Whole Wheat Banana Nut Bread (sugar & oil free)

I love this bread… it’s not as sweet as traditional banana bread but it is fantastic when warmed and topped with a little butter and honey (-:

It’s truly a heathy choice!

I created this recipe by changing up a few old favorites…

2 ¼ cup whole-wheat flour
¾ teaspoon baking soda
¼ teaspoon salt

3 large bananas (the riper the better)
¼ cup kefir (or yogurt) plain
¼ cup honey
2 eggs
1/3 cup applesauce
1 teaspoon vanilla

1 cup chopped walnuts

extra honey for drizzling (per Chef Deacon 😉

    Adding the eggs has just undone any goodness that omitting the oil and
    sugar had for this bread. Not recommended for anyone with heart disease or
    high cholesterol.

    another option for eggs is some ground flaxseed mixed with water, about one
    tablespoon of flaxseed mixed with two tablespoons of water will replace an
    egg and bind the batter just as well without the cholesterol.

    You could actually leave the eggs out since banana and apple sauce can
    easily replace the function of the eggs, and this recipe has both.

    I appreciate you experimented and found the right balance of sweetness from
    several sources for your taste. However i recommend amending your
    description to read “no table sugar” (sucrose) in this recipe, because
    banana, honey, applesauce, kefir & even eggs, all contain sugar. For those
    of us who have issues with total glycemic index in their food, we need to
    count all the sugars.

    And I am kind of mean… what I make is whats for dinner… you can have a
    variation of it (taco salad instead of tacos for example) but I refuse to
    make anything extra… yep, I sound like a Biacht /-;

    So do I need to make any adjustments for elevation? I know in your cookie
    vid you mentioned the elevation and I’m assuming Northern Illinois is lower
    than where you’re at 😉
