemon, 5 tablespoons of extra virgin olive oil and a pinch of sea salt and pepper to a clean jam jar. Pop the lid on and shake well – have a taste and tweak the seasoning,
    if needed.

    4. Add the grilled veg to a large bowl along with the basil, rocket, chilli and olives (if using). Pour over the dressing and toss well. Slice up the beef and serve with the rice, a portion of the grilled veg salad and lemon wedges for squeezing over.

    Jamie’s Tip:
    Feel free to roast your veg in the oven, if you prefer. Prep the capsicum and onions in the same way, just chop the zucchini into 1cm slices. Toss in a large roasting tray with some squashed garlic cloves, a pinch of sea salt and pepper and a good lug of olive oil. Roast for 50 minutes, turning halfway.

    1 tbsp maple syrup

    Strawberry Basil Dressing
    1 cup strawberries
    3-4 basil leaves
    ½ lemon, juiced
    1 tsp honey

    Blue Cheese Dressing
    ¼ cup blue cheese, crumbled
    ½ cup yogurt
    2 tbsp mayonnaise
    ¼ tsp Worcestershire sauce
    salt and pepper

    Mango Lime Dressing
    1 cup mango, peeled and cubed
    2 limes, juiced
    ½ tsp honey
    2 tbsp fresh cilantro
    2 tbsp avocado oil
    salt and pepper

    Roasted Red Pepper Dressing
    ½ cup roasted red peppers
    ¼ cup olive oil
    4 tbsp white wine vinegar
    1 clove garlic, minced
    1 tbsp Dijon mustard
    salt and pepper

    This is my favorite out of all of the items on McDonalds menu. Partially because I love apples more than anything else in the food world and partially because dessert is my favorite food group ever. I think the fact that they were 2 for for a very long time may have something to do with it. They were always hot and ready, and quite delicious if I must say. Just think about the other pies in its class. A super hot baked affordable-culinary masterpiece compared to the cold, sugar glazed pie bricks in wax paper packaging at the corner store. No contest. The calorie comparison comes in at about 202 for mine and 250 for theirs.

    *Disclosure: I am bias towards hot food.

    Ingredients:
    1 cup all purpose flour
    1/2 tsp salt
    5 tablespoons vegan butter
    5-7 tablespoon ice water
    1 Golden Delicious Apple, peeled, cored, diced
    1/2 teaspoon cinnamon
    1/8 teaspoon nutmeg
    1/4 teaspoon vanilla extract

    Description:

    Whisk together all purpose flour and salt.

    Cut in vegan butter using a fork or pastry blender. Work quickly to reach a crumbly, flaky consistency.

    Stir in cold water until the dough is moist enough to easily stick together, but not dripping wet.

    Place the dough onto a piece of parchment paper and gather into a dough ball. Place another sheet of parchment paper on top.

    Roll the dough out until it is about 1/4 inch thick, using a rolling pin. Fold the sheet of dough in half, again and again until the sheet has been folded into about 1/4 or 1/8 its original size.

    Wrap the pie crust dough in the parchment paper and freeze for about 30 minutes.

    Mix the dice apples in a bowl with cinnamon, nutmeg, and vanilla extract.

    Preheat oven to 400 degrees Fahrenheit.

    Remove the dough from the freezer and lay it on a piece of parchment paper that has been lightly floured.

    Dust the top of the dough with flour, then cover with a second sheet of parchment.

    Roll the dough out for a second time into a square that is about 12 inches by 9 inches and about 1/4 inch thick.

    Cut the sheet into five equal segment lengthwise and once done the center to create 10 equal size rectangles.

    Distribute the apple filling mix on top of five of the dough segment. Place another piece of dough on top of the ones toped with apples.

    Use a fork to press and seal the edges of the two sheets together. Make sure the are well connected all the way around.

    Place the small pies on a baking sheet that has been covered with parchment paper. Cut three ventilation slits in the top of each pie.

    Bake for 15 minutes and then enjoy.

    Warning: Pie filling may be very hot.

    Cooking Meals – Ground Chicken Vegetable Bake

    Try out a new recipe and see how easy it is to make simple meals!

    I try to go through all the steps necessary to complete a meal from start to finish (with exception of cutting vegetables, I won’t make you sit through 10 minutes of me chopping veges). Along the way, you will see captions for what ingredients you need for this receipe. I am also including a written copy of this receipe in the notes so that you can print it out easier if you like.

    RECIPE – GROUND CHICKEN VEGETABLE BAKE
    INGREDIENTS
    3/4 cup chopped celery
    1/2 cup chopped carrots
    1/4 cup chopped onions
    1/4 cup chopped green bell peppers
    1 cup ground chicken
    1 (4oz can) sliced mushrooms, drained
    1/4 cup milk
    2 eggs, beaten
    1/4 tsp marjoran
    1/8 tsp sage
    1/8 tsp salt
    1/8 tsp black pepper
    1/4 cup shredded cheddar cheese
    DIRECTIONS
    Preheat oven to 325oF. In a bowl, mix together all of the vegetables and the chicken. Pour into a sprayed 8″x8″ glass pan. In a bowl, mix together the dairy and the spices. Pour evenly over vege/chicken mixture in pan. Put into oven and bake 35-40 minutes.

    Feel free to adjust the recipe as you like, whether you switch out ingredients, or double the amount. If you change the recipe, let me know in the comments what you did and how it came out!

    Mini Veggie Quiches — Lynn’s Recipes

    Lynn demonstrates how to make Mini Veggie Quiches that are great for breakfast, brunch or just a snack. Super easy to make and versatile. If you wish, you can add chopped, ham, etc.

    5 eggs
    3 egg whites
    1 cup milk
    ¼ cup finely chopped red pepper
    ¼ cup finely chopped scallions
    6 basil leaves, cut into long thin strips
    ¼ cup grated sharp cheddar cheese
    Sprinkle of kosher salt
    Cooking spray

    Preheat oven to 325°. Spray a 12 well muffin pan with cooking spray.

    In a medium bowl, whisk together the eggs. Add the milk and whisk again.

    In another medium bowl, combine the red pepper, scallion, cheddar cheese and basil.

    Pour an even amount of the egg mixture into each muffin well. Divide the veggie mixture evenly over the egg mixture. Sprinkle each with a very small amount of kosher salt.

    Put in preheated 325° oven for 25 minutes or until quiches are set and starting to brown.

    Cool on a rack for 5 minutes. Turn out and serve immediately.

    Marshmallow Meringue Frosting Recipe ~ Noreen’s Kitchen

    Greetings! Today I am sharing a wonderful marshmallow meringue frosting that I plan to put on top of some amazing lemon meringue cupcakes in another video! This frosting is super easy to make and you can do it with simple equipment as well. All you need is a hand mixer, a pot and a big bowl.

    This is made over a boiling water bath and you will have to mix on high for about 10 minutes in order for the frosting to set, so be warned, it takes a little while, and your arm may get a little tired, but it is seriously worth it in the end. My cupcakes were incredible!

    This frosting is also great inside of Whoopie pies, as a filling for cakes and a frosting for just about anything. You can also hit this with your kitchen torch and toast it! It turns out beautiful!

    HISTORY OF ESCABECHE:

    Escabeche is a typical Mediterranean cuisine which refers to a dish of either poached or fried fish (escabeche of chicken, rabbit or pork is common in Spain) marinated in an acidic mixture before serving, and to the marinade itself. The dish is common in Spain and Latin America, and popular in Catalonia, Portugal, Provence and the Philippines. Influences of the dish appear as far as Asia-Pacific with adjustments to local food staples. It is usually served cold after marinating in a refrigerator overnight or longer. The acid in the marinade is usually vinegar, but can also include citrus juice. Escabeche is a popular presentation of canned or potted preserved fish, such as tuna, bonito or sardines. In the New World, versions of the basic marinade are often used with other foods than fish and meats, for example cassava or green bananas and chicken gizzards (Puerto Rico), jalapeño peppers (Mexico), etc. The origin of the word escabeche is Persian, and was brought to Spain by the Arabs during the Moorish conquests. The word derives from al-sikbaj, the name of a popular meat dish cooked in a sweet and sour sauce, usually vinegar and honey or date molasses.

    The dish is also known as escoveitch or escoveech fish in Jamaica, and is marinated in a sauce of vinegar, onions, chayote, carrots and scotch bonnet peppers overnight, since it is a traditional breakfast dish. And as escabecio, scapece or savoro in Italy, savoro in Greece and scabetche in North Africa.

    The dish is not to be confused with an unrelated soup made from chicken, onion, and spices and served in Belize, sometimes referred to as Belizean escabeche. However, like the other escabeches, Belizean escabeche is based upon an acidic marinade—in this instance, onions marinated in vinegar.

    Ingredients:

    1 boneless chicken breast
    1 tablespoon minced ginger (halved)
    1 tablespoon garlic
    3 tablespoons orange juice
    3/8 cup teriyaki sauce (split)
    1 tablespoon rice wine
    2 tablespoons brown sugar
    1/8 teaspoon sesame oil
    1 small broccoli crown
    1 tablespoon hoisin sauce
    2 cups cooked rice (see my perfect rice recipe for directions)
    1 teaspoon corn starch
    2 tablespoons cold water
    oil for cooking

    Preparation:

    For teriyaki glaze:

    1. Combine 1/4 cup teriyaki sauce, rice wine, orange juice brown sugar and sesame oil. Bring to a boil then simmer.
    2. Marinate chicken with 1/8 cup teriyaki sauce and 1/2 tablespoon ginger for 30 minutes.
    3. Prepare rice (see my perfect rice recipe for directions)
    4. Stir fry broccoli with 1/2 tablespoon ginger and 1 tablespoon garlic
    5. Stir in some teriyaki sauce and hoisin – set broccoli aside
    6. Grill chicken breast until cooked. Let rest a few minutes before cooking
    7. Cut chicken into strips.
    8. In bowl layer rice broccoli and chicken.
    9. Bring teriyaki glaze to a boil.
    10. Combine corn starch and water in small container.
    11. Add to glaze until it becomes thick.
    12. Pour over rice broccoli and chicken and serve.
