Here’s how I make my favorite Eggplant Parmesan. (Note: I say I “twit-pic”-ed the other day…I mean this morning LOL. Ever had a day that felt like 3?)

@jomamablu you are talking about the greek mousaka (layers of fried
eggplant, minced beef in tomato sauce, cheese and bechamel sauce). You
might want to look for this recipe in recipe finders.

looks delicious-My mother used to put ricotta between the layers, & sauce
on the last layer before you put on the parm & mozzarella (i’m Italian)
This looks so amazing! I’ve never cooked with eggplant before, but this
video made me want to try it! 🙂 I’d still love you to set a timer and meal
plan since you said the whole process of coupon stuff only takes you 20
minutes now! My meal planning process takes too long and that’s without
coupons!
