    Asian cuisine styles can be broken down into several tiny regional styles that have rooted the peoples and cultures of those regions. The major types can be roughly defined as East Asian with its origins in Imperial China and now encompassing modern Japan and the Korean peninsula; Southeast Asian which encompasses Cambodia, Laos, Thailand, Viet Nam, Brunei, Indonesia, Malaysia, Singapore, and the Philippines; South Asian states that are made up of India, Burma, Sri Lanka, Bangladesh and Pakistan as well as several other countries in this region of the continent; Central Asian and Middle Eastern.
    “Asian cuisine” most often refers to East Asian (Chinese, Japanese, and Korean), Southeast Asian cuisine and South Asian cuisine. In much of Asia, the term does not include the country’s native cuisines. For example, in Hong Kong and mainland China, Asian cuisine is a general umbrella term for Japanese cuisine, Korean cuisine, Filipino cuisine, Thai cuisine, Vietnamese cuisine, Malaysian and Singaporean cuisine and Indonesian cuisine; but Chinese cuisine and Indian cuisine are excluded.The term Asian cuisine might also be used to address the eating establishments that offer wide array of Asian dishes without rigid cuisine boundaries; such as selling satay, gyoza or lumpia for appetizer, som tam, rojak or gado-gado for salad, offering chicken teriyaki, nasi goreng or beef rendang as main course, tom yam and laksa as soup, and cendol or ogura ice for dessert. In modern fusion cuisine, the term Asian cuisine might refer to the culinary exploration of cross-cultural Asian cuisine traditions. For example combining the culinary elements of Vietnam and Japanese, Thai and Malay, or Indonesian and Chinese.
    Japanese cuisine is the food—ingredients, preparation and way of eating—of Japan. The traditional food of Japan is based on rice with miso soup and other dishes, each in its own utensil, with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled. Fish may be served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter as tempura.
    Apart from rice, staples include noodles, such as soba and udon. Japan has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga. Foreign food, in particular Chinese food in the form of noodles in soup called ramen and fried dumplings, gyoza, and western food such as curry and hamburger steaks are commonly found in Japan. Historically, the Japanese shunned meat, but with the modernization of Japan in the 1860s, meat-based dishes such as tonkatsu became common.
    Chinese cuisine includes styles originating from the diverse regions of China, plus styles of Chinese people in other parts of the world. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese peoples due both to imperial expansion and from the trade with nearby regions in pre-modern times as well as from Europe and the New World in the modern period.
    Styles and tastes also varied by class, region, and ethnic background. This led to an unparallelled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture.
    Thai cuisine is the national cuisine of Thailand. Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter.

    Vegan Chocolate Chip Cupcakes Recipe

    Ingredients:

    1 cup whole wheat
    1 unbleached unbleached all purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 cup almond milk
    1/3 cup canola oil
    1/4 cup raw sugar
    1 tablespoon apple cider vinegar
    1 cup chocolate chips

    Directions:

    Preheat oven to 350 degrees F and line a cupcake tine with 12 paper liners.

    In a large bowl, whisk together whole wheat flour, all purpose flour, baking powder, baking soda, and salt.

    In a separate bowl, whisk together almond milk, canola oil, raw sugar, and apple cider vinegar.

    Pour wet ingredients into dry ingredients and mix until well combined.

    Stir in chocolate chips. They should be evenly distribute, but be sure not to mix to much else they melt.

    Use an ice cream scooper to evenly distribute the cupcake batter through out the line cupcake tin.

    Bake for 20 minutes. When a toothpick can be inserted into the center of a cupcake and removed with few to no crumbs, they are done.

    Vegan Chocolate Ganache Topping Recipe

    Ingredients:

    1/2 cup chocolate chips
    1/4 almond milk

    Directions:

    Heat almond milk to a simmer, either in the microwave or on the stove top.

    Pour the hot almond milk over the chocolate chips in a small bowl.

    Let them sit for 1 minute.

    Whisk for 3 – 4 minutes until the chocolate sauce becomes thick and glossy.

    You can refrigerate in for about 10 minutes to get it to a thicker consistency, but you don’t have to.

    Generously spoon the chocolate sauce over the cupcakes and enjoy.

    My Grandmother was a Saint, and her meatballs were heavenly. These are a Swedish style meatball, the recipe I’ve tried to recreate from childhood memories. For me it’s the perfect comfort food, and I always have some in the freezer ready to go.

    I make the meatballs out of Pork and Beef, and some additional seasonings I’ll show you in the video. The sauce is super simple, just a couple cans of Campbells Cream of Mushroom Soup. All of it baked together make a perfect meatball.

    Ingredients

    1 whole chicken, 3-4 lbs.
    4 garlic
    2 parsnips for first run on broth
    6 large carrots, peeled and sliced
    6 celery stalks, peeled and sliced (including leaves)
    A healthy knob of ginger cut lengthwise
    Handful of fresh parsley
    Handful of fresh dill
    2 tsp black peppercorns
    2-3 whole cloves (Optional)
    2 bay leaves
    Kosher salt

    Total Time: 3-4 Hours
    Servings: 3-3 1/2 quarts of soup broth

    METHOD:

    Place your chicken with skin on or off is your choice. I took the skin off to reduce the fat but believe me there will be plenty left to make the soup nice and flavorful. in your stock pot and cover with water if using a 5 or 5 1/2 qt. stock pot you will cover with 4 quarts of water or a tad more you don’t want boil overs or simmerovers.

    NOTE: I use a deep stock pot and cover the chicken with more water because of the longer boil/simmer times I use to make this soup because my stock is a true stock and not a broth.

    Get your water to the boil then lower to a med/high simmer and as any foam or scum shows up skim it off.

    Remember to replace the water from the skimming process with fresh hot water and then if necessary do a last minute skimming of foam/scum if necessary. Now add in your carrots, celery, parsley, dill weed, peppercorns, ginger, parsnips and bay leaves and optional cloves along with 1 Tbsp. of kosher salt and bring water back to a medium/high simmer.

    Now put the lid of your pot on the pot and tilt it to allow some steam flow. Reduce heat to medium or medium low and allow the soup to slowly simmer to make your broth for at least 2 to 3 hours. After 90 minutes remove all the veggies and put on plate to cool and then cut them up into manageable pieces. The dill and parsley can be discarded.

    After the 2-3 hours of simmering the chicken will be really tender. Turn off the heat and get the chicken out of the pot and put it on a plate or cutting board and allow it to cool and allow the broth to cool as well. Now taste your broth to see if you need to add additional salt. Now carefully strain the broth into another pot through a mesh strainer.

    Now when the chicken has cooled down enough remove all the meat from the carcass and break it up into manageable pieces for your soup bowls and then set aside. Then put your broth that you strained into the other pot and strain it again back into the original pot. Now put the carcass of the chicken into the broth and bring it to a boil and then to a medium simmer. Add your additional veggies: 1 parsnip, 1 carrot, 1 celery, a small piece of ginger into the pot with the carcass and simmer the carcass in the broth for 1 to 2 hours. After 90 minutes remove the veggies and cut them up add to the other veggies. This is how you make a really stout chicken soup stock not broth that will be reinforced with the nutrients of the additional veggies and the calcium of the bones and the nutrients of the bone marrow and cartilage of the carcass. Don’t forget to skim for scum if any from the carcass.

    When done pick out the carcass and discard and then strain the soup into the other pot again and then back again into original pot. Now heat it up again to a simmer. Put your veggies and chicken into a bowl and when hot ladle into your bowl and there you have it Jewish penicillin! Matzo ball optional

    When the thought of dessert leads to pangs of guilt, there is no need to skip it. This super easy Fruit and Yogurt Parfait recipe will save the day. With delicious layers of lightly sweetened Greek yogurt and your choice of fruits and nuts, you can confidently “have your parfait and eat it too”.
    Ingredients: (makes 1 to 2 Parfaits depending on size of parfait cup)
    Greek Yogurt – 1 cup
    Almond Meal – 2 Tbsp (grind whole almonds using a coffee grinder or other mixie)
    Honey – to taste
    Mango – 1, pureed (reserve few whole pieces to garnish)
    Granola – 1 to 2 Tbsp
    Caramelized Almonds – 1 to 2 Tbsp

    Method:

    1. Mix Yogurt with Almond Meal and Honey until well incorporated.
    2. In a 6 oz Parfait cup or other clear narrow glass, layer 1/3 of the Yogurt mixture.
    3. Top with 1/2 of the pureed Mango.
    4. Add few slices of Caramelized Almonds.
    5. Repeat with 1/3 of Yogurt mixture and rest of the pureed Mango.
    6. Top with final 1/3 of Yogurt Mixture, cover with plastic wrap and chill for 1 hour if time permits.
    7. Garnish with reserved Mango pieces, Granola and Caramelized Almonds.

    Note: Try these other fruits: Strawberries or other berries, peaches, pineapple, apricots

    Come chow down on some delicious Slow Cooked BBQ Beer ribs with the help of Preston and Eleanore!

    8 tablespoons light brown sugar, tightly packed
    3 tablespoons kosher salt
    1 tablespoon chili powder
    1/2 teaspoon ground black pepper
    1/2 teaspoon cayenne pepper
    1/2 teaspoon jalapeno seasoning
    1/2 teaspoon Old Bay Seasoning
    1/2 teaspoon rubbed thyme
    1/2 teaspoon onion powder

    This will make more rub than you will need. It’s great on steaks and other meats.

    Ribs:
    In this video I used baby back ribs. This recipe will work with any type of ribs. If you are cooking beef ribs or pork spare ribs, go for the full 8 hour cook time.

    Cook time:
    This is a slow cook recipe, if you don’t want the best fucking ribs ever, watch a video by one of the jerkoffs who tell you to boil your meat for 30 minutes and slap on sauce.
    4-6 hours at 225 if you don’t have all day.
    8 hours at 200 for the full effect.
    Cook your ribs to an internal temperature of 190, they should be fork tender and the bones should rotate slightly in their meat socket.

    2 cups Pasta- Boiled
    1-2 cups Green Peas ( i use the frozen ones. simple throw them in cold water and cook for 3-4 mins)
    1/2 cup tomatoes
    1/2 to 1 cup Bell Peppers
    1/2 cup cheese ( I use Herb and Garlic Cheddar)
    Salt Per taste
    1 tbsp Black Pepper
    1-2 tbsp lemon juice
    2 tbsp balsamic Vinegar
    2-4 tbsp Ranch ( depending on how creamy you want it)
    2 tbsp olive oil
    1 tsp Dried Parsley ( or use other fresh herbs of your choice)

    Toss the ingredients together and let chill for 30 mins and then serve.

    Betty demonstrates how to make her fabulous Bacon, Egg, and Cheese Breakfast Casserole. You can start this the night before, and put it in the oven for a tasty and terrific start to your day!

    Bacon, Egg, and Cheese Breakfast Casserole

    4 cups hot water
    5.2 oz. package dried hash brown potatoes
    5 eggs, well beaten
    1 cup shredded Swiss cheese (You may substitute a different kind of cheese, if you like.)
    ½ cup cottage cheese
    1 teaspoon salt
    1/8 teaspoon ground black pepper
    1/8 teaspoon hot sauce
    1 green onion, chopped
    6 slices of bacon, cooked, drained, and crumbled
    paprika (for sprinkling the top)
    cooking oil spray

    In a large bowl, place the entire 5.2 oz. hash brown mixture. Pour 4 cups hot water over the hash browns, and let stand for 10 minutes. Drain, and pat off any extra moisture with a paper towel. In a large bowl, combine 5 well-beaten eggs, 1 cup shredded Swiss cheese, ½ cup cottage cheese, 1 teaspoon salt, 1/8 teaspoon ground black pepper, 1/8 teaspoon hot sauce, and 1 chopped green onion. Add drained hash browns, and mix thoroughly. Pour mixture into a deep-dish pie plate that has been sprayed with cooking oil spray. Sprinkle with crumbs from 6 slices of cooked bacon and a dash of paprika. Cover with plastic wrap or aluminum foil and refrigerate at least 3 hours (or overnight). Bake, uncovered, at 350 degrees for about 30 minutes, or until mixture is set. (You can check for doneness by inserting a clean knife in the center, and it should come out clean.) Cut into wedges, and serve immediately. This breakfast goes well with cherry tomato halves or sliced tomatoes. I also served mine with freshly made hot cocoa. Delish!
