In this video April prepares a slow cooker Sausage and Lentil Stew recipe inspired by a stew at Carrabba’s Italian restaurant. It is hearty and healthy, perfect for a cool day!
Ingredients:
1 lb Turkey Sausage
2 Carrots, chopped
2 Celery Stalks, chopped
1 Onion, chopped
2 Garlic Cloves, minced
1 Can Diced tomatoes
1 1/2 Cups Dried Lentils
1 Quart Chicken Stock
2 Cups Water
1 tsp Italian Seasoning
3/4 tsp Thyme
3/4 tsp Salt
1/2 tsp Pepper
2 Cups fresh Spinach
Optional: Fresh Parmesan Cheese
Directions:
Brown sausage until cooked completely
Place all ingredients except Spinach in crock pot
Cook on high 3-4 hours, low 6-7 hours
Before serving, put spinach in crock pot and stir until wilted, serve stew with bread and fresh Parmesan cheese

mmm this stew is so good of coarse me I have to fatten everything up lol so
I used regular Italian sausage and the finishing bowl added the the cheese
and a tiny bit of jalapeño ranch dip to the top woooow made it so good and
fattening lol gunna go eat a big foot long egg sausage and cheese from
subway and down it with a big pepsi slurpie from 711 lol best hangover
medicine by far! yup!
Just put it all into the slowcooker. Will do high for two hours then low
for several as almost noon time. Didn’t have celery but everything else.
Added a little cumin as love it with beans/lentils. No thyme. ??? not
sure why I’m out of that – lol.

I am absolutely loving these easy crock pot stews and soups! This is the
type of dish that I love to make during the winter months because it’s so
warm and delicious! Thanks so much for the recipe, I will definitely be
trying this one out because I tried your chicken noodle soup and it was so
yummy! 🙂
