I prefer Giada's recipe – she uses ground chicken. I did a variation on it that turned out perfectly. I like your use of cilantro, though.

As for vegetarian… well, you can skip the chicken (obviously) and experiment with adding some more beans and some extra veggies… perhaps some zucchini, carrots, peppers, onions, and spinach or whatever looks good at the grocery store.

I would imagine it would be pretty easy to do in the crockpot… more or less you would just put it all in the pot (excel for the corn and any other last minute ingredients) set it on low and let it go for about 6 hours. You can shred the chicken with about 30 minutes to go and then add the corn, cilantro.

As a University student, its hard to find time to cook meals, let alone keep them healthy – but, you make it easy.
With regards to this Recipe (Chicken and White Bean Chili), I was wondering if it could be done in a crock pot. If so, how would the cooking instructions change? Also, my roommate is a vegetarian – any suggestions one how to modify this recipe to fit his dietary needs?
