This is great recipe if you are looking for something a little different than regular tacos or fajitas. I have been making these for years. Every time my family sees them on the menu, they can’t wait for dinner.

Thanks Jen for sharing. Going to try this next week. I like how they all go in the oven at the same time so that everyone can eat together. I make traditional beef tacos and assemble at the table but by the time I am ready for mine the boys are ready for another.

I'm excited to try these! How do you like to cook your brown rice? I've made it on the stove and in my rice cooker, but I haven't been completely happy with how it turned out. Do you have any tricks? I also use Trader Joe's brown jasmine rice.
