    Kelli, you are awesome and I can only imagine this recipe being better with
    the addition of homemade chicken stock–something you may already be doing
    but maybe just didn’t include in this video..? Anyway, enjoyed it and your
    other videos too!

    wanted to make roasted, stuffed red bell peppers, and some amazing roasted
    salsa.

    That’s a ham hock. It’s not traditional, and I didn’t want to add it to the
    basic recipe. I add ham hock to my pinto beans, and I think it made the
    minestrone taste too much like bean soup. So I left it out in the
    ingredients. Just ignore it. 🙂
